BANANA ICE CREAM SUNDAE
Don't let the name fool you; this "sundae" is actually a healthy serving of fruit in a bowl. Frozen bananas are pulsed in a food processor until they're creamy like ice cream and then topped with more fruit, nuts and coconut. You can shamelessly eat this for breakfast or even as a recovery snack after a big run - your body will thank you for the extra energy and potassium.

- Cut each banana into 6 chunks and freeze until rock-solid, preferably overnight.
- Make the ice cream: Put the banana chunks in a food processor and process. (Hang on, your food processor may jolt in the very beginning!) The bananas will look crumbly at first, then gooey and eventually light and creamy, just like ice cream. Stop the food processor frequently to scrape down the sides of the bowl and break up any clumps. Serve right away or scrape into a container and freeze until ready to serve.
- Make the sundae: Mash the raspberries and maple syrup together in a small bowl with a fork until saucy. Scoop the banana ice cream into a dish and top with the raspberry sauce, blueberries, pistachios, coconut, chocolate chips and a dollop of Greek yogurt.
BANANA PUDDING ICE CREAM SUNDAES
Steps:
- Place frozen banana chunks in a high-powered blender or food processor and begin to process on low. (It will look grainy.) Turn off machine and use a rubber spatula to scrape down the sides. Continue processing until bananas get creamy and increase in volume, scraping down the sides as necessary. Remove to a bowl. Slowly fold in 1 cup whipped topping and 1/2 cup vanilla wafers. Transfer to 4 dishes and top each with additional whipped topping, vanilla wafers and sliced banana.

This is no fuss refreshing dessert that looks as delicious as it tastes. It can be made ahead of time and keeps in the freezer for up to 2 months. I hate heating up my kitchen in the summer with oven baking and this recipe is no bake, loved and always requested for gatherings.

- In a 13x9 dish, starting with short side, place 12 ice cream sandwiches inside dish to cover bottom of dish, cutting sandwiches to fit.
- Add banana slices to cover sandwiches.
- Add both strawberry and pineapple sauce to cover banana layer; spread with spatula to combine and cover.
- Butterscotch, hot fudge and caramel sauces: warm if needed to thin out for drizzling. Drizzle each sauce on top of dessert (keep in mind, you should have half of each jar left when you finish this dessert -- perfect for another dessert later!).
- Add half of your cool whip; spread to cover.
- Place remaining 12 ice cream sandwiches next, again cutting sandwiches to fit.
- Add the rest of cool whip; spread to cover.
- Finish off by topping with the drizzle of more hot fudge, butterscotch, caramel sauce; cherries and chopped peanuts.
- Cover with pan lid or aluminum foil; freeze for at least 4 hours prior to serving.
- When serving, remove from freezer and let sit 20 minutes at room temp before cutting into serving squares.

A quick and easy dessert recipe I came up with when I had a few not-so-ripe bananas on my hand. You can play around with different ice cream flavors if you like. For more of a "s'more" flavor, add marshmallows to the packets for the last 2 minutes and top with graham cracker crumbs instead of coconut!

- Preheat oven to 400 degrees F.
- Tear off 4 medium-size squares of aluminum foil.
- Place 1 banana on each foil square.
- Sprinkle sugar and cinnamon over bananas. Top with chocolate syrup.
- Fold square over and fold edges to form a packet.
- Roast in oven on cookie sheet or oven rack for 12-15 minutes.
- Place coconut on baking sheet and place in oven. Stir every 45-60 sec. until lightly browned.
- Remove foil packets from oven and open. Cut bananas into pieces and spoon onto ice cream in dishes. Top with toasted coconut.
