1 lb broccoli florets ((cut into small to medium sized spears))
2 Tbsp olive oil ((extra virgin))
2 Tbsp garlic ((minced or whole roasted cloves))
1/4 cup Parmesan cheese ((finely grated or shredded - plus more for garnish when serving, if desired))
each, salt & pepper ((to taste))

Steps:

  • Preheat your oven to 425 degrees F (218 degrees C) and line a baking sheet with parchment paper.
  • Place your broccoli florets and garlic in a large bowl, then drizzle with olive oil. Toss to coat lightly and evenly, then spread out over your baking sheet. Season with salt and pepper, then sprinkle or top with freshly grated Parmesan cheese.
  • Roast your broccoli in the oven for about 20-25 minutes depending on how well browned you would like your broccoli. Serve immediately, topped with additional Parmesan (optional).

4 cloves garlic (minced)
1/4 cup freshly grated parmesan
1 lemon (juiced)
salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degrees.
  • Remove the individual florets from the head of broccoli and cut them into bite-sized pieces.
  • On a baking sheet, toss the broccoli florets in olive oil and minced garlic and season with salt and pepper. Spread them out into an even layer on the baking sheet.
  • Bake in the oven for 20 minutes, or until edges are crispy and slightly browned.
  • Garnish with freshly shaved parmesan and a squeeze of lemon. Serve immediately.

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.
