16 baby red potatoes, halved
2 cups low sodium chicken broth
1/2 cup fresh lemon juice, plus
2 teaspoons fresh lemon juice (2 lemons)
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 teaspoon lemon zest
1/4 cup fresh basil leaf, chopped

Steps:

  • Place the potatoes, chicken stock, lemon juice, 1 tablespoon olive oil, salt, and pepper in a medium saucepan.
  • Bring to a boil over medium-high heat.
  • Reduce the heat and simmer until the potatoes are tender, about 20 to 25 minutes.
  • Drain the potatoes and place in a serving bowl.
  • Drizzle with the remaining olive oil.
  • Add the lemon zest, salt and pepper to taste, and 3 tablespoons of the basil.
  • Toss well and garnish with the remaining chopped basil.

5 red-skinned potatoes (washed and cut into 1/2" chunks)
1/4 cup olive oil
Steamed asparagus (optional)
Marzetti® Veggie Drizzle™ Finishing Sauce in Lemon Basil

Steps:

  • Preheat the oven to 450 degrees.
  • Clean and cut the potatoes into 1/2"-1" cubes. In a large bowl, toss the potatoes with the oil. Spread the potatoes in the bottom of a baking pan. Bake at 450 degrees for 25-30 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides.
  • If desired, place the potatoes on the second rack down under the broiler (on high). Allow the potatoes to brown for 2-3 minutes, watching them closely so they don't burn.
  • Toss steamed asparagus with the potatoes, if desired.
  • Make zig-zags of Marzetti® Veggie Drizzle™ Lemon Basil Finishing Sauce over the potatoes.
  • Serve warm.

2-1/2 pounds small Yukon Gold potatoes, cut into eighths
8 tablespoons olive oil, divided
3 tablespoons lemon juice
1 tablespoon Dijon mustard
3 garlic cloves, minced
3/4 teaspoon salt

1/2 medium red onion, thinly sliced
1/3 cup chopped fresh basil

Steps:

  • Preheat oven to 450°. In a large bowl, toss potatoes with 2 tablespoons oil. Transfer to a greased 15x10x1-in. baking pan. Bake 22-28 minutes or until tender, stirring occasionally., In a large bowl, whisk lemon juice, mustard, garlic, salt, pepper and remaining oil. Stir in onion and basil. 2 pounds Yukon Gold potatoes, unpeeled and 1-inch-diced
8 large garlic cloves, smashed and peeled
2 large or 4 small branches fresh rosemary
1/2 large lemon, cut in half through the stem and thinly sliced crosswise
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
Fleur de sel

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a sheet pan, add the garlic, rosemary, lemon, olive oil, 2 teaspoons kosher salt, and 1 teaspoon pepper, and toss until everything is coated with oil. Spread out in one layer.
  • Roast for 50 to 60 minutes, turning the potatoes with a metal spatula every 20 minutes, until the potatoes are browned and crisp on the outside and tender inside. The garlic will be browned and sweet and the lemon slices will be caramelized. Discard the rosemary branches, sprinkle with fleur de sel, and serve hot.

2 ½ tablespoons olive oil, (divided)
½ teaspoon lemon zest
½ teaspoon lemon juice
1 ½ tablespoons finely chopped fresh basil*
salt and pepper to taste

Steps:

  • Heat the oven to 400 degrees F. Wash the raw potatoes and dry them with a paper towel.
  • Cut the unpeeled potatoes into ½-inch cubes. Toss the cubes with 1 tablespoon olive oil in a bowl.
  • Transfer the potatoes to a large baking sheet** and spread into a single layer. Roast until soft on the inside (about 25 minutes). Stir the cubes around halfway through the baking time.
  • In a small bowl, stir the remaining olive oil, lemon zest, lemon juice and basil together.

24 to 28 ounces small potatoes
Kosher salt and freshly ground black pepper
1/4 cup pine nuts
1/2 cup mayonnaise
3 tablespoons olive oil
1 tablespoon prepared pesto
2 lemons, juiced
Small fresh basil leaves, for serving

Steps:

  • Put the potatoes in a pot with cold water and add some salt. Cover, bring to a boil and boil until fork-tender, 10 to 15 minutes. Drain, cut in half and transfer to a bowl.
  • Toast the pine nuts in a skillet over low heat until just light golden, 3 to 4 minutes.
  • Mix together the mayonnaise, olive oil, pesto, lemon juice and salt and pepper to taste in a bowl until creamy and smooth. Taste and adjust the seasoning.
  • Pour half the dressing over the potatoes and toss to combine. Sprinkle over the pine nuts and stir in. Add more dressing to taste.
  • Cover and refrigerate the potato salad for a few hours. To serve, sprinkle lots of small basil leaves over the top.

2kg Maris Piper potatoes
1 garlic bulb, cut in half lengthways
100ml rapeseed or sunflower oil
8-10 fresh bay leaves
½ tsp lemon , zested

Steps:

  • Peel and halve or quarter the potatoes, if large, so they're all the same size. Put in a large pan and cover with cold water and a pinch of salt. Add one half of the garlic bulb. Bring to a simmer and cook for 10 mins until a knife goes easily through the potatoes, then drain well, reserving the garlic. Leave the potatoes to steam-dry in the pan for 10 mins. Heat the oven to 220C/200C fan/gas 7.
  • Pour the oil into a large baking tray or two smaller ones - it should cover the base of the tray, so add a little more if you need to. Heat in the oven for 10 mins until really hot. Carefully transfer the spuds to the oil, leaving lots of room between each one (otherwise they will steam, rather than roast) and coat in the oil, taking care not to splash yourself. Season, then add both halves of the garlic, blanched and not, and nestle the bay leaves underneath the spuds.
  • Roast for 40-45 mins, turning halfway through and coating in more oil, until golden and crunchy. Season with more salt and pepper, and zest the lemon directly over the potatoes so the essential oils spritz over the spuds. Serve with the roasted garlic in its shell.

1/3 cup freshly squeezed lemon juice

Steps:

  • Preheat oven to 400°F.
