ROASTED BUTTERNUT AND BUFFALO MOZZARELLA PASTA BAKE
Creamy penne pasta bake studded with cubes of sweet, roasted butternut squash and chunks of buffalo mozzarella, flavored with fresh thyme.

Steps:
- Pre-heat the oven to 200°c and line a baking sheet with foil.
- Combine the butternut squash with the oil, honey, thyme and seasoning then transfer to the baking sheet. Spread the butternut out into a single layer then place in the oven.
- Allow to roast for 30 minutes or until the butternut is soft and starting to caramelise.
- Remove from the oven and set aside.
- In the meantime, melt the butter in a saucepan and whisk in the flour. Slowly whisk in the milk until it has all been absorbed, add the bay leaf then turn down the heat and allow to simmer, whilst stirring regularly, until the sauce is cooked through.
- Add the nutmeg and season to taste.
- Combine the cooked pasta and bechamel sauce, adding a little of that pasta's cooking water if the mixture seems too thick, then stir in the roasted butternut and chunks of mozzarella. Top with fresh thyme sprigs, if using.
- Transfer to a baking dish then place in the oven.
- Allow to bake for 10-15 minutes until the top is golden and bubbling and the mozzarella has melted.
- Remove from the oven then allow to rest for 5-10 minutes before serving.
BUTTERNUT SQUASH AND PANCETTA BAKED PASTA WITH FRESH MOZZARELLA

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Toss the squash with 2 tablespoons of the oil and 1/4 teaspoon each salt and black pepper on a rimmed baking sheet. Bake, stirring once or twice, until golden brown and tender, 12 to 15 minutes. Set aside.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil and season with salt and black pepper.
- Meanwhile, heat the remaining 1 tablespoon oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl with a slotted spoon.
- Cook the fusilli in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, butternut squash, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

- Preheat oven to 400°F (200°C).
- Add butternut squash and onion to a parchment paper-lined baking sheet, and season with olive oil, salt, pepper, and nutmeg.
- Roast for 25-30 minutes, or until tender.
- Add roasted squash and onion to a food processor or blender. Add vegetable broth, almond milk, and blend until smooth.
- In a large sauce pot over medium heat, add olive oil, garlic, red pepper flakes, and sage. Cook for about 1 minute, or until fragrant. Add squash puree and bring to a simmer, stirring occasionally.
- Add cooked pasta and steamed broccoli and stir to combine.
- Top with Parmesan, and serve.

- Preheat the oven to 375 degrees F.
- Cook the pasta in boiling water to not quite al dente according to the package directions. Drain and transfer to a casserole dish.
- Add the olive oil to a large pot over medium-high heat. When the oil is hot, add the onion and cook for a minute or so to slightly soften. Add the butternut squash and season with salt and pepper. Pour in the stock, bring to a boil, reduce to a simmer and cook until the squash has softened, about 5 minutes. Puree in the pot with an immersion blender.
- Stir the squash mixture into the casserole dish with the pasta, then mix in the peas, red pepper and goat cheese. Cover the pasta mixture with the grated cauliflower, then season with salt and pepper. Top with the mozzarella, Parmesan and half the parsley.
- Bake until the casserole is browned and bubbling, 40 to 45 minutes. Sprinkle with the remaining parsley.

- In a small bowl, mix together 1/4 teaspoon salt, rosemary, and pepper.
- Lay the squash out on a foil-lined baking sheet coated with cooking spray; sprinkle with salt mixture.
- Bake in a 425° oven for 45 minutes or until tender and lightly browned.
- Remove squash from oven and increase oven temp to 450°.
- Cook bacon in a large nonstick skillet over medium heat until crisp.

- Preheat oven to 375ºF. Coat a baking sheet with cooking spray. Coat a 2 1/2- to 3-quart baking dish with cooking spray.
- Place squash on prepared baking sheet; roast until tender, about 20 to 30 minutes. Place in a large bowl and mash.
