GAZPACHO WITH GARLIC CROUTONS



Gazpacho with Garlic Croutons image

8 beefsteak tomatoes, cut into 1/2-inch dice
5 cloves garlic
1/2 English cucumber, peeled, cut into coarse 1/2-inch dice
1/2 green bell pepper, stem and seeds removed, cut into coarse 1/2-inch dice
1/2 white onion, cut into coarse 1/2-inch dice
2 cups tomato juice
Kosher salt
1/2 cup extra-virgin olive oil
1/4 cup sherry vinegar
2 generous shakes of hot sauce, such as Tabasco
1/4 cup extra-virgin olive oil
3 cloves garlic
1 cup rustic white bread, crusts removed, cut into 1/4-inch dice
Kosher salt
2 ears corn, kernels removed from the cob
1/2 English cucumber, peeled, cut neatly into 1/4-inch dice
1/2 green bell pepper, cut neatly into 1/4-inch dice
1/2 white onion, cut neatly into 1/4-inch dice
1/2 cup sour cream

Steps:

  • For the soup: In a large bowl combine the tomatoes, garlic and the coarsely chopped cucumbers, peppers and onions. Toss the veggies together. Using a blender or food processor in batches, puree the veggies with 1/2 cup of tomato juice in each batch until smooth. Season each batch with salt. Continue until all the veggies are pureed. If you have any tomato juice left, toss it into the mix, if not YAY!
  • Add the olive oil, sherry vinegar and hot sauce to the puree and stir to combine. Taste and season with salt if needed (it will.) If the soup is a bit too vinegary add another pinch of salt (it offsets the acid). Stir, taste again and re-season if needed. Cover and refrigerate until the soup is cold, at least 1 hour.
  • For the garlic croutons: Add the olive oil to a large saute pan. With the side of a large knife, smash the garlic cloves to break them. You should be able to smell the garlic....YUM!!! Add the smashed garlic cloves to the pan and bring it to medium heat. Cook the garlic until it is golden and very aromatic, 3 to 5 minutes, then remove it from the pan and ditch it. It has fulfilled its garlic destiny. Add the diced bread to the garlic-perfumed oil and cook until golden brown, about 5 minutes. Season with salt. Remove from the heat and reserve.
  • To serve: Remove the soup from the fridge, taste it and adjust the seasoning if needed. (When things are cold they taste less, so do not be alarmed if the soup needs a little more salt.) Place the corn, all the finely diced veggies, croutons and sour cream in ramekins or little bowls and allow people to garnish their soup as desired. It's a DIY situation!!!
  • Gazzzz-PACH-ooooooooo that's good!!!

ROASTED GARLIC GAZPACHO

8 garlic cloves, unpeeled
4 large vine-ripened tomatoes, cored and cut into 1-inch chunks
2 red bell peppers, cored, seeded and cut into 1-inch chunks
1 English or hothouse cucumber, halved, seeded and cut into 1-inch chunks (do not peel)
5 cups tomato juice, such as Campbells's (not the low sodium)
¼ cup extra virgin olive oil, best quality such as Colavita or Lucini
¼ cup red wine vinegar, best quality such as Pompeian Gourmet
1½ teaspoons salt
½ teaspoon freshly ground black pepper
½ teaspoon Tabasco (optional)

Steps:

  • Place the unpeeled garlic cloves in a small skillet over medium heat; cook, turning occasionally, until soft and blackened in spots, about 10 to 15 minutes. Cool, then remove skins (they should slip right off) and scrape off any char.
  • Add the peeled roasted garlic to the bowl of a food processor fitted with a metal blade; pulse, scraping down sides as necessary, until garlic is finely puréed. Add the chopped tomatoes and pulse until coarsely chopped. Do not overmix; the soup should be slightly chunky. Transfer the tomato mixture to an extra large bowl. Add the red bell peppers and cucumbers to the food processor and pulse until coarsely chopped; add to the bowl with the tomato mixture. Stir in the tomato juice, olive oil, red wine vinegar, salt, pepper and Tabasco. Taste and adjust seasoning if necessary. Cover the bowl with saran wrap and chill until ready to serve. The longer it sits, the better it tastes. Serve cold.

4 ripe tomatoes
2 small eggplants or 1 medium eggplant, peeled and cut into large chunks
4 small zucchini or 2 medium zucchini, but into large chunks
2 medium onions, cut into large chunks
10 garlic cloves, peeled
1/2 cup extra virgin olive oil
1/2 cup sherry wine vinegar
salt
ground black pepper
4 cups water
4 slices stale bread, crusts removed and torn up
crouton (to garnish) (optional)

Steps:

  • Preheat the oven to 400°F Combine the tomatoes, eggplant, zucchini, onions, garlic, and olive oil in a large roasting pan and roast, stirring occasionally, until the eggplant is tender, about 30 minutes.
  • Put the mixture into a bowl and add the vinegar, salt, pepper, water, and bread. Refrigerate and allow to cool for several hours or overnight.
  • Pour the mixture into a food processor or blender. You can put it through a food mill or strainer to remove any remaining solids.
  • Check seasoning, garnish and serve.

1 hothouse cucumber, halved and seeded, but not peeled
2 red bell peppers, cored and seeded
4 plum tomatoes
1 red onion
3 garlic cloves, minced
23 ounces tomato juice (3 cups)
1/4 cup white wine vinegar
1/4 cup good olive oil
1/2 tablespoon kosher salt
1 teaspoons freshly ground black pepper

Steps:

  • Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!
  • After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.

8 medium tomatillos
1/4 medium white onion
2 garlic cloves
1/4-1/2 jalapeno pepper (to taste)
1/4 cup olive oil
olive oil, for grilling
1/2 seedless cucumber, chopped
1/2 cup cilantro (packed)
2 tablespoons lime juice
1/2-1 teaspoon fine sea salt
1/2 teaspoon honey
1/4 cup plain Greek yogurt
extra-virgin olive oil, for drizzling
kernels from one ear of grilled corn
diced cucumber
cherry tomatoes, sliced in half
fresh herb

Steps:

  • Heat grill to medium-high heat.
  • Drizzle the tomatillos, onions, garlic and jalapeno with olive oil and a few pinches of sea salt. Wrap the garlic cloves in foil with a little oil. Place all the vegetables directly on the grill. Grill until they are soft and slightly charred.
  • Remove from the grill, unwrap the garlic. Allow to cool for a few hours.
  • Put all the ingredients in a blender and blend until smooth. Taste and adjust seasoning, as necessary.
  • Serve as is or with whatever garnishes you like. The garnishes add flavor and a nice crunch.

For this recipe you will need roasted vegetable broth. I have published one such recipe (recipe#415106). With this broth plus more vegetables that this recipe calls for, you will have a very healthy, very delicious hot weather soup. However you can use regular vegetable broth such as is available in the supermarket if you wish. Gazpachos may be blended smooth as this one is, or chunky with chopped vegetables. You may wish to reserve some of the roasted veggies to add and give texture to the soup. Gazpachos also have a picante taste. You may wish to "doctor" this soup up to meet your expectations. This soup is so tasty because roasting brings out the best in veggies. Enjoy!

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the tomatoes, zucchini, eggplant, and onions into large chunks as directed, making all the chunks approximately the same size. Toss the vegetable chunks and garlic cloves in a large bowl with the olive oil.
  • Spread vegetables in a single layer in a roasting pan. Roast in the preheated oven 25 minutes or till tender, turning once.
  • Puree the vegetables with the 4 cups broth and place in a large bowl. Add sherry vinegar and black pepper to taste.
  • Cut crusts off bread slices and discard or reserve for another use. Tear the bread slices into pieces and stir into the soup mixture.
  • Refrigerate several hours. Serve garnished with fresh chopped cilantro.
