L'ham M'hammar Recipe - Moroccan Roasted Lamb or Beef with Onion Confit image

M'hammar of Lamb or Beef falls into the category of dishes enjoyed by nearly everyone-even those who aren't normally fond of red meat. Lamb or beef is slow-cooked until tender enough to fall off the bone; it's then served with a spiced confit of onion. This is the signature presentation of a classic dish made with love and attention.

3.3 lbs. lamb or beef shoulder with bones, cut into 5 large pieces ((can also use leg or rack of lamb))
2 to 4 cloves garlic, (pressed or finely chopped)
1 tsp smen ((or ghee or olive oil))
1 1/2 tbsp sweet paprika
1 tsp salt, (or to taste)
1 tsp ground ginger
1/2 tsp ground black pepper
1/2 tsp ground white pepper
18 oz. of yellow onions, (finely sliced or chopped)
1 pinch saffron threads
1/3 to 1 cup water
2 to 3 tbsp oil, (mixed olive and vegetable oil)
3.5 oz. almonds (blanched and fried)

Steps:

  • Combine the spice rub ingredients in a bowl or with pestle and mortar. Rub the mixture over the meat and massage it thoroughly. Cover and leave in the fridge for at least 6 hours or overnight.
  • When ready to cook, transfer the meat to a heavy-bottomed, deep pot or pressure cooker. Add the sliced onions, saffron threads, water and oil. (Note: Use 1/3 cup water if preparing in a conventional pot and 1 cup water if preparing in a pressure cooker.)
  • If cooking in a regular pot, cover and simmer the meat for about 2 hours or until tender, checking occasionally to add a little water if the liquids appear to be drying out. If cooking in a pressure cooker, cover and cook with medium-low pressure for about 80 minutes or until tender, swirling the pot occasionally to be sure that liquids remain and the meat and onions aren't burning. Interrupt to add a little more water only if necessary.
  • The meat is cooked to proper tenderness when you can easily pinch it off the bone. When done, remove it from the pot and cover with plastic so it doesn't dry out.
  • If you are serving this dish in the next hour, place the meat in a 400° F (200° C) preheated oven for about 20-25 min, turning it occasionally to brown it on all sides. Adjust the browning to your liking.
  • In the meantime, continue cooking the onions, stirring frequently and taking care not to scorch them, until they have reduced to a paste-like texture. The cooking oil should be the oil liquid you see in the pot.
  • To serve, place the meat in a warm dish and surround it by the onion paste (daghmira). Traditionally it is eaten by hand directly from the platter, using pieces of bread in lieu of a fork.

1 5-to-7-pound leg of lamb, preferably at room temperature, shank removed if necessary
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper

Steps:

  • Heat the oven to 425º. Remove as much of the surface fat as is practical from the lamb. Mix the spices with the salt and pepper; rub the meat all over with the spice mixture.
  • Put the lamb on a rack in a roasting pan. (You might line the pan first with aluminum foil to make cleanup easier.) Roast for 30 minutes, then check. If the lamb threatens to burn, turn the heat down to 350º; otherwise leave it at 425º.
  • After about 1 hour (total) of roasting, check the internal temperature of the lamb with an instant-read thermometer. Continue to check every 10 minutes; when it reaches 130 for medium rare (125 for very rare) in its thickest part (check it in several places), it's done. Total cooking time will be less than 1 1/2 hours. Let it rest for a few minutes before carving and serving.

I was given a jar of Ras el Hanout, and this simple recipe by our chef son. He actually used the rub on our Christmas day quail, but we used it on lamb a few days later.

2 tablespoons ras el hanout spice mix
2 cloves garlic, crushed
1 tablespoon honey
1 limes, zest of or 1 lemon, zest of
1/2 limes, juice of or 1/2 lemon, juice of
salt & freshly ground black pepper
2 kg boneless leg of lamb, butterflied

Steps:

  • Mix all the ingredients (except the lamb) together to make a paste.
  • Stab a few holes in the lamb, and rub the mix into the lamb-massage it in well.
  • Set aside for about 1 hour, to allow the lamb to come to room temperature.
  • Cook over a hot grill (BBQ) for about 30 minutes (or until cooked to your liking), allowing it to rest loosely tented with foil, for a further 20.

LAMB:
2 1/2 to 3 pounds leg of lamb, boneless
SPICE RUB:
1 tablespoon ground turmeric
1 tablespoon smoked paprika
1 tablespoon fennel seeds
1/2 tablespoon cayenne pepper
1/2 tablespoon ground cinnamon
1/2 tablespoon ground cloves
Salt and pepper
3 cinnamon sticks
Large bunch of thyme
Olive oil
2 stalks of celery, roughly chopped
1 large onion, roughly chopped,
3 carrots, peeled roughly chopped,
3 tablespoons honey
LIME MUSTARD VINAIGRETTE:
2 tablespoons mustard
2 tablespoons olive oil
1 zest of lime
Juice from lime

Steps:

  • Preheat your oven to 300°F. Mix all the spices, salt and pepper in a tray. Cut three holes in the lamb with a small pairing night. In each hole place a bunch of thyme and a cinnamon stick. Repeat this process until it is complete. Now generously rub the spice mixture over the leg of lamb. Place a roasting over a high heat and add the olive oil. Next add in the celery, onion and carrots. Drizzle the honey over the vegetables to help the caramelization process. Add the lamb on top of the vegetables and start searing the meat. Drizzle some olive oil over the lamb with salt and pepper. Place the lamb in the oven, and cook for around one hour, or until the meat reaches an internal temperature of 135°F. Once the lamb is cooked, take it out of the oven and allow the lamb to rest for 10-15 minutes. To make the vinaigrette, mix together the lime, olive oil and mustard. When you are ready, slice the lamb and serve immediately and drizzle the vinaigrette on top. Also reserve the lamb juice and the roasted vegetables and serve along side.

For Moroccan Spice Rub:
1 tablespoon cumin seeds [or 1 tablespoon ground cumin]
1 tablespoon coriander seeds
1 teaspoon black peppercorns [or 1 teaspoon freshly ground black pepper]
1 tablespoon sweet paprika
1 teaspoon turmeric
1 teaspoon cinnamon
1/2 teaspoon allspice
20 threads saffron, finely broken
4 cloves garlic, minced
1/3 cup minced parsley
zest of 1 lemon
1/3 cup olive oil
1 leg of lamb, 5 to 6 pounds

Steps:

  • Make the spice rub. Toast cumin seeds and coriander seeds in a dry skillet over medium low heat, stirring frequently, for 5 or so minutes, until fragrant. Transfer to plate and let cool thoroughly. Grind cumin, coriander and peppercorns with a mortar and pestle or in a spice grinder. Combine the cumin mixture in a bowl with the remaining rub ingredients, stirring to thoroughly blend. Spread the rub evenly over the entire surface of the leg of lamb. Wrap the leg of lamb in plastic wrap and marinate, chilled, for 4 hours or longer. Remove from fridge for last half-hour of marinating to let it warm up slightly before roasting. Roast the leg of lamb. Preheat the oven to 350ºF. Lightly oil a baking pan and place the leg of lamb in a rack in the pan. Roast in the center of the oven for 15 to 20 minutes per pound, rotating the pan once halfway through. Variations in ovens and the size of the leg of lamb will cause cooking times to vary quite a bit. Use a quick-read thermometer to check the lamb well before you think it should be done. You're shooting for an internal temperature of anywhere from 130 to 145ºF. Remove from the oven and let it rest, tented lightly with foil, for 10 minutes before slicing and serving.
