CREAMY CHEESE GRITS AND MUSHROOMS
A vegetarian version of shrimp and grits made with big slices of meaty mushrooms. This dish verges on the decadent side with an abundance of butter, cheese, and cream.

- In a large pot or dutch oven, bring the water to a boil. Stir in the grits. Reduce the heat to low, cover the pot, and cook let cook, stirring occasionally to prevent the grits from sticking to the bottom of the pot. Cook until the grits are tender and the liquid has been absorbed, 20-30 minutes. Remove from the heat, add the salt, cheese, and butter and stir until melted. Cover and keep warm.
- Melt 1 tablespoon of the butter in a large skillet or braising pan over medium heat. Add half of the mushrooms and cook for 5 minutes or until golden on the bottom. Flip the mushrooms over and brown on the second side, about 5 minutes more. Remove the mushrooms to a large plate. Add another tablespoon of butter to the pan and repeat with the remaining mushrooms.
- Melt the remaining 2 tablespoons butter in the now empty pan over medium heat and add the onion, bell pepper, and garlic. Cook, stirring occasionally, until softened, 3-5 minutes. Add the seared mushrooms and any juices that have accumulated. Add the tomatoes, their juices, and the thyme and bring to a simmer.
- In a small cup, stir together the cornstarch and 1 or 2 tablespoons of cool water to make a slurry. Add this to the pot along with 1/2 cup vegetable stock. Cook for 2 or 3 minutes more. Add the tomato paste and stir until blended. Stir in the cream, Worcestershire, Tabasco, and more stock if needed to make a spoonable sauce that generously coats the mushrooms. Heat thoroughly, being careful not to let it come to a boil. Taste, adding salt if you like.
- Serve the grits in shallow bowls topped with the mushrooms, sauce, and a sprinkle of chives.

- Heat oven to 200C/fan 180C/gas 6. Wipe the mushrooms with kitchen paper and place on a baking tray, gills facing up. Season, then scatter with the garlic, dot with the goat's cheese and top each with a piece of ham.
- Drizzle over olive oil, cover with foil, then cook in the oven for 10 mins. After 5 mins, remove the foil and return to the oven.
- When the mushrooms are tender and the cheese melted and bubbling, scatter over the pine nuts and parsley. Serve with toasted ciabatta and a dressed winter leaf salad.

ROASTED MUSHROOMS WITH GOAT CHEESE AND ORGANIC GRITS

- For the mushrooms: Preheat oven to 400 degrees. In a mixing bowl, combine the shiitakes, oyster mushrooms, creminis, olive oil, thyme and garlic. Season with salt and pepper to taste. Transfer to a sheet pan, and roast for 15 minutes. Remove from heat, discard thyme and garlic, and cover to keep warm. While the mushrooms are roasting, prepare the grits.
- For the grits: In a saucepan over medium heat, combine milk, 2 cups water, jalapeño, garlic, bay leaf, rosemary and salt. Bring to a simmer then remove from heat. Pour through a fine-meshed strainer into a heatproof bowl, and discard the solids.
- Return the liquid to the saucepan, and place over high heat to bring to a boil. Add the grits, lower the heat to medium, and stir constantly until fully cooked and smooth, about 15 to 20 minutes. Add butter and mix well.
- Add the goat cheese immediately before serving and mix well. Divide the grits among six plates, and spoon the roasted mushrooms over the grits.

ROASTED TOMATO AND EGGPLANT TARTINE

- For the tomatoes: Preheat oven to 300 degrees. In a wide, shallow bowl, toss tomato slices with olive oil, garlic and thyme. Spread on a baking sheet. Roast 20 minutes. Remove from heat and set aside.
- For the tapenade: Place olives and capers in blender or food processor and chop coarsely. With the motor running, slowly drizzle in olive oil. Puree until smooth; set aside.
- For assembly: Prepare grill for cooking or heat ridged grill pan over moderately high heat. Brush both sides of eggplant slices with olive oil, and season with salt and pepper to taste. Grill, turning as necessary, until slightly charred and soft, about 3 to 4 minutes a side.
- Preheat a broiler. Spread thin layer of goat cheese on each slice of bread. Top each with an equal portion of eggplant, tapenade and roasted tomatoes. Sprinkle with grated Pecorino. Broil until cheese is melted and tartine is piping hot, about 5 minutes.

MUSHROOM RAGOUT WITH GOAT CHEESE GRIT CAKES
This is a great way to enjoy a vegetarian dish without missing the "meat" - leaving the mushrooms in large pieces gives a great meaty mouth feel!

- for the grits
- Lightly oil a 9x13" pan and set aside. In a medium saucepan, bring milk and garlic to a low boil. Slowly whisk in grits and stir over medium heat until cooked and thickened, about 6-8 minutes. Remove from heat and add in goat cheese; stir until fully incorporated. Taste and add salt and pepper; taste again and adjust seasoning as needed.
- Place grits in oiled 9x13" pan and cover with plastic wrap, making sure the plastic touches the surface of the grits so a skin doesn't form. Chill until firm, about 1 hour. When you're ready to serve, cut grits into squares or circles. Heat a little oil in a non-stick pan over medium heat. Brown the grit cakes on both sides, about 2-3 minutes per side, until warmed through.
- for the mushrooms
- Clean and trim mushrooms, removing any tough stems. Cut any large mushrooms in half. Heat olive oil in a pan over medium heat, and saute onion until soft, 3-5 minutes. Add in garlic and cook another 30 seconds until fragrant.
- Add in mushrooms, basil and thyme and turn the heat to high. Once the mushrooms begin to release some liquid and cook down a bit, season with a good pinch of salt and cook another 5 minutes. Turn heat down to medium high. Add in flour, stir and continue to cook until the raw flour is cooked and no longer visible, another 2 minutes.
- Add the wine and cook until reduced to a glaze over the mushrooms, about 5 minutes. Add in broth or water and cook over medium heat, stirring often. Cook until the liquid thickens, about 15 minutes. Add freshly ground black pepper and salt to taste.
- to serve
- Place one grit cake on the serving dish and top with about 1/4 cup of the mushroom mixture. Garnish with basil and parsley. For a larger, dinner portion, stack another grit cake on top, and add an additional 1/4 cup of the mushroom mixture for a grit cake and mushroom stack.
OVEN-ROASTED WILD MUSHROOMS WITH GOAT CHEESE AND CHILE OIL
Steps:
- Preheat oven to 425 degrees F.
- In a large mixing bowl, combine the mushrooms with the olive oil, and shallots, then season with salt and black pepper.
- Arrange the mushrooms evenly in one layer in a heavy roasting pan and roast for 15 minutes or until tender. Remove the mushrooms from the roasting pan and place into a large cazuela or baking dish. Drizzle with 1/2 cup of chile oil and top with the slices of cheese. Bake until hot, 5 to 8 minutes. Remove from the oven, garnish with thyme, and drizzle with the remaining chile oil. Serve with lots of crusty French bread.
- Place all ingredients in a blender and puree. Strain mixture through a fine strainer. Reserve. This may be done up to one day in advance.
GOAT CHEESE POLENTA WITH ROASTED VEGETABLES

- To roast the vegetables: Preheat the oven to 400°F. On a large, rimmed baking sheet, combine the vegetables with 2 tablespoons olive oil and a sprinkle of salt and pepper. Toss until they are lightly coated in oil, then arrange the vegetables in a single layer across the pan. Bake for 25 to 40 minutes (timing will depend on your choice of vegetables), tossing halfway, until the vegetables are tender and deeply golden on the edges.
- To cook the polenta: In a medium saucepan, warm 2 teaspoons olive oil over medium heat until shimmering. Add the chopped bell pepper and 1/2 teaspoon salt. Cook, stirring occasionally, until the pepper is tender, about 5 minutes.
- Add the amount of water specified on your package of polenta, crank up the heat and bring the mixture to a boil. Pour in the polenta, whisk to combine, and reduce heat to medium-low. Cook until thickened, which can take as little as 5 minutes depending on your polenta, whisking often to remove any clumps. Remove the pot from the heat, and stir in the butter, salsa verde and freshly ground black pepper, to taste. Add additional salt, if necessary. Gently fold in the crumbled goat cheese, just until combined. Cover and set aside.
- Cook your eggs as desired. Divide the grits and eggs into 4 bowls. Divide the vegetables into the bowls and finish them with a light sprinkle of green onion. Serve with additional salsa verde and/or hot sauce on the side.

MUSHROOMS WITH GOATS CHEESE

- Cut out the central stalks and dig out a little of the mushroom to creat a cavity.
- Fry the mushrooms in some butter and garlic to soften them for a few minutes. Remove and set aside. Meanwhile fry the shallots in garlic then mix in the pate and fry for a few minutes to heat the pate through.
- Fill the mushrooms with the pate and then top with slices of the goats cheese. Sprinkle the breadcrumbs over the top and grill until the goats cheese starts to melt. Serve with a watercress salad dressed in some olive oil, vinegar and a little dijon mustard

- Clean mushrooms with a soft brush or cloth.

- In a large frying pan, melt the butter with 1 tablespoon of the oil over high heat. - Preheat the oven to 400°. In a bowl, toss the mushrooms with 3 tablespoons of the oil and the rosemary leaves and season with salt and pepper. Transfer the mushrooms to a baking sheet, rounded side up. Roast for about 30 minutes, until tender and browned around the edges. Let cool to room temperature, about 15 minutes.
