2.5 - 3 kg / 5-6 lb single turkey breast (, skin on, bone in (Note 1), NOT BRINED)
1/2 tsp salt
Black pepper
Small bunch of fresh herbs - 4 rosemary sprigs (, 8 sprigs sage, 10 thyme sprigs)
12 garlic cloves (, smashed with side of knife (see video))
150 g / 5 oz (10 tbsp) unsalted butter, softened
1 1/4 tsp table salt or 1 1/2 tsp kosher salt
1/2 tsp black pepper
4 large garlic cloves (, minced)
1 tbsp finely chopped sage (, fresh)
1 tbsp finely chopped rosemary (, fresh)
1 tbsp fresh thyme leaves (, fresh)
1 tbsp finely chopped parsley leaves (, fresh)

Steps:

  • Remove fridge chill: Take turkey out of the fridge 45 minutes before cooking (or 30 minutes if it's super hot where you are).
  • Preheat oven to 200C / 390F (all oven types). Put rack in the lower middle position. (Note 3)
  • Place garlic and bunch of herbs in the middle of a baking dish. (Note 4)
  • Butter: Mix Butter ingredients together.
  • Loosen skin: Use an upside teaspoon to help loosen the skin from the turkey flesh (easiest to go under the paper thin layer under the surface skin). Video helpful here.
  • Smear butter under skin: Use about 2/3 of the butter, and smear it under the skin on the top half of the breast. Best to smear using hands under the skin (not on surface), to ensure it spreads as evenly as possible.
  • Turn turkey upside down. Reserve about 2 tbsp butter for the surface, smear the rest on the underside.
  • Place turkey in pan on the herbs, skin side up. Now smear skin with remaining butter - you don't want much on the skin because the herb bits burn.
  • STOP HERE for make ahead option - the turkey can be left like this for up to 24 hours. Remove from fridge 45 minutes before serving then proceed.

1 12- to 14-pound turkey, thawed if frozen, giblets removed (neck reserved)
4 stalks celery, roughly chopped
2 carrots, roughly chopped
1 onion, cut into 8 wedges
1 apple, cut into 8 wedges
1/2 bunch fresh sage
1/2 bunch fresh parsley
1 stick unsalted butter, at room temperature
Kosher salt and freshly ground pepper

Steps:

  • Position a rack in the lowest part of the oven; remove the other racks and preheat to 350˚. Put the turkey neck, celery, carrots, 6 wedges each onion and apple, half of the sage and half of the parsley in the center of a large roasting pan, creating a mound for the turkey to sit on. Stuff 2 tablespoons butter, the remaining 2 wedges each onion and apple and the remaining sage and parsley inside the cavity of the turkey. Place the turkey breast-side up on top of the vegetables.
  • Combine 1 tablespoon each salt and pepper in a small bowl. Pat the turkey dry and season all over with half of the salt and pepper mixture. Spread the remaining 6 tablespoons butter all over the turkey, then sprinkle with the remaining salt and pepper mixture. Tie the legs together with kitchen twine and tuck the wings under the body. Pour 1 cup water into the roasting pan around the vegetables.
  • Roast the turkey 1 1/2 hours, then baste with the pan drippings. Continue to roast, basting every 30 minutes, until the skin is crisp and golden and a thermometer inserted into the thigh registers 160˚ to 165˚, 45 minutes to 1 1/2 hours more. (Tent with foil if the skin is browning too quickly.) Let rest 15 minutes in the pan.
  • Carefully tip the turkey so any juices pour into the roasting pan. Transfer the turkey to a cutting board and let rest at least 30 minutes before carving. Remove the vegetables and herbs from the roasting pan and use the drippings for gravy.

1 1/2 teaspoons poultry seasoning
2 tablespoons garlic herb sauce mix (recommended: Knorr)
1 1/2 teaspoons crushed garlic
1 (32-ounce) bag celery and carrot party sticks
2 large onions, large dice
1 (32-ounce) container low-sodium chicken broth
12-pound turkey, thawed if necessary
1 tablespoon salt
1 tablespoon pepper
3 (3/4-ounce) packets fresh herbs poultry herb blend (sage, thyme and rosemary)
1 lemon, thickly sliced

Steps:

  • In a small bowl, combine softened butter, poultry seasoning, garlic herb sauce mix, and crushed garlic. Use a fork to mix together until well combined. Cover and put in the refrigerator for 15 to 30 minutes, until firm but not hard.
  • Preheat the oven to 450 degrees F.
  • Arrange celery, carrots, and half of the diced onions in the bottom of a roasting pan. Add chicken broth and set aside.
  • Rinse the thawed turkey and pat dry. Use your finger to carefully loosen the skin around the entire bird. Take the butter mixture and cut into large pieces. Place the butter pieces under the skin of the entire turkey. Rub the remaining butter pieces on the outside of the skin and season with salt and pepper. Stuff the inside of turkey cavity with remaining onions, fresh herb poultry blend, and lemon slices. (Truss if necessary.) Insert the pop-up thermometer at an angle about 3-inches down from the neck cavity and 2-inches from the breast bone, in the thickest part of the breast.
  • Place turkey on the bed of vegetables in roasting pan. Place in the oven and reduce temperature to 325 degrees F. Roast for 1 hour, then baste with pan juices every 20 minutes until thermometer pops up or until an instant-read thermometer inserted into the thigh registers 180 degrees F, about 3 hours.

1 tablespoon each chopped fresh rosemary, sage, and thyme

1 whole turkey (about 12 pounds), thawed if frozen, rinsed and patted dry, neck reserved (set aside giblets for stuffing, if desired)

4 to 6 large carrots, halved crosswise

Steps:

  • Preheat oven to 350 degrees with rack in the lowest position. Make herb butter: In a small bowl, mix together 4 tablespoons butter with chopped herbs; season generously with salt and pepper.
  • Prepare and stuff the turkey. Loosen skin: Working from the neck end, slide fingers under skin until you reach the end of the breast, being careful not to tear the skin; rub herb butter under the skin. Fill neck cavity: Place turkey breast side down. Fill neck cavity with stuffing; avoid packing. Close up by folding skin over and fastening with skewers or trussing needles. Tuck wings: Turn turkey over; bend wing tips underneath bird so they stay in place (you may have to break the bones). Loosely fill large cavity with stuffing. Tie legs: Using cotton kitchen twine, tie legs together securely (they will overlap) so bird retains its shape and moisture during cooking.
  • Cut neck into pieces; mix with carrots, onions, celery, and 2 cups water in a large roasting pan. Set roasting rack over vegetables in pan.
  • Lift turkey onto rack; rub with remaining tablespoon butter. Season generously with salt and pepper. Tent turkey loosely with foil. Roast 1 hour, then baste every 30 minutes with pan liquids, until an instant-read thermometer inserted into the thickest part of thigh (avoiding bone) registers 125 degrees, about 3 hours.
  • Remove foil; raise oven heat to 400 degrees. Continue roasting, basting occasionally, until thigh reaches 180 degrees, 45 to 60 minutes more. Tent with foil if bird browns too quickly; add more water if pan becomes dry. Transfer turkey to a serving platter; cover loosely with foil, and let it rest at least 30 minutes before carving.

3 large carrots, cut into 1-inch pieces
3 large stalks celery, cut into 1-inch pieces

8 cups homemade chicken stock, divided, plus more if needed for gravy
Turkey neck
1/4 cup fresh sage leaves
3 tablespoons unsalted butter
3 tablespoons flour
1 cup white wine
4 cups sage-infused stock
Salt and freshly ground black pepper
1 tablespoon finely chopped fresh sage

Steps:

  • For the turkey: Remove the turkey from the refrigerator 1 hour before roasting.
  • Combine the butter, sage, rosemary, thyme, and parsley in a food processor and process until smooth. Season with salt and pepper.
  • Preheat the oven to 450 degrees F.
  • Season the cavity of the turkey with salt and pepper and fill the cavity with half of the carrots, celery, and onion. Rub the entire turkey with herb butter and season liberally with salt and pepper.
  • Put 4 cups of the chicken stock in a medium saucepan and keep warm over low heat.
  • Place the remaining vegetables on the bottom of a large roasting pan. Put the turkey on top of the vegetables, put in the oven, and roast in the oven until lightly golden brown, 45 minutes. Reduce the heat to 350 degrees F and continue roasting, basting with the warm chicken stock every 15 minutes, until an instant-read thermometer inserted in the thigh registers 160 degrees F, about 2 to 2 1/4 hours longer. Remove the turkey from the oven, transfer to baking sheet and tent loosely with foil, and let rest 20 minutes before slicing.
  • For the sage gravy:
  • Strain the cooking liquid from the roasting pan into a medium saucepan (should be about 4 cups, if not, add more stock to make 4 cups). Add the neck, bring to a boil, add the sage leaves, remove from the heat, and let steep for 15 minutes. Remove the sage leaves.
  • Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook for 1 minute. Add the wine and cook until reduced. Whisk in the stock and cook until thickened and smooth, about 5 minutes. Season with the salt and pepper and chopped sage.

1 (10 -11 lb) free-range fresh whole turkey
1 onion, peeled and quartered
softened butter, to rub into the bird
1 small fresh thyme sprig
1 small rosemary sprig
1 lemon, quartered
salt
pepper
2 -3 pinches saffron
3 egg yolks, beaten
1 ounce butter, melted
2 -3 pinches saffron
2 ounces butter, melted
2 -3 sprigs fresh thyme
2 -3 sprigs fresh rosemary
2 -3 sprigs fresh bay leaves
cooking string or kitchen twine

Steps:

  • Pre-heat the oven to 170°C/350°F or Gas Mark 4.
  • Wipe the turkey, and remove any giblets from inside the bird if necessary.
  • Smear the butter all over the bird and place the onion, herbs and lemon inside the body cavity. Season the bird with salt and pepper to taste.
  • Place the buttered bird into a foil lined turkey tray. Cut a piece of greaseproof paper or baking parchment and press this over the breast part of the bird - to prevent the breast becoming too dry during cooking.
  • Cover the turkey with 2 large pieces of tinfoil/aluminum foil - making sure the foil DOES NOT touch the bird - you are creating a tent - with lots of air to circulate inside!
  • Cook in the preheated oven for 20 minutes per pound, plus 20 minutes - so a 10lb turkey will take about 3 hours and 40 minutes.
  • Try to take the turkey out at least twice during cooking time, to baste it with the buttery juices. Replace the foil cover before putting it back to continue cooking in the oven.
  • Whilst the bird is cooking, prepare your gilded glaze - choose which one you prefer, egg glaze or butter glaze.
  • Whisk the egg yolks with the saffron and melted butter. It needs to be the consistancy of a coating glaze, or a thick pouring cream or custard. If you are using just the butter glaze - whisk the saffron and melted butter together - this glaze will be thinner than the egg glaze.
  • Twenty minutes before the end of the cooking time, remove the turkey from the oven, and drain off all the juices for your gravy.
  • Turn the oven up to 190°C/380°F or Gas Mark 5.
  • Apply your gilded glaze to the turkey with a large pastry brush - brush it ALL over the turkey as evenly as you can and NOT too thickly with the egg glaze.
  • Return the turkey to the oven uncovered for the last 20 minutes - remove from the oven and allow to "rest" for 30 minutes before carving.
  • Remove the herbs, lemon and onion from the cavity before carving and serving.
  • Make the herb garland - twist sprigs of thyme, bay and rosemary together with some cooking string or twine, to form a circlet.
  • Serve the turkey adorned with a twisted garland of herbs, and with traditional accompaniments such as: Roast potatoes, mixed vegetables, red cabbage, gravy, stuffing, bacon rolls and Chipolata sausage rolls.
  • You can also "gild" the turkey by sprinkling edible gold dusting powder over the breast and legs of the turkey - this is available from specialist cake decorating shops.

12 lb Whole turkey (*)
1/2 cup Unsalted butter ((softened; use ghee for dairy-free, paleo or whole30))
1 tbsp Fresh sage ((chopped finely))
1 tbsp Fresh rosemary ((chopped finely))
1 tbsp Fresh thyme ((leaves only))
4 cloves Garlic ((minced))
1 tsp Lemon zest
1/2 tbsp Sea salt
1/2 tsp Black pepper

Steps:

  • In a large stock pot large enough to fit the turkey, stir together 2 gallons (7.5 L) of water and 2 1/2 cups (128 g) kosher salt. Submerge the turkey in the brine. Refrigerate for 10 to 12 hours.
  • When the turkey is done brining, drain the water and pat dry. Place the turkey onto a roasting pan with a roasting rack.
  • In a small bowl, mash together the softened butter, sage, rosemary, thyme, minced garlic, lemon zest, sea salt and black pepper.
  • Use your hands under the skin of the turkey to separate the skin from the meat underneath. (Be careful not to tear the skin.)
  • Spread half of the butter all over the turkey underneath the skin. Spread the other half over the skin all over.
  • Position the oven rack on a low position, so that there is enough room for the turkey. The top of the turkey should end up just slightly higher than the middle when placed in the oven later. Preheat the oven to 350 degrees F (177 degrees F).
  • Place the turkey in the oven and roast. Check the roasted turkey time chart in the blog post for the amount of time to roast without foil and the remaining time with foil. For a 12 lb turkey, that's 45 minutes uncovered followed by about 2 1/4 hours covered. To cover, tent the top of the turkey with foil, shiny side out, making sure no turkey is peeking out, and return to the oven.
  • Check that the roasted turkey is done with a meat thermometer - it should read 165 degrees for the safest option. For the most juicy turkey, aim for 150-155 degrees, and then cover in foil immediately after removing from the oven. Let the turkey rest, covered in foil, for about 20 minutes to come up to 165 to 170 degrees before serving.

3 tablespoons honey
Turkey
6 tablespoons (3/4 stick) butter, room temperature
1 1/2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 21- to 22-pound turkey; neck, heart, and gizzard reserved
1 large onion, quartered
4 1/2 cups (about) low-salt chicken broth
2 large fresh rosemary sprigs
2 large fresh thyme sprigs
1 bay leaf
3 tablespoons all purpose flour

Steps:

  • For gravy base:
  • Melt butter in large pot over medium-high heat. Add onions and sauté until deep brown, about 40 minutes. Mix in rosemary and thyme, then flour; stir 1 minute. Add vinegar and honey; simmer until thickened, about 2 minutes. (Can be made 1 day ahead. Cover; chill.)
  • For turkey:
  • Mix butter and herbs in small bowl. Rinse turkey inside and out; pat dry. Place on rack set in large roasting pan. Sprinkle inside and out with salt and pepper. Starting at neck end, slide hand between skin and breast meat to loosen skin. Spread 1/4 cup herb butter over breast meat under skin. Rub remaining butter over outside of turkey. Place turkey parts and onion quarters in pan around turkey. (Can be prepared 1 day ahead. Cover and chill.)
  • Set rack at lowest position in oven and preheat to 350°F. If stuffing turkey, spoon stuffing loosely into main cavity and neck cavity. Tuck wing tips under; tie legs together loosely to hold shape. Roast turkey uncovered 1 hour. Tent turkey breast and tops of drumsticks loosely with foil; roast 1 hour longer. Add 1 cup broth, herb sprigs, and bay leaf to drippings in pan. Continue to roast until thermometer inserted into thickest part of thigh registers 175°F, basting with 3/4 cup broth and pan juices every 30 minutes, about 2 hours 30 minutes longer for unstuffed and 3 hours longer for stuffed. Transfer turkey to platter; let stand 30 minutes (internal temperature will increase 5 to 10 degrees).
  • Strain pan juices into 8-cup measuring cup; spoon fat off top. Heat gravy base over medium heat. Whisk in flour, then pan juices. Boil until gravy is reduced to 7 cups, stirring occasionally, about 12 minutes. Season with salt and pepper.
  • Serve turkey with gravy.

One 10- to 12-pound turkey
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoon minced fresh chives
2 lemons, quartered, plus 2 teaspoons lemon juice
1 1/2 teaspoons minced fresh flat-leaf parsley, plus 3 sprigs
Pinch of cayenne

Steps:

  • Let the turkey sit out at room temperature for about 1 hour.
  • Preheat the oven to 400 degrees F. Remove the packet of neck and giblets from the turkey and set aside. Cut away any fatty pieces near the cavity or neck and discard. Pat the turkey dry inside and out with paper towels and sprinkle liberally with salt and pepper inside and out.
  • Combine the butter, chives, lemon juice, parsley, cayenne and 1/2 teaspoon each salt and pepper in a medium bowl with a rubber spatula. Loosen the skin over the turkey breast, push half of the butter mixture under the skin and spread over the breast meat. Rub the skin of the entire turkey with the rest of the butter mixture. Stuff the cavity with the lemon quarters and parsley sprigs. Tie the legs together with twine. Tuck the wings under the body and put the turkey breast-side up on a rack in a roasting pan.
  • Roast until the turkey begins to turn golden, about 25 minutes. Loosely tent the breast with foil, then reduce the oven temperature to 325 degrees F. Continue roasting, until an instant-read thermometer inserted in the thigh joint reaches about 155 degrees F. Remove the foil and continue roasting until the thigh reaches 165 degrees F, about 30 minutes more. Transfer the turkey and rack to a cutting board and let rest about 30 minutes.
  • When ready to serve, discard the lemons and parsley from the cavity before carving.

I have been making this turkey every Thanksgiving for the last 15 years or so! It always produces a tender, moist meat and flavorful skin, and I can't imagine making turkey any other way. The key is that you must use PURE maple syrup (not pancake syrup) and FRESH pressed apple cider (not apple juice). I usually make the maple herb butter the day before, so it's ready Thanksgiving morning. You can make it up to 2 days ahead, if you like. I also stuff my turkey, but if you don't, just add some chopped onion, celery and carrots to the cavity when roasting.

2 cups fresh pressed apple cider
1 tablespoon chopped fresh thyme

Steps:

  • Slide hand under breast skin to loosen the skin. Rub about 1/2 cup of the maple her butter over the breast meat under the skin.
  • If stuffing turkey, spoon stuffing into main cavity and neck cavity and truss.
  • Rub remaining butter mixture all over the outside of the turkey. Make sure there is a generous amount on drumsticks and wings, and wrap them in foil. Leave the rest of the turkey uncovered. Pour broth into pan.
  • Roast turkey for 30 minutes, then reduce temperature to 350 degrees. Remove foil from drumsticks and wings. Make a loose tent out of heavy-duty aluminum foil and roast until meat thermometer inserted in the thickest part of the thigh reads 180 degrees, or until juices run clear when the thickest part of the thigh is pierced with a skewer. Baste occasionally with pan juices as the turkey roasts, about 2 hours 25 minutes for unstuffed turkey or 2 hours and 55 minutes for a stuffed turkey.
  • Transfer turkey to platter, tent with aluminum foil and let stand 30 minutes.

For the herb butter:
1/4 cups (55 grams) unsalted butter, softened * see note
1 teaspoon fresh rosemary
1 teaspoon fresh sage leaves, chopped
1 teaspoon fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 bone-in turkey breast/crown
For the gravy:
8 carrots, peeled and ends removed
2 sticks celery
2 parsnips, peeled and ends removed
2 garlic cloves, peeled
1 small yellow onion, peeled and cut into large pieces
1 bay leaf
1 1/2 cups (354 ml) low sodium chicken stock or broth, warm * see note
1 tablespoon flour (or corn starch for gluten free)

Steps:

  • Preheat oven to 400°F/200°C with the rack in the center of the oven.
  • Dry the outside of your turkey breast.
  • For the herb butter: To a bowl, add the softened butter, rosemary, sage, parsley, salt and pepper, mix well.
  • For the turkey:Lift the skin of the turkey breast and spread some of the butter between the meat and the skin. Spread the rest of the butter all over the turkey. Wash your hands well after handling raw meat.
  • To the bottom of your roasting dish, add the carrots, celery, parsnips, garlic, onion and bay leaf in an even layer, pour the warm chicken stock. Lay the turkey breast, skin-side up on top of the vegetables.
  • Roast for 45 minutes, turn down the heat to 350°F/177°C, then continue to roast for a further 20-30 minutes. The duration of last part of roasting will depend on how hot your oven runs. Check the internal temperature with a meat thermometer and remove from the oven when the temperature at the thickest part of the meat is 162-165°F. It will continue to cook when resting.
  • Take the turkey breast out of the pan and set on a cutting board, cover lightly with foil. Remove the vegetables and add to an oven-proof dish put them back in the oven (turned to very low) to keep warm.
  • Strain the turkey drippings into a small saucepan and add more stock to make 1 cup (236 ml) if needed.
  • Sprinkle flour or cornstarch into a small bowl and whisk in a little chicken stock until there are no lumps. Bring the turkey drippings to a simmer and slowly add the flour mix while whisking. Simmer until thickened, taste for salt.
  • Slice the turkey and serve with the gravy and your favorite sides.
