CRANBERRY, PEAR, & BRIE GRILLED CHEESE



Cranberry, Pear, & Brie Grilled Cheese image

Now THIS is a great way to use up Thanksgiving leftovers. Melty, savory brie melts over sweet pears and mingles with tart cranberry sauce. It's not the prettiest sandwich in town, but it might just be the tastiest.

Number Of Ingredients 5

4 slices sourdough bread
2 tablespoons butter (softened)
4 ounces Brie cheese (sliced about 1/4-inch thick)
1 large ripe pear (cored and sliced about 1/4-inch thick (I've used both bartlett and anjou, both good))
1/2 cup cranberry sauce

Steps:

  • Warm a large skillet over medium-low heat.
  • Butter each slice of bread on one side. Lay two slices, buttered side down, in the skillet. Carefully lay the pear slices evenly on both slices of bread the bread in the skillet, cover with a single layer of brie, and carefully spoon the cranberry sauce over the top of each. Top with remaining slices of bread, butter side up.
  • Cook, occasionally pressing gently with the back of a spatula to help the ingredients meld together, flipping occasionally, until sandwich is golden brown and the cheese is melted and oozing a bit out of the sides.
  • Slice each sandwich in half and serve.

2 slices sourdough bread (or bread of your choice)
1 ounce brie cheese, room temperature
1 tablespoon baked cranberry sauce (try Baked Cranberry Sauce)
1 tablespoon butter, softened

Steps:

  • Softened butter works best on a grilled cheese. Just let it sit out and then smear it all over the bread. You only need to butter one side of each slice. This is the side that will be grilled.
  • Smear the brie and roasted cranberries onto the side of the bread that is not buttered. And sandwich it with another buttered slice(with butter on the outside). All this butter and cheese is making me hungry!
  • In my opinion, a grilled cheese sandwich is best done in a iron skillet. You don't need it to be very hot. Turn the stove to a medium-high heat, and once the skillet is warmed, add the sandwich. Let it sit for two minutes and then flip it. It should come out perfect every time!

1/2 large red onion, sliced
1 red bell pepper, cut in 8 wedges
1 large portabella mushroom, sliced thickly
1 zucchini, sliced in 3 lengthwise pieces
2 tablespoons pesto sauce
2 tablespoons light sour cream
1 tablespoon olive oil
2 teaspoons balsamic vinegar
1/2 teaspoon minced garlic
4 large rolls, sliced lengthwise (each approx. 3-1/2 oz)
2 ounces brie cheese, sliced thinly

Steps:

  • Preheat oven to 450°F Line a rimmed baking sheet with foil.
  • Place onion, pepper, mushroom, and zucchini on prepared baking sheet. Spray vegetables lightly with cooking spray. Roast vegetables, turning once, for 30 to 35 minutes, or until tender.
  • Meanwhile, in a small bowl, combine pesto and sour cream.
  • Once vegetables are roasted, cut into pieces that fit the shape of the bread. Toss with oil, vinegar, and garlic.
  • Spread pesto mixture over bread; top with vegetable mixture and Brie. Cut in half.

Adapted from the Two Brothers Roundhouse restaurant in Aurora, IL which uses Brioche. Since Brioche is so hard to come by, I have substituted French Bread. The Quince Jam is the hardest to find, I found it at Williams Sonoma.

2 slices French bread
2 ounces brie cheese
3 tablespoons quince jelly
2 teaspoons butter
1 tablespoon extra virgin olive oil

Steps:

  • Spread Brie onto one slice of French Bread.
  • Spread Quince Jam onto other slice of French Bread.
  • Combine French Bread Slices by placing the Brie and Jam sides together.
  • Butter exposed bread slices.
  • Heat up skillet at medium-low with enough EVOO to coat the bottom.
  • Grill each side of the sandwich until medium brown, not burnt and cheese is melted inside.

2 ounces brie cheese, sliced thinly (rind preferably removed)
2 slices whole meal bread
2 ounces walnuts, chopped roughly
2 tablespoons cranberry jam

Steps:

  • Place the bread under a grill and toast for 3 minutes on a high heat. Remove and place the cheese on top of one of the slices, returning back to the grill until melted. Then, add the walnuts and cranberry jam, before sandwiching together and tucking in! I sometimes return mine back to the microwave for a further 1/2 minute on high heat, so it is extra hot.
  • Alternatively, you could assemble the sandwich minus the cranberry sauce and place in a toaster bag and use the toaster. Then add the cranberry jam when serving.
