Steps:
- Marinate lamb:
- Stir together garlic, onion, mint, savory, olive oil, lemon zest and juice, and cumin in a baking dish just large enough to hold lamb. Put lamb in dish and turn to coat, rubbing marinade into entire surface. Marinate lamb, covered and chilled, turning once or twice, at least 12 hours.
- Make aïoli:
- Mash garlic to a paste with kosher salt using a mortar and pestle (or mince and mash with a large heavy knife), then add 1 cup mint and pound to a paste (or mince and mash with knife). Transfer to a bowl and whisk in yolks, then add half of oil, 1 to 2 teaspoons at a time, whisking constantly. Whisk in lemon juice, then slowly add remaining oil, whisking. Season with salt and pepper and stir in warm water.
- Working with several leaves at a time, stack remaining cup mint leaves, then roll up and thinly slice crosswise to make a chiffonade (thin strips). Stir mint into aïoli and chill until ready to use.
- Roast lamb:
- Preheat oven to 400°F.
- Wipe all of marinade from lamb and discard. Pat lamb dry and season both sides generously with salt and pepper. Arrange lamb, boned side up, on a work surface and, beginning with a long side, roll up as tightly as possible and tie tightly with string.
- Heat vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown lamb on all sides, about 8 minutes. Transfer to rack set in roasting pan and roast in middle of oven until an instant-read thermometer inserted into lamb reads an average of 140°F for medium-rare (test in several places, as different muscles cook at different speeds; temperatures should range from 120 to 160°F), 40 to 60 minutes. Let stand 15 to 20 minutes before slicing.
- Serve lamb with aïoli.

Steps:
- Preheat the oven to 450 degrees F. Place the oven rack in the lower third of the oven so the lamb will sit in the middle of the oven.
- Peel 6 of the cloves of garlic and place them in the bowl of a food processor fitted with the steel blade. Add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Process until the garlic and rosemary are finely minced. Thoroughly coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.
- Toss the potatoes and remaining unpeeled garlic in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Place the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.
CROWN ROAST OF LAMB WITH MINT AND GREEN ONION PESTO

Steps:
- For the lamb: Preheat the oven to 250 degrees F.
- In a small bowl, combine the salt, pepper, coriander, cumin and fennel.
- Drizzle the olive oil over both sides of the racks of lamb, then evenly apply the dry rub all over the lamb.
- Using a sharp knife, make cuts between each of the rib bones on the back sides of the racks to allow the straight racks to be flexible and formed into a crown.
- Tie the 2 racks together where they meet. Lift them so that the bare bones point upward and fashion them into a crown, then secure by tying twine around the bottom and midsection.
- Place the crown roast onto a rack set in a rimmed baking sheet.
- Roast until a thermometer inserted into the meat (avoid touching bone) registers 110 degrees F, 50 minutes to 1 hour.
- For the pesto: Into the bowl of a food processor fitted with the blade attachment, add the mint, cilantro, almonds, salt, green onions, garlic and chile. Pulse, scraping down the sides of the bowl with a rubber spatula as necessary, until finely chopped. With the machine running, add 3/4 cup of the olive oil in a steady stream.
- Pour the pesto into a bowl. Add the remaining 3/4 cup olive oil and the lemon juice. Season to taste. Cover with plastic wrap and set aside, or refrigerate (bring to room temperature 30 minutes prior to serving the lamb).
- Remove the lamb from the oven and raise the oven temperature to 500 degrees F.
- Place a sheet of foil over the bones to keep them from burning. Roast the lamb until a meat thermometer inserted into the thickest part of a chop reaches 125 degrees F for medium-rare or 135 degrees F for medium, an additional 10 minutes. Tent the lamb with foil and allow to rest for 10 minutes. Remove the twine and carve into chops; serve with pesto on the side.
ROAST LAMB WITH MINT, CUMIN, AND ROAST CARROTS
Young carrots, no thicker than a finger and often not much longer, appear in the shops in late spring, their bushy leaves intact. Often, they have a just-picked air about them, their tiny side roots, as fine as hair, still fresh and crisp. At this stage they lack the fiber needed to grate well, and boiling does them few favors. They roast sweetly, especially when tucked under the roast. The savory meat juices form a glossy coat that turns the carrot into a delectable little morsel. I have used a leg of lamb here but in fact any cut would work-a shoulder or loin, for instance. The spice rub also works for chicken.

Steps:
- Put the lamb in a roasting pan. Peel the garlic and put it into a food processor with the cumin seeds, mint leaves, and lemon juice. Add a generous grinding of salt and some black pepper. Process to a coarse paste, adding enough olive oil to make a spreadable slush, thick enough to cling to the lamb.
- Massage the roast well with the spice paste, spreading it over the skin and into the cut sides of the flesh. Set aside in a cool place (preferably not the fridge) for an hour, basting occasionally with any of the paste that has run off.
- Preheat the oven to 400°F (200°C). Scrub the carrots and beets. If they are small, you can probably get away with a rinse. Either way, be careful with their skins, which are tender at this point in their life. Put the meat in the oven and roast for forty-five minutes to an hour, tucking the vegetables in around it after twenty minutes. The cooking time for the lamb will depend on how you like it done; forty-five minutes should give you a roast that is still pink and juicy inside. Remove from the oven and rest the meat for a good ten to fifteen minutes before carving and serving with the mint béarnaise below.
- If you want to make a gravy, transfer the meat and carrots to a warm place, put the roasting pan over medium heat, then pour in a large glass of wine or stock, or even water, and bring it to a boil. Stir with a wooden spoon, scraping away at the pan to dissolve any stuck-on meat juices. Let the gravy bubble a little, check it for seasoning (it may need salt and pepper), then keep it warm while you carve the lamb.
