1 3/4 c ritz crackers, crushed
1/2 c butter, melted and divided
1/4 c onion, chopped
1/2 c green bell pepper, finely diced (or color of your choice)
1 can(s) 15-oz. can cream-style corn
1/4 c all-purpose flour
2 eggs, beaten
1/4 c milk (or cream)
1/2 tsp salt
1/4 tsp curry powder
5-8 slice bacon, cooked and crumbled

Steps:

  • 1. Heat oven to 350 degrees F.
  • 2. Combine crushed crackers with 1/3 of melted butter. Press crumbs into a 9-inch quiche dish.
  • 3. Cook onions and pepper in remaining butter until tender. Add corn and flour. Cook, stirring until thick.
  • 4. Combine eggs, milk, salt and curry powder. Stir rapidly into corn mixture. Add bacon. Pour into quiche dish. Bake 30 minutes or until golden. Serve immediately.

8 bacon strips, diced
1/4 cup crushed cornflakes
5 large eggs, lightly beaten
1/2 cup whole milk
1/2 cup 4% cottage cheese
1-1/2 cups shredded cheddar cheese
1 green onion, sliced
1/2 teaspoon salt
1/8 teaspoon pepper
2-1/2 cups frozen cubed hash brown potatoes

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. , In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

4 ears of corn (about 8 ounces each)
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Measure a 24-inch length of twine, if using, and cut into 4 even pieces.
  • Peel back the husks from the cobs but do not remove completely. Remove all of the silk underneath and discard. Drizzle the cobs with some oil and sprinkle with salt and pepper. Pull the husks back up and around the corn.
  • Put the corn directly on the oven rack and roast until the corn is tender and the husks are golden brown, 15 to 20 minutes.
  • If using twine, pull the husks back and tie with a piece of string. Transfer the cobs, in their husks, to a serving platter.

1 cup Bisquick
2 cups milk

Steps:

  • Preheat oven to 400 degrees.
  • Grease 9x13x2-inch baking dish.
  • Cook sausage, bell pepper, and onion in skillet over medium heat, until done.
  • Drain.
  • Stir together sausage mixture, potatoes, and 1 1/2 cups cheese in baking dish.
  • Stir bisquick, milk, pepper, and eggs until well blended.
  • Pour into baking dish,.
  • Bake uncovered 40-45 minutes.
  • Sprinkle with remaining cheese.
  • Bake until cheese is melted.
  • Cool and serve.

1 lb sweet Italian sausage (cooked and drained)
4 eggs
1/2 cup milk
2 tablespoons snipped chives

Steps:

  • Line the pie shell with 1 cup shredded mozzarella, cover with sausage.
  • Top with remaining 1 cup shredded mozzarella.
  • In a small bowl beat together the eggs and milk. Pour over the cheese layer. Sprinkle with the chives.
  • Bake 325' for approximately 40 minutes or until set. It may be necessary to prick the top layer with a fork to allow the egg to redistribute itself.
  • Cool for a few minutes before cutting.

This is a pie served at the Old Granite Inn in Rockland, Maine. I haven't tried it yet, but as soon as I found it on another site I knew I had to share it. Maple syrup and cornflakes make for an interesting twist on a familiar favorite.

1 (9 inch) pie crusts, baked
1 cup corn flakes
5 large tart apples (unpeeled and sliced thin)
3 tablespoons maple syrup
3/4 cup flour
1/2 cup sugar (either white or brown sugar is fine)
7 tablespoons butter, in small pieces
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 450 degrees. Place cornflakes into pie shell.
  • Sprinkle apple slices with maple syrup, and add on top of cornflakes.
  • Combine flour, sugar, butter and cinnamon in a small bowl. Using a pastry blender or your fingers, work the butter into the flour until the mixture resembles irregular bread crumbs. Sprinkle the crumbs evenly over the apple slices.
  • Bake pie for 10 minutes at 450 degrees, then reduce the heat to 350 degrees and continue to bake for about 35 minutes or until apples are tender and bubbling. Serve warm.

1/4 teaspoon black pepper, freshly ground

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, mix the three cheeses together, set aside until needed.
  • Press the hash browns lightly into a greased 9 inch pie pan, to form a crust.
  • Sprinkle a 1/2 cup of cheese mixture over the potatoes, top with mushrooms, onion, bacon and broccoli.
  • In a large bowl beat the eggs, milk, thyme, salt and pepper together until well mixed and pour over vegetables.
  • Sprinkle the remaining cheese on top and bake in a 375 degree oven for 35 minutes or until the center is set and pie is golden.

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cook ground beef, stirring and breaking up lumps, in a large cast iron skillet until browned, about 10 minutes. Stir in pasta sauce and corn. Bring to a boil, then stir in cheese.
