Looking for a cool, healthy treat? This icy dessert is full of fruit and little else.

Number Of Ingredients 6

4 ripe peaches (about 1 1/2 pounds), peeled, halved, pitted, and coarsely chopped
1/2 cup water
1/4 cup sugar, plus more if needed
1 tablespoon fresh lemon juice
Coarse salt
2 teaspoons finely chopped fresh basil (optional)

Steps:

  • Puree peaches, water, sugar, lemon juice, and 1/4 teaspoon salt in a blender; add more sugar to taste. Transfer to an 8-inch-square baking dish. Freeze for 2 1/2 hours, scraping with a fork every hour (mixture should be icy and fluffy). Stir in basil.

Granitas are the ultimate easy, refreshing make-ahead dessert. You need little more than fruit, sugar and water for the most basic ones. This version adds an adult twist with some Manzanilla sherry, which adds a complexity of flavor without overshadowing the fruit base.

3/4 cup sugar
4 wide strips orange zest, plus 2 tablespoons orange juice
2 wide strips lemon zest, plus 2 tablespoons lemon juice
1 1/2 pounds peaches, pitted and chopped (about 4 cups)
1/3 cup manzanilla sherry
Peach and/or orange slices, for garnish

Steps:

  • Bring the sugar, 1/2 cup water and the orange and lemon zest to a simmer in a saucepan, stirring until the sugar dissolves. Let cool, then strain into a blender. Add the peaches and orange and lemon juice. Blend until very smooth.
  • Pour into a 9-by-13-inch baking dish and stir in the sherry. Freeze until beginning to harden, 2 to 3 hours, then scrape with a fork. Continue to freeze, scraping occasionally, until frozen, about 3 more hours. Serve garnished with peach and/or orange slices.

PEACH GRANITA WITH LEMON BASIL

From Laurie Alleman, the former pastry chef at Galileo, and the owner of the Swiss Bakery and Pastry Shop in Burke, Virginia . This recipe yields a bonus--the poached fruit can be used for garnish, in a salad or for anything else you like. The granita only uses the poaching liquid. You can also experiment with other herbs, even other fruit. Most all the time is cooling, chilling and freezing time.

3 cups water
1 cup white wine
1 1/2 cups sugar
6 peaches, very ripe (about 2 1/2 pounds)
3 sprigs lemon basil
2 -3 tablespoons lemon juice

Steps:

  • Do not peel, but stone and quarter the peaches.
  • Bring the water, wine and sugar to a boil; add the peaches and reduce heat to low. Simmer peaches until cooked through, about 10 minutes. Allow to cool to room temperature.
  • Add the coarsely chopped basil. Cover and refrigerate over night.
  • Strain out fruit and basil. Reserve peaches for another use.
  • Add lemon juice to taste.
  • Freeze in shallow pan, stirring every half hour until frozen.

Cooking Light July 2008. Prep time does not include 8 hours freeze time...If you want you can serve it as a beverage...just skip the freeze and scraping step.

4 cups water
3 cups peach slices (about 3 medium)
1 1/3 cups sugar
6 mint leaves
1 1/3 cups fresh lime juice
3/4 cup rum
peach slices (optional)
fresh mint sprig (optional)

Steps:

  • Combine first 4 ingredients in a medium saucepan; bring to a boil. Reduce heat; summer for 5 minutes. Cool and discard mint.
  • Place half of peach mixture in a blender; process until smooth. Pour pureed peach mixture into a 9x13 inch baking dish. Combine remaining peach mixture, juice and rum in blender; process until smooth. Add to baking dish.
  • Freeze 8 hours or until firm. Remove mixture from freezer; scrape entire mixture with a fork until fluffy. Serve immediately. Garnish with peach slices and mint sprigs, if desired.

A budget beater light summery refreshing dessert from Recipe+ Have not including freezing time. TOP TIP - heat the tea mixture only until sugar dissolves, so it cools more quickly. You can use any metal pan to freeze the mixture, as long as the liquid is no more than 5cm deep. DIY IDEAS - Use any ice tea flavour. You can use fresh peaches instead of canned. It is best to make granita within 2 days of serving and flake just before serving.

2/3 cup caster sugar
825 g peach slices in juice (drained coarsely chopped)

Steps:

  • Combine tea and sugar in a medium saucepan over low heat and cook and stir for 2 minutes or until sugar dissolves.
  • Pour tea mixture into a 23cm (base measurement) square cake pan and cool and then freeze for 6 hours or until firm.
  • Spoon peaches into serving bowls - use a fork and scrape granita into flakes and spoon over peaches and serve at once.

450g peach , stoned weight (about 4), plus 1 peach to serve
zest and juice 1 lemon
125ml Asti, or another sweet sparkling wine
2 tbsp golden caster sugar

Steps:

  • Whizz the peaches in a blender with the lemon zest and juice, Asti and sugar. Pour into a shallow dish and freeze for 4-5 hrs, or until firm.
  • Scrape the mixture into flakes with a fork and serve with chunks of freshly cut peach.
