- Peel 6 kohlrabi and cut into 1-inch wedges; toss with 2 tablespoons olive oil, 3/4 teaspoon kosher salt and a pinch of cayenne on a rimmed baking sheet. Roast at 450 degrees F, stirring every 10 minutes, until tender and golden, about 30 minutes. Toss with 3 tablespoons parmesan and 1 tablespoon chopped parsley.
ROASTED KOHLRABI
Kohlrabi is a vegetable that reminds me of a potato crossed with an artichoke heart. I roast it with garlic and Parmesan cheese.

- Preheat an oven to 450 degrees F (230 degrees C).
- Cut the kohlrabi into 1/4 inch thick slices, then cut each of the slices in half. Combine olive oil, garlic, salt and pepper in a large bowl. Toss kohlrabi slices in the olive oil mixture to coat. Spread kohlrabi in a single layer on a baking sheet.
- Bake in the preheated oven until browned, 15 to 20 minutes, stirring occasionally in order to brown evenly. Remove from oven and sprinkle with Parmesan cheese. Return to the oven to allow the Parmesan cheese to brown, about 5 minutes. Serve immediately.

CARAMELIZED KOHLRABI SOUP
This is a great way to use the mountains of kohlrabi and turnips available in winter at the farmers' market (or crammed into your community-supported agriculture box). When caramelized in the oven and simmered into soup, these hardy roots turn sweet and mellow, making for a comforting and cozy soup.

- Arrange an oven rack 4 to 6 inches from the broiler. On a rimmed baking sheet, toss together kohlrabi, 2 tablespoons oil, 3/4 teaspoon salt and the black pepper. Transfer to oven and broil until very well browned, about 10 minutes total, tossing halfway through cooking. (Watch carefully to see that they do not burn.)
- Meanwhile, heat the remaining 2 tablespoons oil in a medium pot over medium-high heat. Add the onion and cook, stirring frequently, until soft, about 7 minutes. Stir in garlic and let cook for 1 minute.
- Add roasted kohlrabi, stock, 3 cups water, the bay leaf and 1 teaspoon salt. Bring mixture to a boil; reduce heat to medium, cover partly, and simmer until tender, about 30 minutes.
- Discard bay leaf. Using an immersion blender or working in batches in a food processor, purée soup until very smooth.
- Zest the lemon into the pot, then halve it and squeeze in its juice. Taste soup and add more salt if needed. Ladle soup into bowls and top with a drizzle of oil, grated cheese and a pinch of chile powder.

- Meanwhile, prepare kohlrabi. Remove/discard stems, leaves and tough end. Carefully cut kohlrabi in half, cut out and discard the core (if necessary), peel and cut into 1.5-inch chunks. Note: Because I used small kohlrabi, the core was not fibrous, so I left intact and simply peeled and cut the kohlrabi into bite-sized chunks.
- In a bowl, toss kohlrabi with oil, Herbes de Provence, salt and black pepper. Note: I like to toss in a bowl, but you can do directly on a greased sheet pan, if you like.
- Grease a large baking sheet with a little avocado oil. Place kohlrabi chunks onto the baking sheet and spread them out in a single layer. Roast for 30 to 35 minutes, turning halfway. They should be fork-tender when done.Note: Time may vary, depending on exactly how large your chunks are and how you like your veggies cooked.
