CHICKEN AND BARLEY SALAD
This wholesome chicken and barley salad is a little different, but very tasty. The pearl barley is chewy, nutty and full of nutrients, while the peanut dressing add some extra pizzazz!

Steps:
- MAKE DRESSINGCombine all dressing ingredients in a large jar and shake until smooth. Season to taste with salt and pepper.
- MARINATE CHICKENPlace chicken in a shallow dish and season with a little salt and pepper. Pour approximately half of the dressing over the chicken and leave to marinate. Reserve rest of dressing for salad.
- COOK BARLEYBring water to the boil in a medium-sized saucepan. Stir in stock powder and barley, cover with a lid and reduce heat to low. Cook for 40 minutes, until barley is tender.
- MAKE SALADMeanwhile, shred cabbage and finely slice spring onions. Core and thinly slice apple. Peel carrot and cut into matchsticks.
- TOAST SESAME SEEDS & COOK CHICKENHeat a large frying pan on medium-high. Add sesame seeds and cook for a couple of minutes, stirring, until toasted. Remove from pan and set aside. Add chicken to pan and cook for approximately 4 minutes each side, until browned and cooked through. Remove onto a board, cover with foil and leave to rest.
- SERVEDrain barley well. Divide salad greens between serving plates or bowls and top with cabbage, spring onions, apple and carrot. Spoon barley over the top. Add chicken, then drizzle with reserved dressing. Finish with a sprinkle of sesame seeds and cashews.

- Combine the barley, water and salt in a large saucepan and bring to a boil. Reduce the heat to a simmer and cover the pot. Cook for 35 to 50 minutes until the barley is tender. Let sit until cool. You can speed the cooling up by spreading the barley on a platter and putting it in the fridge.
- In a large bowl combine the cooked barley with the chopped vegetables and chicken.
- Combine all of the ingredients in a jar, seal tightly and shake until well combined.
- Stir the dressing into the salad.

CHICKEN AND BARLEY SALAD
I've just discovered barley (apart from boiled in soups) so am on the lookout for new recipes using it. This one comes from the Taste site and looks good! I've "estimated" 60 minutes prep including cooking the barley and chicken (at the same time!) and then called it a no cook recipe.

- Place barley in a bowl. Cover with warm water. Set aside for 30 minutes. Drain. Transfer to a large saucepan. Add 6 cups cold water. Bring to the boil over high heat. Reduce heat to low. Simmer for 25 to 30 minutes or until tender. Rinse under cold water. Drain. Transfer to a large bowl.
- Meanwhile, place chicken, peppercorns and brown onion in a large saucepan. Add 5 cups cold water. Partially cover. Bring to the boil over high heat. Reduce heat to low. Simmer for 5 to 7 minutes or until just cooked through. Remove from heat. Set aside for 5 minutes. Remove chicken from onion mixture. Set aside to cool slightly. Discard onion mixture. Shred chicken.
- Add chicken to barley. Add green onion, bell pepper strips, rocket and pine nuts. Season with pepper.
- Make dressing: Place lemon juice, oil, cumin and honey in a screw-top jar. Secure lid. Shake to combine. Pour over chicken mixture. Toss to combine. Serve.

- In a medium saucepan, combine the first 8 ingredients.
- Bring to a boil; lower heat, cover, and simmer 10 minutes.
- Transfer hot barley mixture to an ungreased 2-quart baking dish.
- Place the chicken on top of barley mixture.
- Sprinkle chicken with salt and pepper.
- Bake, covered, in a preheated 350° oven for 30-35 minutes or until barley is tender and chicken is no longer pink.

- To prepare salad, sprinkle chicken with 1/8 teaspoon salt.
- Heat 1 teaspoon oil in a nonstick skillet over medium-high heat.
- Add chicken; cook 2 minutes on each side or until browned.

- Roast chicken: heat oven to 450°F.
- Gently lift skin from breast and legs and season with salt and pepper: place some sliced garlic and fresh herbs under skin. Place remaining garlic and herbs in the cavity of the chicken.
- Place chicken on a rack in a large roasting pan. Pour chicken broth into the bottom of the pan. roast for 50 to 60 minutes.
- Make Barley Pilaf: Meanwhile, in a medium saucepan, over medium heat oil. Add onion, carrot and mushrooms and cook, stirring occasionally for 5 minutes. Add broth, barley, salt, pepper and nutmeg. Reduce heat to medium, cover and simmer for 15 minutes or until tender. Stirring occasionally. Add a few tablespoons water if mixture becomes too dry.
- Allow chicken to rest for 10 minutes. Remove skin, slice and serve with pilaf.
