BACON WRAPPED STEAK
This is my favorite steak ever so when you cook it I hope you enjoy. I learned different techniques from Gordon Ramsey and Jamie Oliver videos and made this recipe from what I learned.

Steps:
- preheat oven to 420 degrees F.
- wrap each steak with a strip of bacon.
- put the olive oil in a large pan and heat the pan until you can move the olive oil around easily.
- put your steaks in the pan and if you hear a sizzling noise that is good if not take the steaks out and heat it longer.
- cook the steaks for 1 min on each side.
- place the rosemary (or thyme) sprigs, garlic, and butter in the pan with the steaks.
- flip steaks and continue to cook them 1 minute on each side until they have cooked a total of 3 minutes on each side.
- put the steaks in the oven for 8 mins .
- remove steaks from the oven and let them rest for 2 minutes.
- remove the rosemary (or thyme) sprigs and the garlic from the pan, leaving all of the liquid.
- pour red wine into the liquid left over in the pan.
- cook the juices and red wine over low heat until boiling.
- add the juice from the meat resting pan into the mix of liquids left over in the pan and it makes an amazing sauce.
- plate the steak and pour the sauce over it. ENJOY!

COCOA-RUBBED STEAK WITH BACON-WHISKEY GRAVY

- Make the steak: Mix the cocoa powder, both paprikas, brown sugar, cayenne and 2 teaspoons salt; rub on the steak and bring to room temperature, 30 minutes.
- Make the gravy: Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 5 minutes. Remove to paper towels with a slotted spoon; set aside. Add the leek to the drippings and cook until soft, about 3 minutes. Add the flour and cook, stirring, 1 minute.
- Remove the skillet from the heat. Add the whiskey, then return to medium heat; if the alcohol ignites, let the flames die out. Bring to a simmer and cook, stirring occasionally, until slightly thickened, about 2 minutes. Add the chicken broth and bay leaves. Bring to a boil over medium-high heat and cook until the mixture is reduced by one-quarter, about 8 minutes. Whisk in the heavy cream and simmer, stirring occasionally, until the gravy coats a spoon, about 7 minutes. Stir in the butter, reserved bacon and parsley; season with salt and pepper. Keep warm.
- Heat a large cast-iron skillet over high heat, about 3 minutes. Add 1 tablespoon butter; when it melts, add the steak and sear until a dark crust forms, about 8 minutes per side. Transfer to a cutting board and let rest 5 minutes. Season with salt. Slice and serve with the gravy.
BACON WRAPPED BEEF TENDERLOIN STEAKS WITH SPINACH AND CHEESE CAKES

- Defrost spinach in microwave. Wring spinach dry by nesting in kitchen towel and twisting towel over garbage bowl or sink until spinach has given off all of its liquid. Place spinach in a medium mixing bowl. Heat a nonstick skillet over medium heat, add oil and onion and saute the onion until soft, 5 minutes. Add onion to spinach in bowl and return pan to stove top. Turn off heat.
- Add remaining ingredients to spinach: bread crumbs, cheese, egg, nutmeg, salt and pepper. Combine mixture with a fork, then form into 3-inch patties. Set aside.
- Line bacon up on meat-safe cutting board a few inches apart. Preheat a second skillet over high heat. Reheat the spinach cakes skillet over medium high heat. Season steaks with salt and pepper and set on bacon slices in the center of each slice. Wrap bacon over steaks. Place seam side down in pan and cook 2 minutes on each side. Add 2 tablespoons oil to spinach cakes pan and set cakes in to cook. Work in 2 batches if necessary. Cook cakes 3 minutes on each side.
- Reduce heat to medium under steaks after the first 2 minutes on each side. Cook meat another 6 to 10 minutes, turning occasionally, for medium rare to medium well doneness.
- Remove meat from the pan and let it rest. Add 1 tablespoon of the butter and flour and cook together 1 minute. Whisk in wine and deglaze pan. Whisk in broth and thicken sauce 1 minute. Add remaining tablespoon butter and remove skillet from heat.
- Quarter tomatoes lengthwise.
- To serve, set the spinach cakes and steaks beside each other on 2/3 of serving plates and pour sauce evenly over steaks. Scatter a quartered tomato next to spinach cakes on each plate. Drizzle tomatoes with oil, season with salt and pepper and top with chopped chives. Serve plates immediately.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Brush the filets with olive oil, and cook on the preheated grill to desired doneness (about 4 minutes per side for medium rare). An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Set the steaks aside on a platter tented with aluminum foil to rest.
- While the steaks are resting, prepare the sauce: cook and stir the chopped bacon in a small saucepan over medium heat until the bacon pieces are crisp, 3 to 5 minutes. Stir in the butter and shallots, and cook and stir until the shallots are soft and translucent, about 5 minutes more.

- Season the bacon chops with pepper (no need to add extra salt). Heat the oil in a non-stick frying pan, then sizzle and brown the chops over a medium heat for 5 mins, turning once. Lift onto a plate.
- Add the butter to the pan. Once it looks foamy, stir in the onion and thyme, and fry very gently for 15 mins until the onion is soft and golden. STEAK WITH CREAMY BACON SAUCE

- Heat a cast iron pan to medium high. Add the bacon to the pan and cook it on both sides until crispy. When it is done cooking place it on a paper towel to drain the extra fat.
- Season the beef steaks with salt and pepper and add them to the pan with the sizzling bacon fat. Add the garlic cloves (whole) in the pan. Sear the steaks 3-4 minutes per side (depending on the thickness and desired temperature).
- Remove the steak on a cooling rack and allow at least 5 minutes of rest time before slicing.
- Remove and discard the garlic cloves from the pan. Reduce the heat to a low temperature and add the cream. Then add the liquid smoke (optional) and the parmesan and start stirring. Keep the temperature low and continue stirring. The sauce should thicken in 4-5 minutes. Then chop the bacon to small pieces and add it to the cream.
- Taste the sauce for seasoning before serving. Add salt and pepper if needed. Serve the steak drizzled with the sauce.
BACON FAT BASTED STEAK
The next time you're cooking bacon, whatever you do, don't toss the fat! Instead, let it cool down in the pan, then strain it through a coffee filter into an airtight container. Stash it in the refrigerator and use a few tablespoons to baste steak on the stovetop to impart richness and a subtle bacon-y flavor.

- Remove the steak from the refrigerator 30 minutes before cooking.
- Heat a large heavy-bottomed skillet over medium-high heat. Pat the steak dry and season generously with kosher salt and pepper on all sides. Stand the steak up on the strip of fat in the skillet and hold it with tongs until the fat renders and the skillet is slick, about 2 minutes.
- Place the steak flat in the skillet and sear until deep brown on one side, 4 to 5 minutes. Turn and cook the other side until starting to brown, 2 to 3 more minutes. Reduce the heat to low. Add the rosemary and garlic to the skillet and spoon the bacon fat over the steak. - Transfer to a cutting board and let rest 10 minutes. Slice the steak against the grain. To serve, spoon the rosemary-infused bacon fat over the slices and sprinkle with flaky salt.
STEAK SANDWICHES WITH BACON AND BLUE CHEESE

- Put the contents of the salad kit in a medium bowl and toss to coat with the dressing; set aside.
- Heat the vegetable oil in a large cast-iron skillet over medium-high heat. Combine 1 1/2 teaspoons black pepper and the red pepper flakes in a small bowl. Season the steaks with salt on both sides and sprinkle with the pepper mixture, pressing to adhere. Add the steaks to the skillet and cook 2 to 3 minutes per side for medium rare. - Wrap 1 slice of bacon around the edge of each steak, and secure with a wooden pick.
- In a medium skillet, heat oil over medium-high heat. Cook steaks for 4 to 6 minutes per side, or until steaks reach desired degree of doneness.
- In a small bowl, combine brown sugar, butter, and chipotle mustard. Spread on steaks, and cook briefly to melt sauce. Serve immediately.

- Place bacon in a large skillet and cook over medium-low heat, turning occasionally, until evenly browned, about 5 minutes. Drain bacon bits on paper towels.

- Sauce.
- In a large frying pan heat oil over high heat.
- Add onions and lower the heat to medium.
- Add salt& pepper mix thoroughly.
- Sweat onions down for about 15 minutes stirring often.
- You want the onions very soft.
- Add sugar and reduce heat to low.
- Mix well& cook 5-10 minutes or until most of liquid is absorbed.
- Add balsamic vinegar.
- Mix well cook for 20-40 minutes until sauce becomes a dark rich syrup.
- Steak.
- Pre-heat ove to 450 degrees.
- Heat oil in a oven proof skillet.
- Wrap a piece of bacon around each filet, secure with toothpick if needed.
- sprinkle steaks with crushed peppercorns.
- Sear each side of filets about 2 minutes.
- Place skillet in oven and bake 10 minutes.
- Steakes will be medium rare.
- Remove filets from skillet.
- Allow to rest 1-2 minutes Pour warm sauce over top& serve.

- Pour heavy cream into a saucepan and bring to a boil over medium heat. Reduce heat and simmer until the cream has reducud by half, stirring occassonally, about an hour. Remove from heat and whisk in the Gorgonzola cheese and Parmesan cheese, salt, pepper and nutmeg, until the cheese has melted.
- Season the beef tenderloin with lemon pepper, garlic powder, onion powder, salt and pepper; set aside. Place the bacon in a large, deep skillet and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate; set aside.
- Pre-heat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook the steaks until they start to firm and are reddish-pink and juicy in the center, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees. Remove the steaks from the grill and tint with foil to rest for 5 to 10 minutes. Serve each steak with the Gorgonzola sauce and top with crumbled bacon and chopped green onion.
