This is a recipe a dear aunt passed on to me. I have made it many times. It is simple and easy to made parts of it in advance to save on time.

3 pounds butternut squash, halved and seeded
3 tablespoons vegetable oil
½ teaspoon salt
¼ cup unsalted butter
2 tablespoons minced garlic
¼ cup all-purpose flour
1 quart milk
salt and ground black pepper to taste
1 cup heavy cream
9 no-cook lasagna noodles
1 ⅓ cups finely grated Parmesan cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  • Brush the butternut squash halves with vegetable oil and season with salt. Roast in the preheated oven until golden and easily pierced with a knife, 45 to 50 minutes. Allow to cool for 15 to 20 minutes, then scoop the flesh into a bowl. Set aside.
  • Heat the butter in a large skillet over medium-low heat. Cook and stir garlic in the butter until softened. Stir in flour and cook for 3 minutes. Whisk in the milk until smooth. Bring to a simmer, and cook until thick, about 10 minutes, whisking occasionally. Stir in the butternut squash and season with salt and pepper. Sauce can be made 3 days ahead and refrigerated.
  • Reduce oven temperature to to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  • Beat the heavy cream until foamy in a large glass or metal mixing bowl. Gradually add the salt, continuing to beat until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the cream should curl over slightly. Set aside.
  • Pour 1 cup of the butternut sauce into the baking dish and place 3 lasagna noodles on top in a single layer. Spread half of the remaining sauce over the noodles and sprinkle with 1/2 cup of Parmesan cheese. Place another layer of noodles and spread the remaining sauce on top and sprinkle with 1/2 cup of Parmesan cheese. Place the final layer of noodles on top. Spread the whipped cream over the final layer of noodles making sure the pasta is completely covered. Sprinkle with the remaining 1/3 cup of Parmesan. Cover baking dish tightly with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until the top is bubbly and golden brown, about 10 minutes. Allow to rest for 5 minutes before serving.

1 medium butternut squash (about 3 pounds), peeled and cut crosswise into 1/4-inch slices
2 tablespoons olive oil
1 teaspoon salt, divided
6 tablespoons all-purpose flour
4 cups fat-free milk
6 garlic cloves, minced
1 tablespoon minced fresh rosemary
1-1/3 cups shredded Parmesan cheese

Steps:

  • Preheat oven to 425°. Cook noodles according to package directions; drain., In a large bowl, combine squash, oil and 1/2 teaspoon salt; toss to coat. Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake 10-15 minutes or until tender; remove from oven. Reduce heat to 375°., Place flour and remaining salt in a large saucepan; gradually whisk in milk. Bring to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened. Stir in garlic and rosemary., Spread 1 cup sauce into a 13x9-in. baking dish coated with cooking spray. Layer with three noodles, 1/3 cup cheese, a third of the squash and 1 cup sauce. 9 lasagna noodles

This recipe is from Gourmet magazine (slightly adapted). This makes about 12 small side servings or 6-8 main course servings. This lasagne is very rich so a smaller portion is usually desired.

3 lbs butternut squash (diced 1/2-inch cubes)
1 tablespoon olive oil
4 cups 2% low-fat milk
4 tablespoons dried rosemary, crumbled
4 minced garlic cloves
1/4 cup butter
4 tablespoons whole wheat flour
9 lasagna noodles (no boil is fine)
1 1/3 cups parmesan cheese (grated)
1 cup heavy cream

Steps:

  • Preheat oven to 450°F and oil a shallow baking pan(s).
  • Toss the squash with the oil until it is coated well and spread in one layer in pan(s). Roast the squash in the oven for about 10 minutes and season with sea salt. Stir squash and roast 10 minutes more, or until tender and beginning to turn golden.
  • While the squash is roasting, in a saucepan bring 2% milk to a simmer with rosemary. Heat milk mixture over low heat 10 minutes and pour into a bowl to set aside.
  • In a large heavy saucepan cook the garlic in butter over moderately low heat, stirring, until softened. Stir in whole wheat flour and cook the roux, stirring, for a few minutes. Remove the pan from the heat and whisk in milk mixture until smooth. Return the pan to heat and simmer sauce, whisking occasionally, about 10 minutes, or until thick. Stir in squash and salt and pepper to taste.
  • Reduce oven temperature to 375°F and spray a baking dish, (13x9x2).
  • Pour 1 cup sauce into baking dish and cover with 3 lasagne sheets, making sure they do not touch each other. Spread half of remaining sauce over pasta and sprinkle with 1/2 cup Parmesan. Make 1 more layer in same manner, beginning and ending with pasta.
  • Beat the cream with salt until it holds soft peaks and spread evenly over top pasta layer, making sure pasta is completely covered. Sprinkle remaining 1/3 cup Parmesan over cream. Cover dish tightly with foil, tenting slightly to prevent foil from touching top layer, and bake in middle of oven 30 minutes. 2 large butternut squash, about 3 to 5 pounds
3 tablespoons extra-virgin olive oil
1 tablespoon finely chopped fresh sage leaves
1 tablespoon Fennel and Cinnamon Spice Blend, recipe follows
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon freshly grated nutmeg
2 cups ricotta cheese (or a 15-ounce container)
1 cup freshly grated Parmesan
2 large eggs
1 pound dried lasagna sheets (about 24 sheets), each 6 1/2 by 3 inches
Extra-virgin olive oil
2 quarts whole milk
6 tablespoons unsalted butter
1 tablespoon sage, minced
2 teaspoons minced garlic
1/2 cup all-purpose flour
2 teaspoons salt
Freshly ground black pepper
1/2 teaspoon freshly grated nutmeg
Butter, for dish
1 pound mozzarella, grated
1 cup freshly grated Parmesan
3 tablespoons fennel seeds
2 teaspoons ground cinnamon

Steps:

  • To assemble the lasagna:
  • Preheat the oven to 400 degrees F.
  • Using a vegetable peeler, remove the squash's hard shell. Trim about 1/2-inch off the top and bottom ends so you can set each section of the squash flat on a cutting board. Cut the squash in half lengthwise. Scoop the seeds out with a spoon, and coarsely chop the squash into 1/2-inch chunks. Line a baking sheet with aluminum foil. In a bowl, toss the squash with the oil, sage, spice blend, and 1 teaspoon salt and fresh ground pepper. Spread the squash in a single layer on the baking sheet. Roast the squash in the oven until very soft and beginning to brown, 40 to 50 minutes, stirring once or twice. Remove the squash from the oven and puree in a food processor with fresh nutmeg.
  • In a large bowl, mix the squash puree, ricotta, Parmesan, eggs, 1 teaspoon salt, and 1/2 teaspoon pepper. Cover and refrigerate the mixture until ready to use.
  • In a large pot of boiling, salted water, cook the lasagna sheets until al dente. Drain the sheets and spread them on a baking sheet. Drizzle them lightly with oil and set aside.
  • Prepare the sauce: In a large saucepan, bring the milk to a slow simmer over medium heat. In a large pot, melt the butter over medium-low heat. Add the sage and garlic to the butter, cook for 30 seconds, then add the flour and stir. Add about 3 cups of the milk, and whisk vigorously to prevent lumps. Bring to a boil, while whisking continuously. Add the remaining milk and whisk again. Add the salt, pepper, and nutmeg. Adjust the heat to low to maintain a slow simmer, and cook until the sauce coats the back of a spoon, about 5 minutes, whisking frequently. Remove the saucepan from the heat. Makes about 8 cups.
  • Preheat the oven to 375 degrees F.
  • Butter a 9 by 13-inch baking dish. Spoon a ladle of bechamel into the dish and spread to coat the bottom. Place a single layer of lasagna sheets on top of the bechamel. Spread some of the squash mixture evenly over the lasagna sheets and sprinkle about 2 tablespoons of mozzarella cheese and 1 tablespoon of grated Parmesan on top. Repeat this step until all ingredients are used, starting with 2 to 3 ladles of bechamel for each layer. Keep building the layers until the pan is full to about 1/4-inch from the top. Finish with cheese and sauce directly over the noodles. Bake in the middle of the oven for about 1 hour. Remove the cover, and continue cooking for another 15 minutes until golden brown and bubbling. Allow lasagna to rest before slicing. Serve warm.
  • Grind fennel with mortar and pestle. Add the cinnamon and salt and continue grinding. Or grind in spice grinder for a rough grind.

9 sheets dry no-boil lasagna noodles (7x3 1/2 inch)

  • Preheat oven to 450°F and oil 2 large shallow baking pans.

Making the perfect butternut squash lasagna at home is easier than you might think. Follow these easy steps and discover how to make butternut squash lasagna in your own kitchen.

9 ounces no boil lasagna noodles ((we used gluten-free))
1 medium butternut squash
1 tablespoon olive oil
2 teaspoons salt (divided)
1/2 cup unsalted butter or vegan butter
3 teaspoons chopped sage
1 tablespoon fresh chopped rosemary
4 cloves garlic (minced)
1/4 cup all purpose flour or your favorite 1:1 gluten free flour blend
1 1/2 cups whole milk or full fat canned coconut milk (shaken)
1.5 cups vegetable broth
3/4 cup gruyere or fontina cheese ((can sub nutritional yeast))
3 cups ricotta ((sub vegan ricotta like Kyte Hill))
6 cups fresh spinach or 1 package frozen spinach (thawed and patted dry)
2 cups provolone (optional)

Steps:

  • Preheat the oven to 375°F. Peel the squash with a vegetable peeler then use a sharp knife to slice it in half lengthwise. Scoop the seedy centers out using a spoon then slice and dice the squash into cubes.
  • Spread the squash out evenly onto a large baking pan, drizzle with olive oil and sprinkle with 1 teaspoon of salt. Roast in the preheated oven for 25-30 minutes, or until the squash is fork-tender.
  • Melt the butter (or vegan butter) in a medium saucepan over medium heat. Add the fresh herbs and garlic and cook for 1-2 minutes.
  • Sprinkle the flour (or gluten free 1:1 flour) on top and whisk to create a thick mixture. Pour the milk into the pan and stir to mix it well with the flour paste. Turn the heat up to medium-high and allow to simmer and thicken for 1-2 minutes. Next, add the vegetable broth and stir well then add the remaining salt and shredded cheese (if using) and stir until the cheese is melted. Skip this step if you aren't using cheese.
  • Once it's melted, add the spinach and stir to wilt.
  • When the squash is done roasting, carefully transfer it to a medium bowl and mash it with a potato masher or the back of a fork. Add the ricotta cheese to it and stir well until combined. Set it aside to assemble the lasagna.
  • Spray a large 9x13 inch baking dish with non stick cooking spray. Use the back of a serving spoon to spread a small amount of the spinach and cream mixture to the bottom of the pan and spread it evenly to all four edges.
  • Next, lay the no-boil lasagna noodles on top in an even layer. Spoon the butternut squash and ricotta mixture on top of the noodles and spread gently with the back of a spoon. Add more spinach cream sauce on top then top with shredded provolone if using. Repeat the process with noodles, butternut squash, spinach sauce and provolone until you've run out. Finish with shredded provolone on top if using.
  • Bake in the oven at 375°F for 45 minutes or until it's heated all the way through and the top layer is melted and browned. Start checking for doneness around 35 minutes and tent with foil if it's getting too dark. Allow it to rest for 15-20 minutes before serving.

Unsalted butter, for the baking dish
1 cup grated fontina cheese (about 4 ounces)
1 cup grated low-moisture mozzarella cheese (about 4 ounces)

Steps:

  • Make the vegetables: Preheat the oven to 425 degrees F. Toss the squash with 1 tablespoon olive oil on a baking sheet; season with salt. 2 cups cubed butternut squash
6-10 cloves garlic
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh rosemary
crushed red pepper flakes
kosher salt and black pepper
8 slices prosciutto
1/2 cup ricotta cheese
1 pound long or short cut pasta
2 tablespoons salted butter
1 tablespoon fresh chopped sage
1/2 cup shredded gouda cheese
1/3 cup grated parmesan cheese

Steps:

  • 1. Preheat oven to 400° F. 2. On a baking sheet, toss together the olive oil, butternut squash, garlic, thyme, 1 tablespoon rosemary, and a pinch each of red pepper flakes, salt, and pepper. Arrange the prosciutto around the squash. Bake 20 minutes, check the prosciutto, then bake another 10-15 minutes, until the squash is tender. 3. Add the butternut squash, garlic, and ricotta to a food processor. Puree until smooth. Season with salt and pepper. 4. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Just before draining, remove 1 cup of the pasta cooking water. Drain.5. In a large skillet, melt together the butter, sage, and 1 tablespoon rosemary. Cook until the butter is browning, then add the butternut puree and 1/2 cup pasta cooking water, stirring until combined. Melt in the gouda and parmesan. 6. 3 pounds butternut squash, quartered, seeded, peeled, and cut into 1/2-inch dice (about 8 cups of cubed squash)
3 tablespoons grapeseed or olive oil
4 cups milk, 2% or whole
a few sprigs fresh rosemary and sage
1 tablespoon minced garlic
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
nine 7- by 3 1/2-inch sheets dry no-boil lasagne pasta (I use Barilla brand)
1 1/3 cups freshly grated Parmesan
1 cup heavy cream
1/2 teaspoon salt

Steps:

  • Preheat oven to 450°F. Spread the squash onto 1 extra-large sheet pan or 2 standard-sized sheet pans. Toss with 2 tablespoons of oil if using the large pan or 1 tablespoon each if using the smaller sheet pans. Season with salt and toss to coat. Transfer to the oven and cook for about 30 minutes, tossing halfway, until the squash is tender and beginning to turn golden.
  • While squash is roasting, in a saucepan bring milk to a simmer with the rosemary and sage sprigs. Heat milk mixture over low heat for 10 minutes and pour through a sieve into a large pitcher or measuring cup.
  • In a large heavy saucepan cook garlic in butter over moderately low heat, stirring, until softened. Stir in flour and cook the roux, stirring often, for about 3 minutes. Remove pan from heat and whisk in milk mixture in a stream until smooth. Return pan to heat and simmer sauce, whisking occasionally, about 10 minutes, or until thick. Stir in the squash and salt and pepper to taste. Sauce may be made 3 days ahead and chilled, its surface covered with plastic wrap.
  • Reduce temperature to 375°F and butter a 9×13-inch baking dish. UPDATE: Because sometimes no-boil noodles do not expand as well as expected, you can quickly soak them in hot water. If you've never had trouble with your no-boil noodles, don't worry about this step. If you have, I think you'll find this step makes a difference: Bring a small pot of water to a boil or fill a teapot with water and bring it to a boil. Pour the water into a small vessel such as a 9-inch baking. When you are ready to assemble, dunk three of the sheets into the hot water and let soak. Begin the assembly:
  • Pour 1 cup sauce into baking dish (sauce will not cover the bottom completely) and cover with 3 lasagna sheets, making sure they do not touch each other - use tongs to extract the noodles from the hot water. After you transfer the three noodles to the baking dish, soak three more sheets of noodles. Spread half of the remaining sauce (it's about 2 cups) over the noodles and sprinkle with 1/2 cup parmesan. Top with three more noodles; then soak the final three noodles in the hot water bath. Spread the remaining sauce mixture over the noodles and top with 1/2 cup parmesan. Top with the final layer of noodles.
  • In a bowl with an electric mixer (or by hand) beat cream with salt until it holds soft peaks and spread evenly over the top pasta layer, making sure pasta is completely covered. Sprinkle remaining 1/3 cup Parmesan over cream. Cover dish tightly with foil, tenting slightly to prevent foil from touching top layer, and bake in middle of oven 30 minutes. Remove foil and bake lasagna 10 to 20 minutes more, or until top is bubbling and golden. Let lasagna stand 5 minutes before cutting and serving.

1 lb Organic lasagna pasta or gluten free lasagna or grain free lasagna pasta (cooked following packaging instructions)
2 lbs Large butternut squash with large long neck, about 2 pounds
2 cups Almond ricotta (Our Recipe Link)
4 cups Thin julienne yellow onions
6 cups Rinsed fresh spinach
¼ cup Vegan butter
1 cup Bundle of sage leaves, stems removed
1 cup Small dice yellow onion
2 tsp Minced garlic
2 tsp Minced basil
2 tsp Extra Virgin Olive Oil
2 tbsp Stems with leaves of rosemary
2 tbsp Stems with leaves of thyme
2 cups Stewed organic tomatoes
½ cup Tomato paste
1 cup Red wine
¼ cup Red wine vinegar
1 cup Cooked butternut squash meat, removed from bulb, rough chop
½ cup Nutritional yeast
Salt and pepper to taste

Steps:

  • Directions
  • Preheat oven to 350°
  • Fill a large stock pot with boiling salted water.
  • Peel neck of butternut squash with potato peeler. Remove the neck from the bulb. Cut the neck in half lengthwise and slice into thin half moons 1/4 inch thick. The bulb should then be sliced in half, remove seeds and drizzle cut side with 1 tablespoon of olive oil sprinkle with salt and pepper. Let roast cut side up for 1 hour until meat is tender. Let cool slightly so you can touch and remove meat from the skin, rough chop the meat and save for the marinara.
  • While the bulb is cooking blanch the butternut squash necks in boiling salted water for 3 minutes until tender. Place in a large bowl with salt and ice water to stop cooking of squash.
  • In a large saute pan add butter and onions and on medium heat let caramelize for 20-25 minutes stirring often. Add salt to taste. The onions should turn golden to reach full caramelizing. Add Spinach and sauté for 5-8 minutes until all spinach is cooked down. Drain off any liquid and reserve into a bowl for lasagna assembly.
  • In a large sauce pot on medium high heat add 1 tablespoon of olive oil, rosemary and thyme stems with leaves and sauté in oil for 1-2 minutes. Add onions and sauté for 5-10 minutes until glistening. Remove thyme and rosemary stems and add minced garlic and sauté for 1-2 minutes. Add remaining ingredients except the vinegar and nutritional yeast. Bring pot of marinara to boil and reduce to a simmer on medium heat for 20 minutes stirring occasionally. Taste for seasoning and add salt and pepper. Use a hand held immersion blender to smooth marinara this will bring the color more orange with the blended butternut squash. Add a splash of red wine vinegar for seasoning and nutritional yeast for seasoning.
  • In a large 9x13 pyrex pour marinara on bottom of the dish a thin layer. Then spread lasagna pasta evenly in one layer. Spread half the ricotta on pasta and lay the half moons of butternut squash on top of ricotta.
  • Lay the next layer of pasta and spread all spinach and onion mixture. Lay the next layer of pasta and do the 2nd half of ricotta and butternut squash half moons. Lay the last layer of pasta on top of butternut and pour generously with marinara. Place sage leaves on top of marinara.
  • When ready to eat, roast in oven at 350° for 35-45 minutes. Enjoy with a glass of Sangiovese wine and admire your hard work!
