ROASTED BEET AND GOAT CHEESE SALAD WITH PEARS
Fried goat cheese rounds are a special touch in this salad of contrasts. All other salad components can be prepared ahead and stored separately until serving time.

- Beets: 1. Preheat oven to 400°F. 2. Drizzle beets with evoo, sprinkle with kosher salt, and wrap in foil. Roast beets in a 400°F oven for 1 hour, or until a knife easily pierces beets without any resistance. Cool beets, scrape off peel, and slice into ½-inch slices. Goat Cheese Medallions: 1. Using unflavored floss (or thin kitchen string), gently prepare thin slices of goat cheese by holding the floss ends in each hand and slicing downwards through the goat cheese with the floss. 2. Carefully dredge each slice in beaten egg, then flavored bread or panko crumbs. Transfer breaded cheese rounds to wax paper until ready to fry. 3. Heat canola oil in a large frying pan over medium-high heat. When oil is hot and shimmering, fry cheese rounds until golden brown, turning once - about 2 minutes per side. 4. Transfer to a plate lined with paper towels to drain. Meyer Lemon-Honey Dressing: 1. Combine all ingredients except oil in a small mixing bowl. Whisk to blend. Continue to whisk while slowly pouring in a stream of oil. Whisk until well blended and emulsified. 2. Season to taste with more salt and pepper as needed. Assembly: 1. Toss baby spinach leaves with about half the dressing in a large mixing bowl until lightly coated with dressing. 2. Divide greens among salad plates; arrange sliced beets and pears in an alternating pattern around the perimeter of the plate, then add a sprinkling of minced red onion. Drizzle a little more dressing over salad. 3. Place 1 to 2 goat cheese rounds in the center of the beets and pears. BEET SALAD WITH GOAT CHEESE
This is a delicious and easy salad which takes little time and is a great meatless main course. It uses beets, goat cheese, candied walnuts and baby greens. For a main dish salad, add chicken. Feel free to include more of your favorite vegetables too.

- Place beets into a saucepan, and fill with enough water to cover. Bring to a boil, then cook for 20 to 30 minutes, until tender. Drain and cool, then cut in to cubes.
- While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
- In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing.
- Place a large helping of baby greens onto each of four salad plates, divide candied walnuts equally and sprinkle over the greens. Place equal amounts of beets over the greens, and top with dabs of goat cheese. Drizzle each plate with some of the dressing.

ROASTED BEET AND GOAT CHEESE SALAD

- Preheat the oven to 400 degrees F.
- Spread the beets on a baking sheet. In a bowl, whisk together the olive oil, vinegar, rosemary and some salt and pepper. Reserve one-quarter of the dressing for the salad and pour the rest over the beets. Roast until the beets are tender, 45 to 50 minutes.
- While the beets are cooking, heat 1/4 inch of vegetable oil in a large skillet over medium heat.
- Put the flour, eggs and breadcrumbs in separate shallow bowls. Coat the goat cheese slices first in the flour, then in the egg, then in the breadcrumbs. Fry the slices until golden brown, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
- Whisk the mustard and sugar into the reserved dressing, then pour over the greens in a large bowl and toss to coat. Divide the greens among 6 plates, add the beets on top and place 2 fried goat cheese slices on top.
ROASTED BEET SALAD

- Place a rack in the center of the oven and preheat the oven to 425 degree F.
- For the roasted beets: Place the beets in a sheet of foil and place another sheet on top and create a seal around the beet. Roast the beets on a baking sheet until tender, 45 minutes to 1 hour. Cool the beets in their foil packet for a few minutes, and then rub off the skins using a paring knife if needed. The beets need to still be a little warm to be able to remove the skins easily.
- While the beets are roasting, toast the almonds in a small skillet over moderate heat, stirring occasionally, until golden brown. Remove and cool.
- For the vinaigrette: Make the vinaigrette by stirring together the vinegar, mustard, salt and sugar, and then slowly whisk in the olive oil until emulsified.
- Slice the cooled and peeled beets into 1/4-inch thick slices and add half the vinaigrette, tossing to coat completely. Toss the remaining vinaigrette with the salad greens.
- Quarter and core the pear and slice it into julienne strips, about 1/8-inch thick.
- Arrange the dressed greens, and beets on a platter and top with the pear, toasted nuts, and goat cheese.
ROASTED BEET SALAD WITH PEARS AND MARCONA ALMONDS

- Preheat the oven to 375 degrees F.
- Place the beets on a sheet tray and roast until fork tender, about an hour. Remove and let cool.
- Using a paring knife, peel the beets. Grate the beets and the pears on the largest holes of a box grater. Toss them with the balsamic, olive oil and salt.
- Divide the arugula between 4 salad plates, spoon some of the beet-pear mixture onto the arugula and top with the chopped almonds and chives. Serve immediately.

- In a small skillet, dry roasted pecans over medium heat for 1 to 5 minutes; stirring frequently. Finely chop.
- Meanwhile, arrange ½ cup salad greens on each of eight plates; set aside.
- Cut pears in half lengthwise. With a melon baler, remove seeds and make a small, round cavity in each pear half.
- Cut cheese into eight pieces; shape each into a ball. Roll in pecans and place one in each pear cavity. Arrange pears on lettuce.
- Pour vinegar into a small bowl; add sugar, whisking until dissolved.
- Add oil in a fine stream, whisking constantly until smooth. Drizzle evenly over pears; sprinkle with any remaining pecans.

APPLE PEAR PUREE, ROASTED BEETS & WALNUT HERB GOAT CHEESE
This is one of my favorite salads to make for the Holidays. The sweetness of the apples and pears offset the tangy flavor of the beets and goat cheese. This is really pretty and is just a perfect starter salad. And not just for the Holidays but any dinner party. This is just one of my favorites

- Beets -- Start those first as they take the longest. This can easily be done the day ahead. Simply cut off most of the greens and wash well. Put the red beets on one sheet of foil and the yellow on another. Drizzle both with olive oil, salt and pepper and fold up the foil to make a little pouch. Roast in a 425 degree oven for approximately 45-60 minutes depending on their size - 45 minutes for small beets and 60 minutes for large beets. Once done, remove from the foil and just let cool. At this point, I like to peel the beets by just rubbing off the skin and then I put the whole beet in a plastic baggie until I am ready to slice and use it in my salad. Your fingers will get red, so you can use a rubber gloves if you want. If not -- after peeling your beets, just put a couple of drops of clorox or bleach on your hands as you wash them and it comes right off.
- Apples and Pears -- In a medium sauce pan, add the apples, pears, cinnamon stick and wine. Bring to a boil and reduce to a simmer and cook until tender. NOT mushy, just fork tender, this can take 5-10 minutes. Strain the fruit, remove the cinnamon stick and reserve some of the wine to thin out the puree if necessary. Transfer to a blender and pulse to make a nice thick sauce. You want this to be the consistency of thick gravy. Refrigerate until ready to use. This is a chilled sauce, not served warm.
- Cheese -- Now I cut mine with dental floss. I put mine in the freezer for just 15 minutes to make it easier to cut. Take a strand of dental flow and make 8 slices. Then take each slice and lightly dip the top and bottom into the nut mixture.
- Building the salad -- First slice your beets. You will need 8 slices of red beets and 4 slices of the yellow. On a nice serving plate, add some of the apple pear puree, then 1 red beet slice, then a slice of cheese, a yellow beet slice, another slice of cheese, then top with another red beet. Drizzle a little pear puree over the top and if you want to get fancy a couple of thin slices of apple or pear or maybe a little fresh sprig of thyme. The salad is so pretty as is. It is an absolutely great beginning to a dinner.

ROASTED BEET, PEAR AND FETA SALAD
I cut this salad recipe out of a weekly local newspaper the other day and haven't had the chance to test it. I would like to try golden beets for the red beets. If you cannot find mache (lamb's lettuce), substitute butter lettuce or fresh mixed greens. Serve with crusty French bread!

- Prepare dressing and set aside.
- Preheat oven to 400 degrees. Individually wrap the beets in aluminum foil and roast for about 1 hour, or until tender when pricked with fork. Allow cooked beets to cool then cut into 1/4" slices.
- Gently toss the beets in a large salad bowl with the mache, red leaf lettuce, pears and feta. Garnish top with the toasted almonds.
- Serve dressing on side.
- NOTE: I guessed the yield.
