BAKED GARLIC WITH BLUE CHEESE AND ROSEMARY
This recipe is so yummy. It will make your house smell amazing while it's cooking. It's one of those recipes where everyone asks you for the recipe when you bring it to a party.

Steps:
- Preheat oven to 375 degrees.
- Cut 1/2 inch off top end (opposite root end) of each garlic head, exposing top garlic cloves.
- Remove any loose papery outer skin.
- Place garlic cut side up in nonaluminum baking dish.
- Top with butter.
- Pour oil over.
- Add 1 can broth and white wine to dish.
- Sprinkle chopped rosemary over garlic.
- Place 2 rosemary sprigs in dish.
- Season with pepper.
- (Can be made 8 hours ahead. Cover; chill).
- Bake uncovered until garlic is tender, basting every 15 minutes with pan juices and adding more broth if necessary to maintain some sauce in dish, about 1 hr 15 minutes.
- Add cheese to dish and continue baking until cheese is almost melted, about 10 minutes.
- Discard rosemary sprigs.
- Garnish with fresh rosemary sprigs.
- Serve with bread.

ROASTED SWEET POTATOES AND GARLIC WITH ROSEMARY

- Preheat oven to 425 degrees.\ Arrange the sweet potatoes and garlic in a shallow flameproof baking dish large enough to hold them in a single layer. Add just enough water to cover the vegetables. Bring the water to a boil over medium high heat and simmer for 2 minutes. Drain in a colander.
- In a baking dish, combine the oil and butter and melt the butter over medium heat. Remove from the heat, add the potatoes and garlic, rosemary, and salt and pepper to taste and toss to coat. Spread the potatoes in a single layer and roast on the lowest rack of the oven, turning them occasionally, for 25 to 30 minutes, or until golden brown. Transfer to a heated serving bowl and serve at once.

- Preheat oven to 375 degrees.
- Cut ½ inch from the top end (opposite root end) of each garlic head, exposing cloves.
- Remove any loose papery outer skin.
- Place garlic, cut side up, in center of a 10-inch square cut from a double thickness of heavy aluminum foil.
- Bring foil up around the garlic bulb to form a bowl.
- Sprinkle garlic with rosemary and basil over bulb and add 1 teaspoon olive oil and ½ teaspoon butter on each bulb.
- Close the foil completely by twisting the tops and place in oven under medium heat or on rack of uncovered grill for 30 minutes- this may all be prepared 8 hours in advance- cover and chill.
- Melt Roquefort until creamy and serve by spreading cheese on the slices of bread and put garlic cloves on top with fork.

GARLIC AND ROSEMARY ROASTED PORK

- Blend first 7 ingredients in processor until rosemary and garlic are finely chopped. Place pork in heavy plastic bag. Pour half of marinade over pork (refrigerate remaining marinade for another use). Seal bag and refrigerate pork overnight, turning occasionally.
- Preheat oven to 375°F. Drain pork; discard marinade. Place pork in small roasting pan. Roast until meat thermometer inserted into center registers 150°F, about 25 minutes. Slice pork thinly.

- Peel the potatoes & the parsnips & cut into quarters. Halve the carrots. Boil the potatoes in salted water for 12 minutes,adding the parsnips to the pan for the last 3-4 minutes.
- Drain the vegetables & shake them in the pan so that they become a little fluffy. Set aside.

- Preheat your oven to 200c.
- Cut about 1cm from the top of each garlic bulb and discard the tops.
- Place the bulbs in a small oven-proof dish and drizzle with the oil and juice and sprinkle the rosemary leaves over.
- Season with salt and pepper.
- Cover the dish with aluminum foil and bake in the oven for 55 minutes or until the garlic is very soft.
- Remove the garlic from the oven and stand covered for 10 minutes.

- Wash and scrub potatoes.
- Cut potatoes in half.
- Grease a baking sheet.
- Preheat the oven to 400°F.
- Place potatoes in a bowl or zip lock bag.
- Add the olive oil and coat potatoes thoroughly.

ROAST PORK WITH GARLIC AND ROSEMARY
A flavorful, simple way to prepare a pork roast. The flavors should go very well with beef, as well, but I haven't tried it yet.

- Preheat the oven to 450 degrees.
- Mix the cayenne, garlic, sugar, salt, and pepper and press into the roast.
- Place the roast on a rack in a roasting pan.
- Roast at 450 for 15 minutes.
- Pour 1/2 cup of wine over the roast, lower the temperature to 325, and continue to roast.
- Add about 1/4 cup of liquid every 15 minutes or so.
- If there is liquid in the pan, use that to baste before adding more.
- Roast until the internal temperature is 145-150 degrees (probably about 1 1/2 hours).
- Remove to a platter, baste with the remaining drippings, and let stand 10 minutes before carving.
- If you want more garlic flavor, push several cloves (sliced in quarters) into cuts in the roast.
