HONEY DIJON ROASTED PORK TENDERLOIN

You only need 5 ingredients and about 5 minutes to prepare this tender, juicy, and healthy Honey Dijon Roasted Pork Tenderloin!

1 (1 lb.) pork tenderloin
2 tablespoons stone ground Dijon mustard
2 tablespoons honey
1 teaspoon minced fresh thyme or rosemary leaves
1 sweet onion (thinly sliced)
Salt and pepper (to taste)

Steps:

  • Preheat oven to 400°F. Grease a baking dish or roasting pan.
  • In a small bowl, stir together mustard, honey, and thyme or rosemary.
  • Place sliced onion in a single layer in the bottom of the prepared dish.
  • Pat the pork dry. Season with salt and pepper on all sides, and then place on top of the sliced onions in the dish.
  • Brush about half of the mustard mixture over the pork.
  • Cover with foil and bake for 25 minutes.
  • Turn the oven setting to "BROIL" on high.
  • Remove the cover, brush the pork with additional mustard sauce, and place about 4-6 inches under the broiler for about 5 minutes, or until a crispy crust forms on top and the pork reaches an internal temperature of 140-150°F.
  • Remove the dish from the oven and allow the pork to rest for about 10 minutes before slicing and serving. Garnish with additional fresh herbs, if desired.

1 (4-pound) pork loin
3 tablespoons grapeseed oil
1/4 cup Dijon mustard
1/2 cup Irvine Spices Roasted Garlic Pepper Seasoning
1/4 cup white wine
16 ounces prepared brown sauce or gravy
Salt and freshly ground black pepper
1 teaspoon very finely chopped rosemary leaves

Steps:

  • Early in the day, rinse pork loin to remove any unwanted smells and pat dry with paper toweling. In a large saute pan, heat the oil and sear the pork loin on all sides. Remove pork to a utility platter and coat liberally with mustard, then roll in Roasted Garlic Pepper Seasoning. Leave refrigerated for 2 hours.
  • Preheat oven to 350 degrees F.
  • Transfer pork to a covered roasting pan or a large saute pan with an oven safe handle, and roast covered in oven until fork tender, at least 45 minutes. (Remember to use oven mitts when removing the pan from oven.) Transfer pork to a utility platter and let rest in a warm place before slicing. Add white wine to the roasting pan and swirl to combine flavors with the juices in the pan. Place roasting pan over medium heat (or transfer to a small saucepan) on the stovetop and let reduce slightly. Add the prepared brown sauce to the roasting pan juices and wine. Cook the gravy for a few minutes to integrate flavors and to thicken. Season with salt and pepper and strain the sauce. Lay slices of pork loin on serving dish and spoon brown sauce over. Garnish with chopped rosemary.

3 tablespoons chopped fresh tarragon
1/2 teaspoon fresh ground black pepper
2 (1 lb) pork tenderloin, trimmed
1 tablespoon olive oil
1 1/2 cups whole berry cranberry sauce
2 teaspoons chopped fresh tarragon
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • For the pork: combine the first 3 ingredients in a large heavy-duty zip-lock plastic bag; add in pork, seal bag, and marinate 8 hours in the refrigerator, turning bag occasionally.
  • Preheat oven to 400°.
  • Take tenderloins out of bag; discard marinade.
  • Heat oil in a large ovenproof skillet over med-high heat.
  • Add in pork; cook 4 minutes, browning all sides.
  • Place skillet in oven; cook for 15 minutes or until thermometer registers 155°.
  • Remove from heat and let stand 5 minutes.
  • Cut pork into 1/4-inch slices; keep warm.
  • To make the sauce: combine all the sauce infredients in a saucepan; cook over medium heat for 5 minutes or until well heated, stirring occasionally.
  • Serve sauce with pork.

This is adapted from Miss Vickie's Big Book of Pressure Cooker Recipes. The original Recipe calls for more sour cream and flour, I reduced them to change the final sauce consistency to my personal preference. The Dijon gives the sauce a slight bite, and the roast is juicy, tender and perfectly done. Miss Vickie's directions specify not to remove the netting, but I find that removing it after cooking pulls off the brown crust, so I remove it and tie with kitchen string before browning.

2 tablespoons olive oil
1 tablespoon butter
2 1/2 lbs boneless pork loin roast, net removed and retied with kitchen string
1 medium onion, chopped
3/4 cup white wine
2 tablespoons Dijon mustard
1/2 cup sour cream
1 tablespoon flour

Steps:

  • In your pressure cooker, heat the oil and butter over medium heat.
  • Add the roast, and brown on all sides, then remove from the pressure cooker and set aside.
  • Add the onions, and cook for a few minutes, until they start to soften.
  • Add the wine and mustard to the onions, and stir to combine.
  • Place the roast back in the cooker, lock the lid, and raise the temperature to high.
  • Once the pot has reached 15psi, lower the heat (still maintaining pressure) and cook for 40 minutes.
  • Release the pressure, and carefully remove the roast from the pot. Cover it and keep in a warm place until the sauce is completed.
  • Skim any excess fat from the liquid in the pot, if needed, then bring back to a boil.
  • Combine the sour cream and flour in a small bowl, then remove the pot from the heat and add the sour cream mixture, whisking to form a sauce.
  • Serve the roast and sauce.

½ teaspoon ground sage
garlic salt to taste
1 (32 ounce) jar sauerkraut, drained
½ apple
½ onion
⅓ cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub tenderloin with sage and garlic salt. Place tenderloin in a baking pan or casserole. Cover meat with half of the sauerkraut. Place the apple and onion, cut side down, on top of the sauerkraut. Cover with remaining sauerkraut. Sprinkle with brown sugar.
  • Cover and bake in preheated oven for 2 to 3 hours, until the internal temperature has reached 145 degrees F (63 degrees C).

4 -5 lbs rolled boneless pork loin roast
8 large garlic cloves (halved) (optional)
2 tablespoons olive oil
2 teaspoons dried thyme
1 teaspoon salt
1 teaspoon sage
1/4 teaspoon allspice
black pepper
2 (12 ounce) jars orange marmalade
1/4 cup Dijon mustard
1/4 cup Worcestershire sauce
1 teaspoon ginger powder
5 fresh minced garlic cloves

Steps:

  • Set oven to 325 degrees F.
  • Lightly grease a 13" x 9" baking dish.
  • Using a small sharp knife slice small slits all over in the roast, then stuff the garlic clove halves into the slits (this is only optional I like to do this).
  • Rub the olive oil all over the roast.
  • In a small bowl combine first 5 spice ingredients; rub spices all over pork loin to coat evenly.
  • Place the roast in prepared pan.
  • Bake for 1 hour.
  • Remove from oven and cover with foil; bake for 30 minutes more, or until a roast tests done.
  • Meanwhile in a saucepan, combine all sauce ingredients; bring to a boil over medium heat, stirring until the ingredients are well combined and the marmalade has softened.
  • Serve pork loin with the sauce.
  • Note: the sauce recipe yields approx 2 cups, if desired, the sauce may be doubled.

2 ½ pounds whole pork tenderloins
