AUTUMN CHESTNUT SALAD

Ready-cooked chestnuts add an interesting bite to this seasonal salad

3 slices crusty bread , cut into small cubes
3-4 tbsp olive oil
70g pack lamb's lettuce
175g cooked chestnut , broken into bite-sized pieces
200g cooked beetroot (not in vinegar), peeled and diced
4-6 slices serrano ham , halved
1 eating apple
1 small red onion , thinly sliced
2 tbsp red wine vinegar
2 tsp Dijon mustard
4 tbsp walnut oil

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Toss the bread with the olive oil in a small roasting tin. Season with salt and pepper, spread out over a single layer, then bake for 12-15 mins until the bread is browned and crisp. Tip onto a plate lined with kitchen paper, then leave to cool.
  • For the dressing, mix the onion with the vinegar in a small bowl, then leave for 10 mins. Combine the mustard and oil, season with salt and pepper, then whisk until slightly thickened. Stir into the onions, then set aside.
  • Tip the lettuce into a large bowl. Add the chestnuts to the bowl with the beetroot. Heat a non-stick pan, add the ham, then fry quickly on each side until crisp. Just before serving, thinly slice the apple, then add to the bowl with the croutons. Add the dressing, then toss everything together until glistening. Pile onto 4 or 6 plates and set 2 pieces of ham on top of each.

An absolute classic British dish. A wonderful veggie centerpiece for Christmas. Well worth the effort. The rarebit can be made up to a week in advance.

225 g vegetarian Stilton cheese, chopped
100 g vegetarian cheddar cheese, grated
75 ml milk
25 g plain flour
25 g fresh white breadcrumbs
1/2 tablespoon English mustard powder
1/2 teaspoon balsamic vinegar
1 medium egg
1 medium egg yolk
450 g Brussels sprouts, trimmed and sliced
2 small onions, sliced thinly
50 g butter
150 g chestnuts, cooked peeled and chopped
450 g mashed potatoes (made without butter or milk)
25 g butter
9 medium parsnips, peeled and quartered cores removed
3 tablespoons cranberry jelly
150 ml strong vegetable stock
1/2 teaspoon lemon juice
60 g unsalted butter
1 teaspoon chooped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh sage

Steps:

  • For the rarebit:.
  • Put cheeses and milk in pan, heat gently until cheese has melted.
  • When gently bubbling add flour, breadcrumbs and mustard. Cook for a few minutes stirring until the mixture comes away from the sides of the pan. Add vinegar and leave to cool.
  • When cold place in a processor and while machine is running slowly add the egg and the yolk. When incorporated place in a plastic bag and chill minimum 2 hours maximum 1 week.
  • For the bubble:.
  • Blanch the sprouts in boiling water for 1 minute. Drain and run under cold water.
  • Line a roasting tin with a double layer of kitchen paper. Lay out the sprouts and cover with another double layer of paper. Weigh down to dry the sprouts.
  • Fry the onions in half the butter for 5 minutes and cool.
  • Add the sprouts and chestnuts to the onion and add the mash a little at a time mixing well until all the mash is incorporated.
  • Liberally grease a 8 inch loose bottom cake tin and place the ring section upside down in an frying pan and pack in the mash mix. Gently fry the mix in the ring until it has a golden crust, remove from heat.
  • For the parsnips:.
  • Heat the oven to 230°C.
  • Heat the butter in a roasting pan on the hob and cook the parsnips for 10 minutes Transfer to oven and roast for 30 minutes.
  • The parsnips should be crisp and deep brown almost overcooked. While hot coat with the cranberry jelly.
  • Pack the parsnips on top of the mash mix in concentric circles. Pack tightly.
  • If needed the cake can now be kept covered and chilled for several hours.
  • For the sauce:.
  • Place the stock, juice and 50g of the butter and bring to a simmer while whisking. If sauce is too thin add more butter. Add herbs just before serving.
  • To serve:.
  • Heat the oven to 200°C.
  • Take two thirds of the rarebit mix and roll out between two pieces of cling film. Make a disc big enough to top the cake.
  • The remaining rarebit mix can be melted onto bread, pasta or potatoes.
  • Lace the rarebit on the cake and bake for 30 minutes until heated through and the top is golden brown. Remove and serve in wedges with the sauce.

  • Preheat the oven to 200°C gas mark 6. Make a slit in the skin of each chestnut. Place in a small roasting tin and cook in the oven for 30 minutes until lightly charred and with split skins. Meanwhile, cut the parsnips in half lengthways then in half again. Parboil in simmering water for 5 minutes until starting to give when pierced with a knife, then drain thoroughly. Toss in a tablespoon of the oil and seasoning and arrange in a single layer in another small roasting tin. Cook in the oven for 30 minutes, turning once, until starting to brown.
  • Skin the chestnuts while still warm. Remove the parsnips from the oven and add the chestnuts and apple slices to the tin. Whisk together the honey and red wine vinegar and drizzle over the ingredients in the roasting tin. Stir to coat, then return to the hot oven for 5–7 minutes until golden and sticky, turning once or twice.
  • Arrange the rocket in a large serving bowl, add the roasted vegetables and then scatter over the crumbled goat’s cheese and mint. Whisk the sherry vinegar with the remaining oil and seasoning. Add to the salad and gently mix together. The cheese will begin to melt and combine with the dressing to coat the leaves. The chestnut skins may look blackened and burnt, but they will peel away leaving a wonderfully toasty flavour that pairs well with the mildly tangy cheese and sweet sour dressing.

  • In a large oven-safe pan cook the pancetta over medium heat until it’s rendered its fat. Remove the pancetta leaving the fat in the pan. Add a tablespoon of olive oil and the parsnips. Spread them in a an even layer, sprinkle with salt, and let them cook for a minute or two before giving them a stir. Once they’ve started to turn golden transfer the pan to the oven and roast them for 15-20 minutes, or until fork tender.
  • While the parsnips are roasting, make the salad. In a large bowl whisk the lemon juice, olive oil, and salt until combined. Add the arugula and gently toss until it’s coated with the dressing. Add the apple and toss again.
  • When the parsnips are roasted let them cool a few minutes before adding to the salad. Add the grated Parmesan and crispy pancetta, toss, and serve.
