One 14- to 16-pound turkey, butterflied, innards and neck removed and reserved
Kosher salt and freshly ground black pepper
7 cups low-sodium chicken stock
1 to 1 1/4 sticks (8 to 10 tablespoons) unsalted butter
8 medium stalks celery, thinly sliced
3 medium yellow onions, thinly sliced
Kosher salt and freshly ground white pepper
8 slices white sandwich bread
2 tablespoons stemmed fresh thyme
1 teaspoon dried rosemary
10 fresh sage leaves, cut into thin strips
10 ounces pepperoni, skin removed, cut into small cubes
1 pound loose pork breakfast sausage, broken into small pieces and cooked
1 pound mozzarella, cut into 3/4-inch cubes
1 cup low-sodium chicken stock, boiled and cooled
1/2 cup dry Marsala
1 tablespoon Dijon mustard
2 tablespoons all-purpose flour

Steps:

  • For the turkey: Preheat the oven to 350 degrees F.
  • Place the turkey on a flat surface and sprinkle inside and out with salt and pepper. Transfer the turkey to a large roasting pan and roast until an instant-read thermometer inserted into the thickest part of the thigh meat (without touching bone) registers 155 to 160 degrees F, 2 hours 55 minutes to 3 hours 15 minutes. Transfer the turkey to a flat surface and allow it to rest for 20 to 30 minutes before carving the meat.
  • Meanwhile, place the neck and the chicken stock in a pot and simmer gently until the stock reduces by about half. Season with salt and pepper.
  • For the stuffing: Preheat the oven to 400 degrees F and grease a 9-by-13-inch baking dish with butter.
  • Cut the reserved turkey heart and gizzard into small pieces and set aside.
  • Melt 2 tablespoons butter in a large skillet over medium heat, then add the celery and onions and season with salt and pepper. Cook the vegetables, stirring occasionally, until translucent, 3 to 5 minutes. Remove the skillet from the heat and transfer the contents to a bowl. Set aside.
  • Arrange the bread slices in a single layer on a baking sheet and toast in the oven until light brown. While the bread is hot, lightly butter both sides of each piece, then cut into 1-inch squares and transfer them to a large bowl. Toss with the thyme, rosemary, sage and some salt and pepper. Mix and set aside. (Turn the oven down to 350 degrees F.)
  • Heat a tablespoon of the butter in a small skillet and quickly saute the heart and gizzard pieces, about 30 seconds. Sprinkle with salt and pepper, then remove from the heat and add it to the bowl of celery and onions. Stir to blend. Heat a large skillet, add another tablespoon butter and saute the pepperoni over high heat for 2 to 3 minutes. Drain on a paper towel.
  • Combine the celery and onion mixture, breakfast sausage, mozzarella and pepperoni in the bowl containing the toasted bread. Mix to blend, then add the chicken stock to moisten all of the ingredients. Transfer to the greased baking dish and bake for 40 to 45 minutes.
  • For the gravy: After removing the roasted turkey to rest, place the roasting pan over the burners of the stove over low heat and add the Marsala and mustard. Cook, scraping the bottom of the pan to get the drippings and tasty bits off, until there is almost no liquid.
  • Strain the neck out from the stock and pour about 1/2 cup into a small bowl. Whisk the flour into the bowl, taking care there are no lumps. Add the remaining chicken stock and the flour mixture to the roasting pan and whisk to blend. Taste for seasoning. Reduce until the mixture thickens to the desired consistency.
  • Carve the turkey and arrange on platters. Serve with the gravy on the side. (If the turkey is dry, ladle a little hot gravy directly on the meat.)

Steps:

  • Preheat the oven to 350 degrees F.

  • Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
  • Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.
  • Slice the turkey and serve.

85g butter, softened
1 whole nutmeg
10 rashers streaky bacon
glass red wine, such as Merlot

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Put the onion and a large sprig of bay in the cavity between the legs. Now pack half the stuffing into the neck end, pushing it towards the breast. Secure the neck skin in position with skewers and tie the turkey legs together at the top of the drumsticks to give a neat shape.
  • Weigh the turkey and calculate cooking time at 20 mins per kilo, plus 90 mins. (You may need to use your bathroom scales.)
  • Put a large sheet of extra-wide foil in a large roasting tin, then put the turkey on top. Smear the breast with the butter, grate over half the nutmeg and season well. Cover the breast with bacon, pour over the wine, then loosely bring up the foil and seal well to make a parcel.
  • Roast in the oven, then 90 mins before the end of cooking, open the foil, discard the bacon, and drain off excess fat from the tin. Leaving the foil open, return the turkey to the oven to brown, basting with the juices several times. Then 30 mins before the end of cooking, place pigs-in-blankets and stuffing of your choice around the turkey, or cook in a separate lightly oiled tin.
  • To test whether the turkey is cooked, push a skewer into the thickest part of the thigh - the juices should run clear. If they are pinkish, cook for 15 mins more, then test again.
  • Transfer the turkey, stuffings and pigs-in-blankets to a platter, cover with foil, then a couple of tea towels and allow to rest for up to 30 mins before carving. This gives the juices time to settle back into the meat, ensuring that the turkey will be juicy. Garnish with sprigs of bay.

2 1/2 quarts homemade turkey stock or canned reduced-sodium chicken broth
Melted unsalted butter, if needed
3/4 cup all-purpose flour
1/3 cup bourbon, port, or dry sherry, optional
1 (18-pound) fresh turkey
About 12 cups of your favorite stuffing

Steps:

  • Position a rack in the lowest position of the oven and preheat to 325 degrees F.
  • Reserve the turkey neck and giblets to use in gravy or stock. Rinse the turkey inside and out with cold water. Pat the turkey skin dry. Turn the turkey on its breast. Loosely fill the neck cavity with stuffing. Using a thin wooden or metal skewer, pin the neck skin to the back. Fold the turkey's wings akimbo behind the back or tie to the body with kitchen string. Loosely fill the large body cavity with stuffing. Place any remaining stuffing in a lightly buttered casserole, cover and refrigerate to bake as a side dish. Place the drumsticks in the hock lock or tie together with kitchen string.
  • Place the turkey, breast side up, on a rack in the roasting pan. Rub all over with the softened butter. Season with salt and pepper. Tightly cover the breast area with aluminum foil. Pour 2 cups of the turkey stock into the bottom of the pan.
  • Roast the turkey, basting all over every 30 minutes with the juices on the bottom of the pan (lift up the foil to reach the breast area), until a meat thermometer inserted in the meaty part of the thigh (but not touching the bone) reads 180 degrees and the stuffing is at least 160 degrees, about 4 1/2 hours. Whenever the drippings evaporate, add stock to moisten them, about 1 1/2 cups at a time. Remove the foil during the last hour to allow the skin to brown.
  • Transfer the turkey to a large serving platter and let it stand for at least 20 minutes before carving. Increase the oven temperature to 350 degrees F. Drizzle 1/2 cup turkey stock over the stuffing in the casserole, cover, and bake until heated through, about 30 minutes.
  • Meanwhile, pour the drippings from the roasting pan into a heatproof glass bowl or large measuring cup. Let stand for 5 minutes, then skim off and reserve the clear yellow fat that has risen to the top. Measure 3/4 cup fat, adding melted butter if needed. Add enough turkey stock to the skimmed drippings to make 8 cups total.
  • Place the roasting pan on two stove burners over low heat and add the turkey fat. Whisk in the flour, scraping up browned bits on the bottom of the pan, and cook until lightly browned, about 2 minutes. Whisk in the turkey stock and the optional bourbon. Cook, whisking often, until the gravy has thickened and no trace of raw flour remains, about 5 minutes. Transfer the gravy to a warmed gravy boat. 1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1 1/2 teaspoons allspice berries

1 gallon heavily iced water
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 sprigs rosemary
6 leaves sage

Steps:

  • Two to three days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.
  • Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.
  • The night before or early on the day you'd like to eat: Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.
  • Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.
  • Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.
  • Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.
  • Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 161 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

2 tablespoons pure maple syrup
1/4 cup fresh lemon juice
2 teaspoons lemons, zest of, finely grated

2 teaspoons coarse salt
1/2 teaspoon black pepper, finely ground
1 cup fresh lemon juice
3/4 cup pure maple syrup
1/2 cup olive oil
6 shallots, sliced thin
6 cloves garlic, sliced thin
4 sprigs fresh thyme
3 bay leaves
2 teaspoons lemons, zest of, finely grated
1 teaspoon black pepper
1 (10 lb) turkey
3 medium onions, cut into 1 inch pieces
3 stalks celery, cut into 1 inch pieces
1 tablespoon flour
2 cups chicken stock

Steps:

  • Make the glaze: In a food processor, combine the butter, 6 tblsps of the maple syrup, 3 tblsps of the lemon juice, the lemon zest, coarsely ground pepper and salt; process until blended and transfer to a bowll; in another bowl, combine the remaining ¼ cup maple syrup, 1 tblsp lemon juice and finely ground pepper (can be made 1 day ahead – return to room temperature before proceeding).
  • Marinate the turkey: In a 2-gallon plastic bag, combine the lemon juice, maple syrup, olive oil, shallots, garlic, thyme, bay leaves, lemon zest and pepper; add the turkey to the bag, squeeze out as much air as possible and seal the bag; distribute the marinade evenly over and inside the turkey (think of this as a therapeutic, turkey massage); set the turkey, breast side down, in a bowl in the refrigerator and marinate for 24 hours, turning occasionally.
  • Preaheat oven to 450F; position the oven rack near the bottom of the oven.
  • Wipe off the shallots and garlic from the turkey and pat dry; strain the marinade into a bowl, skim off the oil and reserve; set the herbs, garlic and shallots aside separately.
  • Using your fingers, carefully loosen the turkey skin over the breast and thighs; put all but 3 tblsps of the softened maple-pepper butter under the breast and thigh skin, patting gently to spread the butter; put 1/3 each of the diced onions and celery in the cavity; tie the legs together with kitchen string and set the turkey, breast side up, on a rack in a large roasting pan; rub the breast and thigh skin with the remaining maple-pepper butter and roast for 30 minutes, basting twice; because the sugar in the maple syrup may cause the turkey skin to brown quickly in places, cover loosely with foil; lower the oven temperature to 350F; spread the remaining onions and celery around the turkey and roast for about 1 ½ hours longer, or until an instant-read thermometer inserted in the thickest part of the breast, just above the wing-joint reaches 165F, and the juices run clear.
  • Transfer to a carving board and let stand, loosely covered with foil, for 30 minutes; remove the whole legs from the turkey, cutting them off at the hip joint; cut off the wings from the breast; return the wings and legs to the pan and roast for about 30 minutes longer, until an instant-read thermometer inserted in the thickest part of the thigh reaches 180F and the juices run clear; transfer the legs and wings to the turkey on the carving board, cover with foil and let stand for 15 minutes before carving.
  • Make the gravy: Set the roasting pan over 2 burners over high heat and cook the vegetables, stirring, until golden brown; carefully pour off all but 2 tblsps of the fat; add the flour and whisk for 1 minute; add the reserved marinade and the chicken stock and bring to a boil, scraping up any browned bits; simmer, whisking constantly, for 3 minutes; strain the gravy into a saucepan and boil over high heat until reduced by half, about 10 minutes; season with salt and pepper; serve alongside the turkey.
  • Note: The standing period before removing the turkey legs and wings, along with the extra roasting time for these parts will have resulted in the main carcass having cooled down considerably; while making the gravy, cover the turkey with foil and pop back into a slow oven to warm up.

5-6kg oven-ready turkey with the neck, chopped, and giblets included
150g butter
3 garlic cloves, finely grated
large handful of mixed herbs such as parsley, thyme or bay, leaves picked and chopped, stalks reserved, plus extra thyme and herbs to serve (optional)
2 lemons, both halved, 1 juiced
1 onion, roughly chopped
2 carrots, roughly chopped
2 tbsp plain flour
1 tbsp soy sauce
1 tsp yeast extract
large glass of red wine (about 200ml)
500ml chicken or turkey stock

Steps:

  • Up to 48 hrs and at least 12 hrs before cooking, loosen the skin over the turkey breast so you can get your hands underneath it. Season the bird all over, including under the skin, with 2 tbsp sea salt. Put the turkey in a large roasting tin, breast-side up. Leave uncovered in the fridge until ready to cook.
  • Remove the turkey from the fridge at least 1 hr before cooking. Heat the oven to 240C/220C fan/gas 9. Melt the butter in a pan set over a low heat, then add the garlic, chopped herbs and lemon juice. Sizzle for 1 min, remove from the heat and leave to cool a little. Remove the turkey from the tin and scatter in the onions, carrots, turkey neck and giblets. Put a roasting rack, trivet or ovenproof cooling rack in or over the tray and sit the turkey on top. Stuff the squeezed and whole lemons in the turkey cavity with the herb stalks and extra thyme. Lift the skin and spoon about 4 tbsp of the garlicky herb butter over the meat underneath, then massage the skin to spread it out. Brush most of the remaining butter all over the bird, reserving about 2 tbsp. For a neat finish, tie the wings and legs together.
  • Put the turkey in the oven and reduce the heat to 180C/160C fan/gas 4. Roast for 1 hr, then remove from the oven and brush with more of the butter. Turn the tin around and return to the oven for another 30 mins. Brush again with the butter and roast for another 30 mins. After the turkey has had 2 hrs in total, check its temperature with a probe thermometer. It's cooked perfectly when the thickest part of the breast reads about 65C and the thickest part of the thigh reads 75C. If the temperature is lower, return the turkey to the oven for periods of 15 mins until the temperature is reached. Cool for 10 mins on the rack, then transfer to a board and leave upside down - the turkey should rest for at least another 20 mins and will stay hot for at least 40 mins more.
  • Meanwhile, make the gravy. If the roasting tin is flameproof, put it directly over a medium heat. If not, scrape the contents into a large, shallow pan. Scatter over the flour and stir to make a paste. Add the soy sauce and yeast extract, stir, then pour in the wine and combine to form a thick paste. Pour in the stock and turkey juices (if you aren't already cooking them in the roasting tin). Simmer for about 5 mins, stirring to make a rich gravy. Strain into a jug or pan to reheat when needed.
  • Put the turkey on a platter, then serve with the gravy and other trimmings of your choice.

  • For spice mix, dry-roast spices until fragrant (20 seconds), coarsely crush in a mortar and pestle and set aside.
