- Preheat an oven to 425 degrees F (220 degrees C).
- Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer.
- Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness. Sprinkle with lemon juice just before serving.

THE BEST ROASTED ASPARAGUS
The perfect roasted asparagus should be lightly browned and tender, yet bright green and crisp. Roasting the spears at a high temperature helps achieve this. We also browned grated Parmesan to make a nutty, crumbly frico topping. Wait until ready to serve to top the vegetables so the crisped cheese stays crunchy.

- Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
- Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
- Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
- Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.
OVEN-ROASTED ASPARAGUS

- Scatter the asparagus and lemon slices on a baking sheet in a single layer. Toss with the olive oil and sprinkle generously with salt and pepper.
- Roast until the asparagus are starting to brown a bit but are still crisp, 6 to 8 minutes. Serve with or without the lemon slices.

PERFECTLY COOKED ROASTED ASPARAGUS
This is the quickest, easiest side dish I've ever made! It's so good and is cooked PERFECTLY! Depending on what I'm serving it with, I might add Parmesan, fresh-squeezed lemon juice, and/or balsamic vinegar over top just before serving. It's perfect as is, though. I imagine some sort of Dijon sauce would be delightful as well, though I have yet to try that. The amount of olive oil in my list of ingredients is approximate (I just eyeball the amount).

- Preheat oven to 400 degrees.
- In the meantime, "trim" each spear by grasping both ends and gently bending until it snaps in half. (You might lose more of the stalk with the thicker ones, but you won't lose the tender part anyway so it's OK.).
- Spread the tender top halves in a single layer on a foil-lined baking sheet; discard the woody stalks.
- Drizzle a bit of olive oil over top (a tablespoon or two) and add garlic.
- Season lightly with salt and red pepper flakes; season liberally with the black pepper.
- Toss to coat.
- Cook in the preheated over for 10-15 minutes or until asparagus is bright green.

I got this from a "Real Simple" magazine long ago. From then on, I always cook asparagus like this. It is "real simple" and asparagus are kept crispy and green (NOT raw), exactly the way we like to eat them.
