ROASTED GARLIC JACK BREAD (BREAD MACHINE)
I wanted to make a roasted garlic bread with cheese and couldn't find a recipe I liked, so I sort of made one up by combining a couple I found on the internet and after tweaking a little it turned out pretty good.

Steps:
- Add all ingredients to bread machine in order listed (or as recommended by your machine's manufacturer). Select dough cycle and press start.
- When complete, turn dough out onto a floured surface and knead a few times, then divide dough in half.
- Shape each half into a round or oval loaf, put on a greased pan and let rise until about double.
- Bake at 350°F for about 25-30 minutes until golden brown and sounds hollow when tapped. Cool on wire racks at least 15 minutes before slicing. Great served with a steak dinner or as an appetizer with dipping oil.

ROASTED GARLIC BREAD FOR THE BREAD MACHINE
Steps:
- Gather the ingredients.
- Prepare roasted garlic . After squeezing garlic out of cloves, mash slightly and measure 1/4 cup.
- In a small microwave-safe dish, combine butter and minced garlic. Microwave on high for 1 to 2 minutes until the garlic is fragrant.
- Place all ingredients-butter and garlic mixture, water, milk, bread flour, Parmesan cheese, sugar, salt, garlic powder, and yeast-except the roasted garlic-in bread machine pan in the order recommended by the manufacturer.
- Listen to the machine as it kneads ; if it sounds rough or straining add more warm water. If the dough is too wet or soft, add more flour. This is common practice in bread machines since flour absorbs more or less water depending on the growing conditions of the wheat and the region where it was grown.
- Add mashed garlic at the Raisin/Nut signal or 5 to 10 minutes before the last kneading cycle ends. Select the Basic/White cycle and use Medium or Light Crust Color. Do not use delay cycles.

ROASTED GARLIC BREAD WITH GORGONZOLA
Beware: Addicting and very, very rich!!! This makes alot of sauce....definately serves more than 4 people. You may want to cut the recipe down in half or into fourths. This recipe needs to be prepared a day ahead of time for the garlic to infuse into the oil

Steps:
- Make garlic oil: Preheat oven to 450°F Wrap garlic head in foil and roast in middle of oven until tender, about 45 minutes.
- Carefully unwrap garlic and cool. Horizontally halve garlic head and arrange, cut sides down, in a small bowl with oil. Let mixture stand, covered and chilled, 2 to 3 days to infuse oil with garlic flavor.
- Preheat broiler.
- In a saucepan boil cream, stirring occasionally, until reduced to about 1/2 cup. Add Gorgonzola and cook over low heat, stirring constantly, until cheese melts and sauce is smooth. Remove pan from heat and keep sauce warm, covered.
- Horizontally halve baguette and arrange, cut sides up, on a baking sheet. Broil bread 2 to 3 inches from heat until golden. (If crust is soft, you may broil crust side of baguette as well.) Brush cut sides of baguette with garlic oil and season with salt. Cut baguette crosswise into 1-inch-thick slices.
- Pour warm Gorgonzola sauce onto center of a large plate and arrange roasted garlic bread slices around sauce.

BUTTER AND GARLIC BREAD ( BREAD MACHINE)
This is a wonderful bread machine recipe. I sometimes double it and make it in the stand mixer too. Perfect for pasta dishes.

- Add all except the yeast and the water to the machine or mixer.
- Bloom the yeast in the water then add to the mix. Push start or knead in the mixer for about 10 minutes.
- If using a stand mixer, let rest for an hour( in a covered bowl), then mix again for 5 minutes. Rest an additional hour.
- Bake at 400 degrees till golden brown ( about 25 minutes for my oven).

ROASTED GARLIC BREAD

Steps:
- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs; brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425°F for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a small bowl; set aside.
- In a large mixing bowl, dissolve yeast in warm water. Add the sugar, salt, and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
- Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to coat top. Cover and let the dough rise in a warm place until doubled, about 45 minutes. Meanwhile, add the sage, marjoram, and rosemary to the reserved roasted garlic. Mash with the back of a spoon to form a paste.
- Punch dough down. Turn into a lightly floured surface; divide in half. Roll each portion into a 10" x 8" rectangle. Spread each with half the garlic mixture to within 1/2" of edges. Sprinkle each with 1 tablespoon Parmesan cheese. roll up jelly-roll style, starting with a long side; pinch seam and ends to seal.
- Coat a baking sheet with nonstick cooking spray. Place loaves seam side down on pan; tuck ends under. With a sharp knife, make several slashes across the top of each loaf. cover and let rise until doubled, about 30 minutes.
- Bake at 375°F for 20-25 minutes or until golden brown. Remove to wire racks; brush with butter.

This low to medium rising bread has a good dense texture and is very garlicky. Use the bottled chopped garlic as an extra convenience.

- preheat oven to 350 and cut garlic bread in half horizontally, place on baking sheet covered with aluminum foil.
- remove all of the garlic bulbs from the head and pop them from their skin. Arrange them on a seperate piece of aluminum foil and drizzle them in extra virgin olive oil.
- fold the foil over so it makes a pouch and bake in the oven for about 35-40 minutes or until the garlic turns gold and soft. Remove from oven and cool.
- Mash the garlic(it should be soft now) or pulse it in the food processor. Mix the paste with the room temperature butter until evenly mixed. Refrigerate it at this point for 30 minutes. Make sure its mixed very well.
- Coat the sliced bread in extra virgin olive oil and bake for 10 minutes or until the bread is slightly crispy, not toasted. Let cool slightly.
- Spread the roasted garlic butter on the bread. Sprinkle the basil and cheeses on the bread and bake for 12-15 minutes or until toasted.
- Serve with your favorite Italian meal.
