MOLDOVAN CHICKPEA PUDDING

Moldovan Chickpea Pudding image

This dish was described to me by a user at RecipeZaar, and after much thorough searching and being unable to find anything resembling it, I decided to go ahead and make it on my own. She said, "My grandmother, from near Kishinev (now Moldova), occasionally made a sweet mashed garbanzo dish when I was very young... It was mildly sweet and could have had a small amount of cinnamon. The texture was like refried beans. There were no eggs, and it wasn't a dessert. It could actually have been for breakfast." The below is how I made it, and it's absolutely delicious! I've tried it both cold and warm, and it's excellent both ways. It would make a great breakfast, or a nice snack. Give it a try!

Categories     Breakfast

Time 5m

Yield 1 cup pudding, 1 serving(s)

Number Of Ingredients 4

1 cup precooked chickpeas (cold or warm, your choice) or 1 cup garbanzo beans (cold or warm, your choice)
1 tablespoon honey
2 tablespoons plain yogurt or 2 tablespoons sour cream
1/4 teaspoon cinnamon (I used Ceylon cinnamon, from Penzey's, which is less sharp than "regular" cinnamon)

Steps:

  • Place all ingredients in a food processor and whir until preferred texture is achieved, occasionally scraping down the sides.
  • Eat and enjoy!
  • Note: the texture I was able to get it to was still slightly chunky, unlike very smooth refried beans. Perhaps it was from using cold garbanzos from the fridge, or perhaps I simply could have processed it longer. In any case, I enjoyed it at the texture which was not completely smooth. Using a food mill would probably enable a smoother texture.
  • Note #2: one person who has made and enjoyed it pointed out that it would be good as a dipper for fruits, or on bagels. Great idea! :).

  • Mămăligă cu Brânză și Smântână (Polenta with a Brined Cheese and Sour Cream) Beyond any doubt, mămăligă is the best-known Moldovan dish. It’s the same recipe used in neighboring Romania, and a lot similar to Italian polenta.
  • Sarmale or Chiroște (Stuffed Cabbage Rolls) Sarmale or stuffed cabbage rolls are an irreplaceable part of every party and celebration here in Moldova.
  • Colțunași cu Brânză (Cheese Dumplings) This is one of the most popular dishes in Moldova. It’s a win-win for each guest, as the dumplings can be filled with a wide range of ingredients: chopped meat, mashed potatoes, dill seasoned cheese, sweet-sour cherries, plum jam, etc.
  • Zeama (Chicken Noodle Soup) Let’s mix up our “hearty” food list with a healthy and light soup called zeama. It is certainly a chicken soup but zeama has its own unique and specific taste.
  • Plăcinte (Moldovan Pies) Everybody loves these Moldovan pies: from our youngest to our oldest. That’s why you can find them everywhere. There are a lot of restaurants and shops offering freshly baked plăcinte.
  • Salată de Boeuf (Beef Salad) This is the first dish this list of Moldovan food that isn’t served with sour cream. Congratulations! People often serve this salad on special occasions such as Christmas or Easter.
  • Răcitura (Meat Jelly) The world is basically divided into two: those who adore this meat jelly and those who have no stomach for it. However, it’s definitely worth tasting!
  • Ardei Umpluți or Chiperi Umpluți (Stuffed Bell Peppers) Stuffed bell peppers consist of the same ingredients as stuffed cabbage rolls: rice, vegetables, and meat.
  • Chiftele cu Piure (Meatballs with Mashed Potatoes) Flat, round meatballs are usually made from minced pork, though they can also be made with chicken or beef, and mixed with spices.
  • Pilaf (Rice Dish) This rice dish is often served as a complement to chiftele (fortunately, you already know what an exceptional meat dish chiftele is).
