This is wonderful served with cheese and crackers. It is also a great addition to a salad. You will think of other wonderful ways to serve these once you have tried them!

1 1/2 lbs red seedless grapes (black or green work well also)
2 tablespoons olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 bunch rosemary (optional) or 1/2 bunch thyme (optional)

Steps:

  • Preheat oven to 425 degrees.
  • On a large, rimmed baking sheet, combine all ingredients, tossing with a spatula to combine. If using herbs, be sure to coat the branches with olive oil to prevent burning.
  • Transfer baking sheet to oven and roast, shaking pan intermittently, until grapes have burst and grape juice begins to thicken, about 30 minutes.
  • Let cool slightly and transfer to serving vessel.

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 350F.
  • Put the grape bunches in a single layer on a baking sheet and roast them for 45 minutes to 1 hour 15 minutes, until the skins are blistered and the grapes look like they are one-third of the way to becoming raisins.
  • The time varies depending on the size and variety of grapes you use. If you're roasting more than one variety of grapes, keep them separated on the baking sheet so you can remove each variety as it's done. remove the grapes from the oven and carefully take the grapes from the baking sheet and lay them out on a pretty cutting board or platter.
  • Serve on their own, with fresh ricotta, with honey, or with a selection of other cheeses as well.

300 g red seedless grapes
1 tsp. fresh thyme leaves, plus extra to serve
Finely grated zest 1 orange
2 tbsp. red wine vinegar
3 tbsp. olive oil
6 large slices sourdough bread
250 g soft goat's cheese
100 ml double cream
1 tsp. freshly ground black pepper

Steps:

  • Preheat oven to 190°C (170°C fan) mark 5. Scatter grapes, thyme and orange zest on a baking tray. Drizzle over the vinegar and 1tbsp oil; mix. Cook for 15min, until grapes are soft but not collapsing. Leave to cool slightly.
  • Meanwhile preheat a griddle pan over high heat and brush the sourdough on both sides with the remaining 2tbsp oil. Griddle bread for 2min per side, until golden with charred lines (do this in batches if needed).
  • In a medium bowl mix, the goat's cheese, cream, pepper and ¼tsp salt.
  • To serve, spread goat's cheese mixture over the toasts and slice each in ½. Arrange on a large platter and top with the grapes. Drizzle over any roasting juices and scatter over some extra thyme leaves or small sprigs. Serve.

1 kg black grapes, on the vine
a few sprigs of fresh thyme
1 tablespoon golden caster sugar
extra virgin olive oil
red wine vinegar
50 g Westcombe Cheddar cheese
75 g half-fat crème fraîche
250 g Tunworth cheese (or any good Camembert-style cheese)
1 bunch of fresh sage

Steps:

  • When the temperature on your wood-fired oven has reached roughly 220°C (check with your thermometer) and the smoke and flames have died down, start cooking (or preheat your regular oven to 220°C/425°F/gas 7).
  • Place the grapes in a large roasting tray, pick over the the thyme leaves, sprinkle with the sugar, then drizzle with 1 tablespoon of oil and a splash of vinegar.
  • Roast for 5 to 10 minutes, or until the grapes are just starting to catch and burst open, keeping an eye on them and turning when necessary.
  • Roughly chop the Cheddar into large chunks. Remove the tray from the oven and spoon over dollops of crème fraîche, scatter over the Cheddar chunks, then tear up the Tunworth and nestle the pieces in and among the grapes.
  • Pick the sage leaves, then drizzle with 1 tablespoon of oil and scatter over the top. Pop the dish back in the oven for 5 minutes, or until the cheese starts to melt.
  • Serve in the middle of the table with your favourite bread, a bowl of walnuts, and a lovely bottle of red.
