ROASTED GARLIC AND BAKED GOAT CHEESE APPETIZER
Roasted Garlic and Baked Goat Cheese make an easy, yet elegant appetizer to serve to guests on the coming chilly nights. It also makes a meal in itself with the proper accompaniments. Cheese and bread always pleases!

- Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
- Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
- Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.
- In a small bowl, combine the bread crumbs, tarragon, and a little more freshly cracked pepper. Sprinkle the bread crumb mixture over all sides of the log, turning as necessary.
- Bake cheese, uncovered for 30 minutes alongside the garlic.
- The garlic cloves will practically pop out of their skins. Spread them on baguette slices along with some goat cheese.

GARLICKY HERBED GOAT CHEESE SPREAD
This delicious garlicky herbed goat cheese spread makes the most delectable appetizer or spread. Spread on toasted or grilled sourdough bread or crackers, or use it for epic sandwich creations. It also pairs wonderfully with eggs, roasted or grilled vegetables, and can also be tossed with pasta!

- Combine all the ingredients in a mini food processor. Pulse until just whipped and blended (and the herbs are well-distributed in small, even pieces), scraping down the sides of the bowl once or twice if needed. Transfer the goat cheese spread to a serving bowl (I like to place it off-center, as seen in the photos above), using the back of a large spoon to create a divet and swoosh.
- Just before serving, drizzle with extra virgin olive oil and garnish with several dill fronds. This goat cheese spread is best served right away, but can be prepared in advance and stores well in the refrigerator for 2-3 days. Store in a container with a tight-fitting lid.
- If you do not have a mini food processor or don't wish to use one: before proceeding, finely chop the herbs (it is especially important for the goat cheese to be at room temperature if mixing by hand) and mix everything together with a spoon or spatula until well incorporated. *I prefer to use a mini food processor, because it is quick, fast, and incorporates a little air into the goat cheese, creating a slightly whipped, lighter texture.

- Preheat oven to 400 degrees.
- Cut 1/4 inch off the top of the bulb of garlic to expose the cloves beneath, but do not peel the garlic, you want to roast it in the skin. Place bulb on a piece of aluminum foil, place butter on top, pour lemon juice over the garlic and sprinkle with kosher salt. Bring up all sides of aluminum foil and twist together to close. Cook for 60 minutes or until garlic cloves are soft and golden in color. Allow to cool.
- While garlic is cooling, remove the plastic wrapper from the goat cheese and wrap the goat cheese in aluminum foil. Place in the oven for 3-4 minutes or until warmed and softened.
- To eat, spread warm goat cheese on bread. Remove one garlic clove with a fork, spread on top of goat cheese.

- In a heavy saucepan, heat olive oil, garlic and olives for approximately 30 minutes over very low heat. Do not allow to boil. Garlic should become very soft.
- Roll the goat cheese in pepper so it is completely covered.
- Place cheese roll standing up in a shallow bowl, surround with olive oil, garlic and olive mixture. Garnish with rosemary leaves.

ROASTED PEPPER AND GOAT CHEESE SANDWICHES

- Preheat the oven to 500 degrees F.
- Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
- Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.
- Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.
- To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

- Cut off top of garlic bulb to expose cloves. Spray garlic lightly with cooking spray and wrap in aluminum foil. Bake at 400°F until very tender about 30 to 40 minutes.
- Cool slightly and gently press cloves to remove from skins. Mash cloves with fork.
- Mix cheeses, garlic, and white pepper in medium bowl, adding milk 1 tablespoon at a time. Add just enough milk to make desired spred consistency.
- Refrigerate a minimum 3 to 24 hours. Best if chilled 24 hours.
- Spoon into serving bowl and serve with veggie and croustades or Wheat Thins.

- Cut garlic crosswise in half and spread some oil on cut surface, wrap in foil.
- Roast in 375°F oven about 45-50 minutes.
- Till soft and golden.
- Squeeze the meat out of the skins season with salt and pepper add enough oil to taste while using a fork to smash till smooth and creamy. Mix in rosemary.

- Note- If using salted butter, lower amount of salt used or omit.
- Preheat oven to 325°F.
- Cut off top third of garlic head without peeling away papery skin.
- Drizzle top of garlic with olive oil until it is saturated.
- Place garlic cut side down in a ovenproof ramekin dish or baking pan.
- Roast for 60-75 minutes, or until soft and tender.
- When slightly cooled, squeeze out roasted garlic cloves and place in a mini-food processor (or may place in a bowl to whisk by hand).

- Preheat oven to 375°.
- Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.

- Remove goat cheese from refrigerator, unwrap and let it to warm to room temperature.
- Heat oven to 350 degrees Fahrenheit and place the garlic cloves, unpeeled, on a pan and drizzle a small amount of olive oil over the top. Place in hot oven and roast until garlic is soft, about 15 minutes. Remove and allow to cool.
- Add the paprika to the goat cheese. Skin and add roasted garlic to the cheese. Add olive oil and mix. The cheese will turn a pinkish-orange color.
