Just toss slices of acorn squash with honey, olive oil, freshly ground black pepper and salt and pop into a hot oven for about a half hour.

- Center a rack in the oven and then preheat to 425°F. Line a baking sheet with foil, a double layer of parchment paper or a silicone baking mat.
- Scrub the squash well?you're going to want to eat the skin. Cut each squash in half from top to bottom, scoop out the seeds and strings (you can keep the seeds for roasting) and cut each half into 4 wedges. Stand the wedges on the baking sheet, skin side down.
- In a small bowl, whisk together the olive oil, pomegranate molasses, za'atar, lemon juice, sea salt and cayenne. Taste and adjust the seasoning if you'd like, keeping in mind that the sourness of the molasses won't be as pronounced against the roasted squash. Brush some of the flavored oil onto the wedges, moistening the flesh and leaving the skin as is.
- Roast the wedges until they can be easily pierced with the tip of a paring knife, 25 to 35 minutes.

- To prepare the acorn squash, wash and dry it thoroughly; then, place it in front of you on a work surface, and using a sharp knife, cut the squash, lengthwise, in half through the stem; scoop out the seeds and membrane, then cut each half into 3 wedges to create a total of 6 wedges per squash.
- Add the wedges to a large bowl, and drizzle over about 2 tablespoons of olive oil, a generous sprinkle of salt and black pepper, the cinnamon, coriander, cumin and paprika, and the 1/4 cup maple syrup; toss the wedges very well (I just use my clean hands for this) until completely and evenly coated.
- Place each wedge cut-side down onto the prepared baking sheet, and roast for 20 minutes on that first side; then, using tongs, flip each wedge so that the other cut-side is now facing down on the baking sheet, and roast for another 15 minutes.
