1 cinnamon stick
3cm piece ginger , peeled and chopped
2 lime leaves , torn
½ tsp black peppercorns
2 garlic cloves , chopped
3 star anise , broken
1 ½kg boned pork belly joint, scored across (this makes it easier to slice)
a little olive oil
3cm piece ginger , peeled and grated
2 tsp ground cinnamon
¼ tsp black peppercorns
2 tsp dried chilli flakes
1 tbsp groundnut oil
3 shallots , finely chopped
2 red chillies , deseeded and finely sliced
4 garlic cloves , finely chopped
3cm piece ginger , peeled and grated
1 ½ tbsp soft light brown sugar
2 lime leaves , left whole
1 tbsp fish sauce (nam pla)
2½ limes , juiced
100g crunchy peanut butter
¼-½ tsp tamarind paste
cooked rice and stir-fried greens, to serve

Steps:

  • Pound all of the ingredients for the spice rub together using a pestle and mortar. You'll end up with a coarse mixture. Transfer to a small bowl. Heat oven to 220C/200C fan/gas 7.
  • To prepare the spices that will be simmered with the pork, pound the cinnamon, ginger, lime leaves and peppercorns using a pestle and mortar to a rough paste. Add the garlic. Roughly break up the star anise - it's much too strong if you pound it - and add that too. Tip the spice mixture into a flameproof roasting tin that the pork will fit into. Lay the pork on top, skin-side down. Add enough boiling water to come just up to the level of the meat. Bring to a simmer on the hob and cook for 20 mins.
  • Take the pork out of the water and pat it dry. Discard the water and spices in the tin, wash and dry. Set a rack inside the roasting tin and lay the pork on top, skin-side up. Spread the spice rub over the pork, then drizzle on a little oil and rub all over the pork. Sprinkle over some sea salt, put in the oven and cook for 20 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for a further 45 mins. Finish under the grill for 10 mins to crisp up the skin.
  • Make the sauce while the pork is cooking. Heat the oil in a frying pan and cook the shallots over a medium heat until golden. Add the chilli, garlic, and ginger and cook for 2 mins, then add the sugar. Cook until the sugar caramelises - be careful not to burn it - then quickly add 300ml water (it will sizzle and spit a bit). Stir in the lime leaves, fish sauce, lime juice and peanut butter. Bring to a simmer, stirring to break down the peanut butter. Taste. I usually add a little tamarind paste, but you might prefer to add more lime juice or fish sauce. Serve the pork belly with the sauce, rice and greens.

This is a beautiful basic recipe that gives you melt-in-your mouth juicy pork belly with incredible crackling - and it works every time. Carve it up for a mighty roast, or continue slow-cooking until it's soft enough to pull with two forks. Massive smiles guaranteed.

4 kg piece of higher-welfare pork belly, bone in
6 bay leaves
2 tablespoons sea salt
2 tablespoons coriander seeds
2 tablespoons fennel seeds
2 tablespoons black peppercorns
4 onions
300 ml dry cider
3 tablespoons plain flour
VEG
4 carrots
4 potatoes
4 sticks of celery
2 bulbs of fennel
4 sprigs of fresh rosemary
1 bulb of garlic

Steps:

  • Leave the pork uncovered in the fridge overnight to dry out the skin.
  • Preheat the oven to full whack (240°C/475°F/gas 9).
  • Carefully score the pork skin with a sharp knife or scalpel.
  • Place the bay leaves in a pestle and mortar with the sea salt and give it a good bashing. Add the coriander seeds, fennel seeds and peppercorns, then bash again until fine.
  • Rub 2 tablespoons of the flavoured salt all over the pork, massaging it into all the nooks and crannies, saving the rest for another day. Brush away any excess.
  • Clank up the onions into wedges and arrange them skin-side up in rows. Lay the pork directly over the onions, then roast for 40 to 50 minutes, or until the crackling is golden and super crunchy.
  • Meanwhile, prepare the veg. Scrub the carrots and potatoes, trim the celery and fennel, then clank up into 2½cm chunks and place on a large baking tray. Pick over the rosemary leaves, then break up the garlic bulb and scatter over the cloves, leaving the skin on. Season with salt and pepper, then give it a good mix.
  • Remove the pork from the oven and reduce the temperature to 150°C/300°F/gas 2.
  • Using tongs, carefully lift the pork off the onions and place it directly on the top bars of the oven. Position the tray of veg exactly underneath to catch the tasty juices. Cook the pork for a further 2 to 4 hours - after 2 hours, the meat will be soft and easy to carve, after 4 hours, the meat will be soft enough to 'pull'. Toss the veg occasionally, turning to coat in the pork juices until caramelised and cooked to your liking, then remove. (Pop an empty tray under the pork to prevent the juices from making a mess in your oven.)
  • To make the gravy, carefully drain the fat from the onions and reserve for another day. Place the tray on the hob over a medium heat, then pour in the cider and let it bubble away for a few minutes, scraping up all the sticky goodness from the base of the tray.
  • Gradually stir in the flour, then pour in 1.5 litres of boiling water and stir on the heat for 15 minutes, or until thickened and reduced.
  • When it's time to dish up, arrange the veg on a serving platter with the pork and strain the gravy into a jug. Carve or pull the pork and plate it up with a little bit of everything. Delicious served with a simple watercress and apple salad, and a dollop of English mustard.

This is absolutely a wonderful, lazy Sunday afternoon recipe. The peanut sauce is to die for, you could use it for satays, etc. I order the shoulder roast from my butcher when we need (crave) this meal. Prep time does not include marinading time.

1 cup regular-strength chicken broth, heated
1/3 cup sugar
1/4 cup soy sauce
2 tablespoons rice wine or 2 tablespoons sherry wine
4 -5 lbs boned and tied pork shoulder
1 cup water
2/3 cup creamy peanut butter
2 cloves garlic, minced
2 tablespoons firmly packed brown sugar
1 1/2 tablespoons lemon juice
1 tablespoon soy sauce
1/4-1/2 teaspoon crushed red pepper flakes

Steps:

  • In a large bowl, stir together hot broth, sugar, soy sauce and rice wine or sherry.
  • Stir till dissolved.
  • Add pork and turn to coat (or put pork in a heavy-duty, plastic, food-grade bag and add marinade).
  • Cover and refrigerate until the next day, turning several times.
  • Lift meat from marinade and drain briefly, barbecue on a rack by indirect/medium-hot heat in a gas grill, or over a drip pan, indirect heat on a charcoal grill.
  • Grill until a meat thermometer inserted in thickest part registers 170° (2-2 1/2 hours).
  • To serve, let meat stand for 10 minutes.
  • Meanwhile, prepare Peanut Sauce.
  • Cut meat across the grain into thin slanting slices.
  • Serve with sauce.
  • Peanut Sauce: In a 2 Qt pan, combine water, peanut butter and garlic.
  • Cook over medium-low heat, stirring, until mixture boils and thickens.
  • Remove from heat and stir in brown sugar, lemon juice, soy sauce and crushed red pepper.
  • Serve hot.
  • If made ahead, cover and refrigerate for up to 2 days.
  • To reheat, stir over low heat until hot, adding more water, if needed, to restore to original consistency.

750 g pork belly
10g salt
15g sugar
1/2 tsp ground white pepper
1 tsp Chinese five-spice powder
1 tbsp Shaoxing wine
1 tsp hoisin sauce (optional)
1 tbsp white vinegar
1/2 tsp baking soda
2 tsp oil

Steps:

  • Bring a pot of shallow water to a boil. Blanch the pork belly in water for 10 minutes, skin side down. After blanching, remove the pork and let it cools.
  • Scrape the skin with a knife to remove any dirt and remaining hairs.
  • Prick multiples small hole on the skin with a small fork.
  • Make a few shallow cuts on the flesh side of the pork, halfway through the meat.
  • Mix all the marinade ingredients. Combine the seasoning in a small bowl, then massage it all over the meat, particularly between the cuts.
  • Keep the skin clean from the marinade.
  • Mix one tablespoons of white vinegar with a half teaspoon of baking soda in a small bowl. Apply a thin layer of the mixture on the skin.
  • Keep the pork in the fridge overnight.
  • Remove the pork belly from the refrigerator at least one hour before roasting so that the pork returns to room temperature.
  • Sprinkle half a teaspoon of salt on the skin just before it goes in the oven. Wipe off the excess moisture.
  • Apply a thin layer of oil on the skin. Roast the pork on a medium rack for 1.5 hours at 150°C.
  • Now place the pork on the top rack. Change the oven setting to 230°C, top heat only for thirty minutes, or until the skin has turned to golden brown with multiple blisters.

  • Place the pork belly on a wire rack set over a plate (to catch any drips) and refrigerate, uncovered, for 24 hours to dry the skin out and make it more crispy. If you have time, then 2 days is even better.
  • Preheat the oven to 190C (170C fan-forced). Transfer the pork belly to a roasting tin, then, using a sharp knife, score the skin deeply in a diamond pattern and rub generously with sea salt. Roast the pork for 20 minutes, then reduce the temperature to 170C (150C fan-forced) and roast for a further 20 minutes or until the meat is cooked through and the skin is blistered and crisp.
  • Remove the pork from the oven, cover with foil and set aside in a warm place to rest for 20 minutes. Cut the pork belly into 2cm cubes.
  • To make the salad, place all the ingredients in a bowl and toss together, then add the pork and mix through. Season with sea salt, divide onto 4 plates and serve with a little white rice.

Cook the pork uncovered for about 45 minutes or until fork tender. Remove the pork to a plate. (Set aside the pork stock you have now created and use it for a ramen or noodle soup or cooking stock later!)
  • While the pork is cooking, chop the cilantro and scallion and set them aside separately. Finely mince the garlic cloves or use a garlic press and set that aside. Chop your peanuts and set them aside as well.

  • Now you are set to slice the pork. The best way to do it is to slice the pork while it is still warm and make your slices as thin as possible. We were in a hurry, so the slices in the picture a bit too thick. Then you can arrange the slices on a plate like I did, or you can toss the pork in the sauce. Taste for salt and adjust seasoning.

  • Put the pork in a colander and pour boiling water over the skin (the skin will tighten up). Dry the pork well and score the skin with a sharp knife at roughly 1cm intervals (scoring the skin will help the fat render out to create crispy crackling). Be careful that you do not cut too deep as to cut through the meat. Turn the pork over and slash a few shallow cuts in a criss-cross pattern into the meat side (so the five spice can be rubbed in to get more flavour into the meat).
  • Mix the five spice and oil together to form a paste. Rub the paste into the meat side only, getting well into the cuts. Do not get any paste on the skin (the skin should be kept as dry as possible). Place the pork in a dish or tray and rub salt into the skin, getting into the score marks. Place in the fridge, uncovered, to allow the pork to dry overnight or for at least 1 hour. Drain off any liquid that may have seeped out and pat the skin dry with a paper towel.
  • Preheat oven to 220 degC/430 Fahrenheit. Place the pork on a rack in a tray, skin-side-down, and roast for 15 minutes, then turn pork over so it is skin-side-up, and roast for 25-30 minutes, or until the skin crackles. Turn the oven on to grill for a few minutes to give the crackling a final blast, watching carefully that it doesn’t burn. Rest the meat in a warm place for 15 minutes while you prepare the sauce.
  • To make the sauce, heat oil in a fry pan and add garlic, shallot, chilli and ginger. Sautee garlic and shallots for 3-4 minutes, then add wine and allow to bubble rapidly before adding the remaining ingredients. Stir together and simmer sauce for 5-10 minutes to reduce down until it is slightly sticky.
