Steps:

  • Preheat the oven to 400 degrees F.
  • Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve.

2 tbsp Olive oil
Salt (To taste)
Pepper (To taste)
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/4 tsp Ginger powder
1 tbsp Sesame seeds (Preferably roasted)

Steps:

  • Line a sheet pan with aluminum foil.
  • Spread out the green beans.
  • Pour olive oil all over the beans.
  • Sprinkle salt, pepper, onion powder, garlic powder, ginger powder all over the beans.
  • Toss everything together until fully coated and spread them out again.
  • Bake at 425 degrees for about 20 minutes, making sure to toss everything again at 10 minutes. They are ready when they are slightly shriveled and have some brown spots on them.

1 -2 tablespoon olive oil (or just enough to lightly coat beans)
1 teaspoon kosher salt (or to taste, may substitute with Mrs. Dash if desired)
1/2 teaspoon fresh ground pepper (or to taste, omit if using Mrs. Dash)

Steps:

  • Preheat oven to 400°F.
  • Wash, dry well, and trim green beans.
  • Put green beans on a jelly roll pan.
  • Drizzle with olive oil.
  • Sprinkle with salt and pepper to taste (I like them salty so I use about 1 1/2 teaspoons of salt and about 8-10 grinds of the pepper mill). *Mrs. Dash may be substituted for salt and pepper as desired.
  • Use your hands to be sure all the beans are evenly coated and spread them out into 1 layer.
  • Roast for 20-25 minutes, turning after 15 minutes, until beans are fairly brown in spots and somewhat shriveled.

8 -10 italian brown button mushrooms
2 yukon gold potatoes, approximately 1/2 pound total weight
1 yellow onion
1 head garlic
1/2 lb fresh green beans
1 tablespoon olive oil
1/4 teaspoon kosher salt
fresh ground pepper
2 tablespoons parmigiano-reggiano cheese
1 teaspoon dried thyme

Steps:

  • Preheat oven to 400 degrees.
  • Spray a 13 x 9 inch casserole with non-stick cooking spray and set aside.
  • Brush mushrooms clean and trim the ends of the stems.
  • Cut the mushrooms in half through the stem.
  • Cut potatoes into 1-inch pieces.
  • Cut the onion into wedges approximately 1/2 inch thick.
  • Seperate the garlic into cloves and peel.
  • Trim ends from green beans, wash and break into 1-inch lengths.
  • Set green beans aside.
  • In prepared casserole, combine the mushrooms, potatoes, garlic and onion.
  • Drizzle with olive oil, tossing to coat evenly.
  • Roast vegetables until they begin to brown on the edges, about 30 minutes.
  • Add the broken green beans to casserole dish and carefully turn and rearrange vegetables in an even layer.
  • Sprinkle with 1/4 teaspoon salt and a few grinds of pepper.
  • Return to oven and continue to roast until the vegetables are browned and tender when pierced with a knife, about 15 minutes longer.
  • Sprinkle the grated Parmigiano-Reggiano and thyme over the vegetables.
  • Return to oven and cook for 5 minutes longer to melt the cheese.

Scant 1/4 teaspoon fine sea salt

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup.
  • Wash and trim the rough ends off the green beans. Pat them very dry with clean tea towels (wet green beans turn soggy in the oven).
  • Place the prepared green beans on your baking sheet. Drizzle the olive oil over the beans and sprinkle the salt all over. Use your hands to toss until all of the beans are lightly coated in oil. Arrange the green beans across the pan in a single layer.

1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika

1 cup freshly grated mozzarella cheese, or any cheese of choice
Garnish:
freshly chopped parsley

Steps:

  • Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
  • Thoroughly wash the green beans and place them in a colander to completely drain the excess water.
  • To quickly trim the ends, take a handful of green beans (while picking them
  • place the ends in the same direction). Slice off about 1/2-inch of the stem ends and discard the ends.
  • Place your trimmed beans in a large bowl.
  • Add all the remaining ingredients, except for the mozzarella and parsley, then toss to coat each green bean with the seasonings really well.
  • Transfer your beans to your prepared pan and arrange them in a single layer as shown. Use a spatula to get all the leftover seasonings/oil out of the bowl and drizzle over beans.

Cloves from 1 head garlic (about 10 cloves), smashed and peeled
