1 tablespoon olive oil
2 teaspoons kosher salt
1 teaspoon black pepper
½ teaspoon dried thyme
4 cloves garlic, minced
1 (3 pound) beef eye of round roast
½ cup dry red wine (merlot or cabernet sauvignon)
½ cup beef broth
2 tablespoons cold butter, cubed
Reynolds Wrap® Aluminum Foil

Steps:

  • Combine the oil, salt, pepper, thyme and garlic into a paste, then rub all over the roast. Set aside at room temperature for 1 hour. Forty minutes into the hour, pre-heat the oven to 500 degrees F.
  • On a baking sheet, place two sheets of Reynolds Wrap® Aluminum Foil large enough to cover the roast. Place the roast on the foil sheets and transfer everything to the oven. Roast for 6 minutes per pound.
  • Remove from the oven. Fold up the foil so it wraps the roast then return it to the oven. Reduce the oven temperature to 170 degrees F and roast for one hour. After an hour, check the internal temperature with an instant-read thermometer: 120-125 degrees F will yield a rare center, 130-140 degrees F will yield a medium-rare center, and 140-150 degrees F will yield a medium center.
  • When the roast is finished, remove it and set it on a cutting board to rest. Transfer any drippings from the roast into a saucepan, then combine with the red wine and beef broth. Bring to a simmer over med-high heat and reduce by 1/4; reduce heat to medium-low and whisk in the cubes of butter one at a time until incorporated into the sauce. Add salt and pepper to taste and set aside.
  • Slice the roast into 1/2 inch thick slices and serve with the pan sauce poured on top.

1/4 cup lime juice
2/3 cup beer
2 garlic cloves, finely minced
1/4 teaspoon hot sauce
4 (4 ounce) boneless beef eye round steaks, 1-inch thick
salt and pepper

Steps:

  • Combine lime peel, lime juice, beer, garlic and hot sauce in a shallow, non-reactive container or a zip-lock bag.
  • Add steaks, turning to coat. Cover and refrigerate for several hours.
  • Cook steaks for 8 to 10 minutes, turning once. Salt and Pepper to taste.

This is a simple recipe for eye of round steak which I clipped about 20 years ago (my how time flies!!). The prep time does not include the marinating time.

2 lbs beef eye round, trimmed
1 tablespoon salad oil
1 tablespoon minced garlic
1 teaspoon crushed red pepper flakes
1/4 cup soy sauce
3 tablespoons white vinegar
3 tablespoons dry sherry
3 tablespoons chopped green onions

Steps:

  • Butterfly the roast.
  • To butterfly, cut the roast lengthwise through the center to 1/2 inch from bottom- being careful that you don't cut through.
  • In small skillet heat oil over medium high heat, add garlic and red pepper flakes and cook, stirring occasionally, 2 to 3 minutes.
  • Remove from heat and cool slightly.
  • Stir in soy sauce, vinegar, sherry and onions.
  • Place roast in a 1 gallon zip-loc bag and pour in marinade; turn to coat.
  • Put in frig, turning occasionally, 6 to 8 hours or overnight.
  • Preheat broiler; place roast on broiler pan, reserving marinade.
  • Broil 5 inches from heat source, turning once, 20 to 25 minutes for rare.
  • Slice thin and drizzle with reserved marinade.

pepper
1 cup dry white wine
1 (1 1/4 ounce) package dry onion soup mix
1 teaspoon olive oil

Steps:

  • Pepper roast and brown on all sides in 1 t olive oil.
  • Remove roast and place in aluminum foil in roasting dish.
  • Add onion soup mix and 1 cup white wine to skillet with roast dripping and bring to boil. Scrape up any brown bits from bottom of skillet.
  • Pour mixture over roast.
  • Seal roast completely in aluminum foil.
  • Bake at 350 degrees for 2.5-3 hours.
  • Remove, open packet and let rest for 15 minutes.
  • Slice and serve with gravy.

  • STANDARD METHOD - OVEN AT 350-DEGREES:.
  • Preheat oven to 350 degrees Fahrenheit.
  • Heat 2 tablespoons of olive oil in large skillet over medium high heat. Place roast in skillet and sear meat, browning well on all sides.
  • Place eye of round roast back into baking dish and bake at 350 degrees for 1 1/2 hours.
  • Remove from oven and let rest 5 minutes before slicing.
  • ALTERNATIVE OVEN METHOD (HIGH HEAT/NO HEAT):.
  • Preheat oven to 375 degrees Fahrenheit.
  • Place roast in oven, uncovered. Roast 1 hour.
  • Shut oven off and let it set for 2 1/2 to 3 hours, without opening oven door.
  • (If using 1/2 eye roast, roast 3/4 hour and let it set in closed oven for 2 1/2 to 3 hours.).
  • ALTERNATIVE ROTISSERIE METHOD:.
  • Place marinated roast in the rack or on the skewer, and cook 1 hour (or 1/2 hour for half eye of round roast). Turn heat off and allow to rotate without heat for 2 1/2 to 3 hours. Roast should come out medium.

Steps:

  • Preheat oven to 500°F.

I was making and Eye of Round roast for New Years dinner, and needed a recipe for the slow cooker. I don't like onion soup, and that is what most of the slow cooker recipes use so I came up with this version. It smelled heavenly while cooking, and was fork tender when cooked. I used a package of Club House turkey gravy mix (reduced salt) for seasoning. It was a 25 gram package in Canada, so would be about 1 oz in the US. I always have some in the pantry as my daughter likes it with oven fries. Feel free to use whatever variety of mushrooms you have. The slow cooking and the wine help to tenderize the roast. Everyone raved over the end result. I hope you enjoy it.

1 eye of round beef roast, 2 - 3 pounds
2 cups thickly sliced baby portabella mushrooms
1 (25 g) package turkey gravy mix
1 cup water
1/2 cup white wine
1 tablespoon olive oil

Steps:

  • Sear roast on all sides in hot pan with olive oil.
  • Place in slow cooker.
  • Saute mushrooms in same pan, pour around roast.
  • Make gravy with the 1 cup of water in same frying pan

2 tablespoons olive oil
1 (4 -5 lb) beef eye round
2 tablespoons tomato paste
2 garlic cloves, finely chopped
4 cups beef stock or 4 cups broth
2 cups red wine
2 bay leaves
7 tablespoons lightly-salted butter, divided
6 medium carrots, diced
6 medium celery ribs, diced
2 medium onions, diced
6 tablespoons all-purpose flour
salt and pepper

Steps:

  • In a Dutch oven or a large, heavy saucepot, heat the oil over medium high heat. Add the meat and brown on all sides. Add the tomato paste and garlic and cook until the garlic is lightly browned. Add the beef stock, wine, and bay leaves. Over high heat, bring the mixture to a boil. Reduce the heat to low, cover the pan tightly, and simmer (DO NOT BOIL) for about 2 hours.
  • While the meat is cooking, in a large skillet, heat 1 Tablespoon of the butter over medium high heat. Add the carrots, celery, and onions and cook for 5 to 10 minutes, or until softened slightly. Add the vegetable mixture to the Dutch oven after the meat has cooked for 2 hours. Cover and continue cooking 30 to 60 minutes longer, or until the meat is tender.
  • Transfer the meat and vegetables to a serving platter. Pour the cooking liquid into a large bowl and reserve. Discard the bay leaves.
  • In the Dutch oven over medium heat, melt the remaining 6 Tablespoons of butter. Whisk or stir in the flour until smooth and bubbly. Continue cooking, stirring constantly, for 2 to 3 minutes. Gradually whisk in the reserved beef stock, blending completely after each addition. Cook, stirring constantly, until the mixture boils and thickens. Season the sauce with salt and pepper.
  • Slice the roast and serve with the vegetables and the sauce. Makes 8 to 10 servings.
