1 jar (10 oz) maraschino cherries, drained, 1/4 cup liquid reserved
1 box Betty Crocker™ Super Moist™ devil's food cake mix
1 cup cherry cola carbonated beverage
1/2 cup vegetable oil
3 eggs
1 container Betty Crocker™ Whipped vanilla frosting
1 cup marshmallow creme
24 maraschino cherries with stems, well drained, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. Chop cherries; set aside.
  • In large bowl, beat cake mix, cola beverage, oil, eggs and 1/4 cup reserved cherry liquid with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in chopped cherries. Pour into pan.
  • Bake 34 to 42 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small bowl, mix frosting and marshmallow creme until smooth. Frost cake. Top each piece with 2 cherries with stems. Store loosely covered.

Jimi's birthday falls at the end of October, and I sometimes make this silly chocolate cherry cola cake for him, decorating the top with chocolate cherry cordials or gummy candies. I always let him choose what he's got a hankering for, and it's often this.

Cake:
1 Box Devil's Food cake mix
1 cup (8 ounces) cherry cola
1/2 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
One 10-ounce jar maraschino cherries, drained (reserve 1/4 cup of the liquid) and chopped
Frosting:
1/3 cup butter, at room temperature
4 1/2 cups powdered sugar, sifted
1/4 cup milk
1 1/2 teaspoons vanilla extract
One 7-ounce jar marshmallow crème
18 fresh cherries, chopped

Steps:

  • 1. Make the cake: Preheat the oven to 350°F. Grease a 9 x 13- inch cake pan.
  • 2. Whisk together the cake mix, cherry cola, oil, eggs, vanilla, and the reserved cherry juice in a large bowl until well combined. Stir in the maraschino cherries. Pour the batter into the cake pan and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool in the pan for at least 1 hour.
  • 3. Make the frosting: Using an electric mixer, beat the butter in a large bowl until fluffy. Gradually add 2 cups of the powdered sugar. Slowly beat in the milk and vanilla, then beat in the remaining powdered sugar. Add the marshmallow crème and mix well, then fold in the cherries. Frost the cooled cake in the pan.

1 tablespoon pure vanilla extract
1 cup cherry cola, warmed in microwave for 1 minute
Red Licorice Filling, recipe follows
2 cups crushed yogurt-covered pretzels
Marshmallow Frosting, recipe follows
Cherry Cola Glaze, recipe follows
5 ounces red licorice (about 10 jumbo pieces) (recommended: Red Vines)
2 cups water
1 1/2 cups granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 egg yolks, slightly beaten
8 egg whites
2 cups granulated sugar
3/4 teaspoon cream of tartar
1 teaspoon pure vanilla extract
3 to 5 teaspoons cherry cola
3/4 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, half-and-half, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the warmed cherry cola until fully combined.
  • Fill the cupcake liners three-quarters full with batter and bake until the cupcakes spring back when touched with your finger, 10 to 15 minutes. Let cool in the pans for a few minutes, and then remove to a wire rack to cool completely.
  • Fill each of the cupcakes with Red Licorice Filling. Sprinkle the crushed yogurt covered pretzels on top. Top with Marshmallow Frosting and drizzle with Cherry Cola Glaze.
  • Tear the licorice into 1 inch pieces and place in a saucepan with the water over medium heat until it comes to a boil. Remove from the heat and let cool. Whisk in the sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick and bubbly. Continue to cook for 1 minute, and then remove from the heat. Cool to room temperature.
  • Place the egg whites, sugar, and cream of tartar in a heat-safe bowl over a saucepan with boiling water. Whisk constantly over the heat for 1 to 3 minutes. Once the sugar has dissolved, remove from the heat and beat with an electric mixer on high until stiff peaks have formed, 5 to 7 minutes. Stir in the vanilla extract.
  • Add the cherry cola, 1 teaspoon at a time, to the powdered sugar until it has a good consistency to drizzle on cupcakes.

2 1/2 cups cola, such as Dr. Pepper
1 stick (8 tablespoons) unsalted butter
1/2 cup vegetable oil
2 cups granulated sugar
1/2 cup sour cream
1/2 teaspoon vanilla
2 large eggs, lightly beaten
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine salt
2 tablespoons unsalted butter
2 tablespoons unsweetened cocoa powder
4 to 6 tablespoons cola, such as Dr. Pepper
1 cup confectioners' sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a bundt pan with cooking spray.
  • Bring the cola to a boil in a medium saucepan over medium-high heat and reduce down to about 1 1/4 cups, about 12 minutes. Reserve 1/4 cup in a separate bowl. Add the butter and oil to the remaining cola in the pan and cook over medium-low heat until the butter is melted. Add the granulated sugar and stir until it is mostly dissolved. Take off the heat and let cool, then whisk in the sour cream, vanilla and eggs.
  • Whisk together the flour, baking soda, baking powder and salt in a large bowl. Add the cola mixture and whisk until incorporated. Pour the batter into the prepared bundt pan and bake until a wooden skewer inserted into the center comes out clean, about 1 hour 10 minutes. Let the cake cool in the pan for 5 minutes.
  • Set a cooling rack over a parchment-lined baking pan. Invert the cake onto the rack. Poke the cake all over with a wooden skewer, then spoon the reserved cola reduction all over the cake. Let cool completely.
  • For the glaze: Combine the butter, cocoa powder and 2 tablespoons of the cola in a medium saucpan and cook on medium low until the butter is melted. Stir to combine, then stir in the confectioners' sugar until incorporated. Add the additional cola, about a half tablespoon at a time, until the mixture is a thick drizzling consistency.
  • Drizzle the glaze over the cake.

  • Cook and stir until sugar is dissolved.
  • Remove from the heat; stir in chocolate and rum until smooth.
  • Pour over cherry mixture; do NOT stir. This was very liquidy (sorry about the new word) but it works out.
  • Put a sheet of paper toweling between the slow cooker and lid to absorb the condensation. I changed mine once during the 2 hours.
  • Cover and cook on high for 2 to 2 1/2 hours or until set. Mine was set in 2 hours BUT I have an old crock pot.
  • Turn off the heat; let stand for 30 minutes.
  • Serve warm with ice cream and maraschino cherries.
