Flattened Cornish Game Hens With Garlic-citrus Marinade image

A delicious entree that is easy enough for a weekday dinner, yet pretty enough for a dinner party. Serve with stir-fried summer squash, a salad and french bread. The recipe comes from Bon Appetit.

1/4 cup olive oil
4 teaspoons fresh thyme, chopped
fresh thyme, for garnish
3 garlic cloves, finely chopped
2 teaspoons lemons, zest of
2 teaspoons lime zest
1 teaspoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
2 rock cornish game hens, halved lengthwise

Steps:

  • Prepare BBQ (Medium heat).
  • Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
  • Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
  • Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
  • Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

4 Cornish game hens
1/2 cup white wine
1 tablespoon wild peppercorns (toasted white peppercorns are ok)
12 fresh laurel leaves or dry bay leaves
1/4 cup olive oil
4 sprigs parsley, cleaned and chopped
1 cup coarse polenta
3 cloves garlic, minced
3 1/2 cups water or chicken stock
2 ounces unsalted butter
Salt and freshly ground black pepper

Steps:

  • Remove breast and leg meat from the hens. Marinate for 1 hour in white wine, pepper, laurel leaves, olive oil, and parsley.
  • Preheat oven to 450 degrees F.
  • Roast the hens over the laurel leaves. Salt, to taste. Cook 12 to 15 minutes, skin side up.
  • Bring stock to boil. Whisk in polenta and cook over low heat 15 to 20 minutes when thick and pulls away from the side of the pan. Saute garlic and butter and whisk into polenta. Season with salt and pepper.

2 teaspoons Dijon mustard
Salt
3 tablespoons olive oil
2 game hens, about 1 and 1/2 pounds each, split in half
4 small peeled garlic cloves
1/4 cup red wine vinegar
1/4 cup chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary

Steps:

  • Heat the olive oil in a large skillet, over medium heat for about 2 minutes or until almost smoking. Add the game hens, skin side down, and saute for 5 minutes or until golden. With tongs, turn the hens over, add the garlic and saute for another 5 minutes.
  • Add the vinegar and broth which will bubble up, then the thyme and rosemary. Cover and simmer, over low heat, for 25 to 30 minutes or until the juices run clear, not rosy, when the thigh is pricked with a fork. Transfer the hens to a plate. Stir the mustard into the juices in the skillet and boil down furiously, until 1/2 cup of liquid remains, scraping the brown cooking particles into the sauce. Season with salt and pepper, spoon over the hens and serve immediately.

1 Cornish game hen (1 3/4 pounds), trimmed of excess fat
Kosher salt and freshly ground pepper
3 medium carrots, peeled and quartered lengthwise
1/2 small celery root, peeled and cut into 1/2-inch matchsticks
2 tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard, plus more for serving
2 tablespoons fresh lemon juice
2 teaspoons capers in brine, drained and coarsely chopped
2 tablespoons chopped fresh tarragon leaves

Steps:

  • Preheat oven to 425 degrees with racks in top and bottom. Place hen, breast-side down, on a work surface. Using kitchen shears, cut along both sides of backbone to remove. Flip over; split lengthwise with a heavy knife. Pat dry; season with salt and pepper. On a rimmed baking sheet, toss vegetables with 1 tablespoon oil; season with salt and pepper. Transfer sheet to bottom rack of oven.
  • In an ovenproof skillet, heat remaining oil over medium-high. Add hen, skin-side down; cook until browned, about 3 minutes. Flip; transfer skillet to top rack of oven. Roast, stirring vegetables once, until golden, and a thermometer inserted into thickest part of hen thigh reads 165 degrees, 18 to 20 minutes for hen, and 25 to 28 minutes for vegetables. Transfer hen and vegetables to a platter. Return skillet to medium heat; whisk in mustard, lemon juice, 1 tablespoon water, and capers. Cook until reduced slightly, about 1 minute. Stir in tarragon; spoon over vegetables. Serve, with more mustard.

1 lemon, very thinly sliced
1 1 1/2- to 1 3/4-pound Cornish game hen, halved, backbone discarded
1/3 cup all-fruit orange marmalade
2 tablespoons fresh lemon juice
1 1/2 tablespoons bourbon
1/2 teaspoon grated lemon peel
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 450°F. Arrange lemon slices on baking sheet in two 3 x 5-inch rectangles. Season Cornish game hen halves generously with salt and pepper. Place game hen halves, skin side up atop rectangles of lemon slices. Roast game hen halves 15 minutes.
  • Meanwhile, combine orange marmalade, fresh lemon juice, bourbon, grated lemon peel and ground cloves in heavy small saucepan. Simmer marmalade mixture over medium heat until thickened to consistency of glaze, about 4 minutes. Season marmalade glaze to taste with salt and pepper.
  • Brush game hen halves with marmalade glaze. Continue to roast hen halves until juices run clear when thighs are pierced and hen halves are deep brown, brushing 2 more times with marmalade glaze, about 10 minutes longer. Serve immediately.

2 (1 1/2 to 2-pound) Cornish game hens
1/4 cup olive oil
2 shallots, minced
2 tablespoons orange zest, from 2 medium oranges
2 tablespoons lemon zest, from about 3 lemons
2 tablespoons chopped fresh thyme leaves
3 tablespoons chopped fresh mint leaves
1 teaspoon kosher salt, plus extra for seasoning
1 teaspoon freshly ground black pepper, plus extra for seasoning
2 cups low-sodium chicken stock
2 tablespoons Marsala wine or dry sherry
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
1/4 cup dried cranberries or currants
2 teaspoons all-purpose flour
2 tablespoons unsalted butter, at room temperature

Steps:

  • Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 450 degrees F.
  • Rinse the game hens and pat dry with paper towels. In a small bowl, mix together the olive oil, shallots, orange zest, lemon zest, thyme, mint, 1 teaspoon salt and 1 teaspoon pepper. Rub 2 tablespoons of the zest mixture over the skins of the game hens. Place the remainder of the zest mixture under the skin and into the cavities of the hens. Using kitchen twine, truss the legs together. Place the hens in a shallow 9 by 13-inch baking dish. Add the chicken stock, Marsala wine, lemon juice, orange juice, and cranberries. Roast for 30 to 35 minutes, or until the leg juices run clear. Remove the game hens and set aside. Place the flour in a small saucepan. Whisk in the pan juices. Bring the juices to a boil over medium heat. Reduce the heat and simmer for 8 to 10 minutes until slightly thickened. Whisk in the butter and season, to taste, with salt and pepper.
  • To serve, remove the kitchen twine and place the hens on 2 serving plates. Drizzle with the citrus-herb sauce.
