1 lb pork tenderloin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
2 large shallots, finely chopped
8 ounces cremini mushrooms, sliced
1/4 teaspoon dried thyme
1 pinch salt
1 pinch ground black pepper
1/4 cup white wine
1 cup chicken broth
1 tablespoon butter, softened
1 tablespoon all-purpose flour
3 tablespoons fresh parsley, chopped

Steps:

  • Sprinkle the pork with salt and pepper.
  • In a skillet, heat 1 tablespoons of the oil over medium-high heat; brown the pork all over.
  • Transfer to a foil-lined baking sheet; roast in a 400 degree F oven until the juices run clear when the pork is pierced, about 18 minutes.
  • Transfer to a cutting board and tent with foil; let stand for 5 minutes before slicing.
  • Meanwhile, in the same skillet, heat the remaining oil over medium-high heat.
  • Saute the shallots until softened, about 3 minutes.
  • Add the mushrooms, thyme, salt and pepper; saute until the mushrooms are golden, about 6 minutes.
  • Add the wine and cook until evaporated, stirring and scraping up any brown bits.
  • Add the broth and cook for 5 minutes.
  • Mix the butter with the flour and add to the sauce along with the parsley.
  • Simmer, stirring, until thickened.
  • Stir any juices from the pork into the sauce.
  • Serve with the pork.

2 tbsp 30 mL canola oil, divided
2 pork tenderloin, trimmed (about 650 g)
Salt and pepper (optional)
2 cups 500 mL sliced cremini or button mushrooms
1 small onion, diced
1 clove garlic, minced
1 tsp 5 mL fresh thyme leaves (or ½ tsp/3 mL dried thyme)
1 can CAMPBELL'S® Condensed 40% Less Salt Cream of Mushroom Soup
3/4 cup 185 mL CAMPBELL'S® Ready to Use 30% Less Sodium Chicken Broth
2 tbsp 30 mL cider vinegar
2 tbsp 30 mL fresh chives, chopped, plus more to garnish

Steps:

  • Preheat oven to 425°F (220°C). In a large nonstick skillet, heat 1 tbsp (15 mL) oil over medium-high. Season pork all over with salt and pepper, if desired. Sear for 5-7 minutes, turning as needed, until browned all over. Transfer to a foil-lined baking sheet.
  • Roast pork for 12-15 minutes or until cooked through. Tent with foil and rest for 5-10 minutes before slicing.
  • Meanwhile, heat remaining oil in the same skillet over medium. Add mushrooms, onion, garlic and thyme; cook 4-6 minutes, stirring occasionally, or until mushrooms are lightly browned.
  • Stir in soup, broth, and vinegar. Bring to simmer. Reduce heat and cook for 3-5 minutes, stirring often, or until thickened and smooth. Stir through chives.
  • Slice pork and serve with mushroom sauce garnished with additional chives, if desired.

Steps:

  • Cut tenderloin widthwise into fourths. Slice each piece in half but do not cut all the way through; open and flatten each piece. Melt butter in a large skillet; add pork. Combine thyme, salt and pepper; sprinkle half over the meat. Cook 3-4 minutes per side. Add mushrooms and onion. Cook and stir until vegetables are almost tender and pork is no longer pink. Remove meat to a platter and keep warm. Combine milk, mustard, cornstarch and the remaining thyme mixture; stir into the vegetables. Bring to a boil; cook and stir for 2 minutes. One of my family's favorites. If you aren't a garlic fan, pass on this one. A diet breaker, but worth it. Pork tenderloin are often sold 2 to a bag, so they are perfect for this dish. Serve extra gravy with mashed potatoes.

2 (1 pound) pork tenderloins
¾ cup butter
6 cloves garlic, minced
1 (16 ounce) can sliced mushrooms, drained

¼ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub salt and pepper over all sides of pork tenderloins; nestle tenderloins next to each other in a 9x13-inch baking dish.
  • Melt butter in a saucepan over medium heat; add garlic and mushrooms. Bring to a boil, reduce heat to medium-low, and simmer, stirring frequently, until sauce is fragrant, about 5 minutes. Stir vinegar into mushroom sauce. Pour mushroom sauce over tenderloins, letting sauce seep between the two tenderloins.
  • Bake in the preheated oven until tenderloins are lightly pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer tenderloins to a serving dish.
  • Drain the drippings, including mushrooms, from the baking dish into a measuring cup, scraping the bottom to get all the brown bits. Remove 1/4 cup of the fat from the mixture and pour into a saucepan. Add enough chicken broth to the drippings to make 2 cups; whisk flour into drippings until incorporated. Stir broth-drippings mixture into the saucepan with fat over medium heat until thickened, about 5 minutes; season with salt and pepper.
  • Slice tenderloins into medallions and top with half the gravy. Pour the remaining gravy into a gravy boat for serving.

1 lb pork tenderloin, trimmed
2 medium white potatoes, peeled, cut into 3/4-inch chunks
1 medium sweet potato, peeled, cut into 3/4-inch chunks

1 tablespoon butter
8 ounces mushrooms, thinly sliced (250g)
3 garlic cloves, minced
1 onion, chopped
1 1/2 teaspoons paprika
1/4 cup all-purpose flour
2 cups milk
1 cup chicken broth, sodium reduced
1 tablespoon Dijon mustard
fresh parsley, chopped

Steps:

  • Preheat oven to 375°F Butter a 13x9-inch glass baking dish.
  • Place pork in center of baking dish, tucking thin end underneath.
  • Arrange potatoes (white and sweet) around pork. Sprinkle with salt and pepper. Bake for 20 minutes.
  • Meanwhile, in a large skillet, melt butter over medium-high heat. Add mushrooms, garlic, onions, paprika and 1/4 teaspoons each salt and pepper; sauté for 8 minutes or until mushrooms are brown.
  • Stir in broth and mustard.

2 lean pork tenderloins, about 1 3/4 pounds
Salt and freshly ground pepper to taste
1 teaspoon ground cumin
1 tablespoon chopped fresh sage or 2 teaspoons dried
12 small white onions, peeled
6 small red waxy potatoes, peeled
8 medium-size mushrooms, left whole
2 garlic cloves, unpeeled
1 bay leaf
1 tablespoon vegetable or corn oil
2 tablespoons dry white wine
1/4 cup water or fresh chicken broth
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 425 degrees.
  • Sprinkle the tenderloins with salt, pepper and cumin.
  • Place the tenderloins in a roasting pan large enough to also hold the onions and potatoes in one layer. Sprinkle the tenderloins with the sage, then spread around the roast the onions, potatoes, mushrooms, garlic and the bay leaf. Brush them with the oil.
  • Place the pan on top of the stove and over medium-high heat cook, turning the pork and vegetables until they are lightly browned all over. Place the pan in the oven and bake for 30 minutes. Turn the meat and vegetables, basting a few times.
  • Pour off the fat from the pan. Add the wine and water. Crush the garlic clove with a fork, discard the skin, and blend with the gravy. Return to the oven and cook 10 more minutes.
  • To serve, cut the pork crosswise into pieces. Serve with the onions, potatoes, mushrooms and the gravy. Sprinkle with parsley.

I had to resort to sifting through my cookbooks. I found this gem in a Junior League cookbook, and after modifying it slightly to suit ingredients I had on hand, Hubby proclaimed it worthy of repeating.

2 teaspoons fresh rosemary, crushed
1 teaspoon black peppercorns, crushed
1 1/2 teaspoons dried sage
3/4 teaspoon thyme
1 teaspoon coarse salt
1/2 teaspoon coriander seed
3 garlic cloves, minced
1 (4 lb) boneless pork loin roast, rolled and tied
2 tablespoons olive oil
3 garlic cloves, minced
1 shallot, sliced
1 lb mushroom, sliced
1 1/2 cups chicken stock, divided
1/2 cup red wine
1 tablespoon soy sauce
2 teaspoons cornstarch, dissolved in 1 tablespoon water

Steps:

  • Preheat oven to 425°F
  • Mix all the spices together in a small bowl.
  • Coat the roast with the spices, patting to keep on meat.
  • Insert a meat thermometer in the roast and place the roast on a rack in a shallow baking pan.
  • Roast for 15 minutes.
  • Reduce the temperature to 325F and continue to roast until the center temperature registers 150F; about 1 1/2 hours.
  • Allow the meat to rest for 10 minutes before carving.
  • Serve with mushroom sauce.
  • Mushroom sauce: Heat the oil in a medium skillet. Saute the garlic and shallot for 1 minute.
  • Add the mushrooms and saute over medium-high heat for 4-5 minutes or until they start to brown.
  • Add the wine and 1/2 cup of chicken stock and simmer until most of the liquid evaporates.
  • Add the chicken stock and soy sauce.
  • Bring to a boil.
  • Stir in the cornstarch mixture and simmer for 2 to 3 minutes.
  • Season with salt and pepper, if desired.

2 cups all-purpose flour
2 (1 pound) pork tenderloins

2 -3 lbs pork tenderloin
6 tablespoons colivita olive oil
2 tablespoons golden boy mushroom soy sauce
1 tablespoon Lea & Perrins Worcestershire Sauce
2 garlic cloves (minced)
1 medium onion (diced)
2 teaspoons ground black pepper
1 teaspoon non-iodized kosher salt
1/2 teaspoon ginger powder
1/2 teaspoon rolled sage
1/2 teaspoon marjoram
1/2 teaspoon thyme
1 pinch celery seed
12 ounces 100% apple juice
12 ounces whole milk
1 (4 ounce) can mushroom pieces

Steps:

  • For the Tenderloin: Set out Tenderloin in a zip-lock bag so to be at room temperature when marinade is ready.
  • Marinade: In a small sauté pan add 2 Tbsp olive oil. Sauté garlic till golden, add 1/2 of the diced onion; sauté till clear.
  • Turn the heat up a bit and add the sage, marjoram, thyme, ginger and celery seed; sauté till you just smell the spices coming out (about a minute).
  • Remove from heat. Mix in woy and Worcestershire wauce.
  • Take tenderloin and add marinade to bag. Force out air and seal.
  • After about an hour massage the marinade into the meat. Have fun; pound on it with your fist, squeeze it as you wish for about 5 minutes. At 2 hours do it again. It will feel tenderized and will have taken on the color of the spices by now. Don't beat it up so much that it starts to come apart (just close)! While the meat is getting tasty in the bag make the sauce.
  • For the Sauce: In a sauté pan add 2 Tbsp olive oil. Add the rest of the onion, the mushroom pieces and the salt and pepper. Sauté till onions clear (about 10 minutes).
  • Stir in apple juice and milk. Reduce to your desired thickness. You can add more milk and juice as you go if you wish. Go Slow so you don't have to keep stirring it too often.
  • Roasting the Tenderloin: Preheat oven to 350°F.
  • On Med-High add 2 Tbsp olive oil to a sauté pan. Just when the oil smokes take the tenderloin and sear all sides as quickly as possible till just golden brown.
  • Remove to a baking dish and roast for 40-45 minutes. Remove from oven and let stand for 10 minutes.
  • Pour heated sauce over Tenderloin. Slice and serve.
