Steps:
- Unwrap the ducks and allow them to sit at room temperature for 20 minutes. With a fork, prick the skin without piercing the meat. This will allow the fat to drain off while the ducks cook.
- Meanwhile, in a very large stock pot which can hold the 2 ducks, heat the chicken broth with 1 tablespoon of kosher salt until it boils. Add the ducks very carefully and bring the stock back to a boil. If there isn't enough stock to cover the ducks, add the hottest tap water to cover. If the ducks float to the top, place a plate on top to keep them immersed. When the stock comes back to a boil, lower the heat and simmer the ducks in the stock for 45 minutes.
- When the ducks are finished simmering, skim off enough duck fat from the top of the stock to pour a film on the bottom of a 14 by 18 by 3-inch roasting pan. This will keep the ducks from sticking when they roast. Carefully take the ducks out of the stock, holding them over the pot to drain. Place them in the roasting pan, pat the skin dry with paper towels, and sprinkle with 1 teaspoon of salt and the pepper. If you have time, allow the ducks to sit at room temperature for 30 minutes to allow the skin to dry.
- Meanwhile, preheat the oven to 500 degrees F. (Be sure your oven is very clean or it will smoke!) Roast the ducks for 30 minutes. Remove from the oven and allow them to rest, covered with aluminum foil, for 20 minutes. Serve warm.

Steps:
- Bring 3 cups water, 20 juniper berries, and pinch of salt to boil in large saucepan. Reduce heat to medium; cover and simmer 10 minutes. Set juniper broth aside.
- Preheat oven to 450°F. Cut wing tips from duck; reserve. Sprinkle cavity of duck with salt and pepper. Place heart, liver, and gizzard in cavity, then 10 juniper berries, 4 thyme sprigs, and bay leaf. Tie legs together to hold shape. Place duck, breast side up, in roasting pan. Add wing tips and neck to pan. Pour 1 cup juniper broth over duck. Roast duck in center of oven until beginning to brown, about 30 minutes.
- Meanwhile, bring remaining juniper broth to boil. Add prunes; cover, reduce heat to medium, and simmer until prunes are soft, about 5 minutes. Using slotted spoon, transfer prunes to small bowl.
- Tilt roasting pan; spoon off 1/2 cup fat from top of liquid. Pour 1/2 cup prune poaching liquid over duck. Turn duck, breast side down. Pour 1/2 cup prune poaching liquid over duck. Return to oven; roast 15 minutes. Turn duck, breast side up. Arrange prunes around duck; spoon pan juices over prunes. Drizzle vinegar over duck. Return to oven and roast duck until skin is crisp and juices run clear when thigh is pierced, about 20 minutes longer. Transfer to cutting board, breast side down; let stand 20 minutes.
- Discard wing tips and neck. Using slotted spoon, transfer prunes to bowl. Pour pan juices into medium saucepan; spoon off fat. Add thyme sprig. Boil until juices are reduced to 1 1/4 cups and thickened slightly, stirring occasionally, about 8 minutes. Return prunes to juices to rewarm; season with salt and pepper. Turn duck, breast side up. Cut legs from duck. Cut off wings with some breast attached. Cut breasts from duck; thinly slice crosswise. Arrange duck on platter. Spoon juices with prunes over and serve.
SOY ROAST DUCK WITH HOISIN GRAVY
Tender duck breasts with subtle Chinese spice, finished with a ginger-infused oriental gravy

Steps:
- Prick the duck's skin really well with a fork (this helps release the fat from the skin as it roasts). Mix the soy, 5-spice and honey in a large bowl, add the duck and coat well. Cover and place in the fridge until ready to roast.
- For the gravy, tip the stock into a pan, add the hoisin sauce and ginger and boil for a few minutes to make a smooth gravy. Add the sesame oil and set aside.
- To serve, preheat the oven to fan 180C/conventional 200C/gas 6. Pour 1 litre of water in the base of a roasting tin and place a rack over the top - this stops fat from the duck dripping on to the tin, then burning and filling the kitchen with smoke. Lift duck from marinade and arrange on rack, skin side up. Reserve remaining marinade for the rice dish. Roast for 20 minutes for medium and 30 minutes for well done. Slice each breast in half. Spoon some rice on to each plate; top with halved duck breasts. Add any meat juices from the duck to the hoisin gravy and pour a spoonful or two over the duck. Serve the remaining rice and gravy separately.

DUCK WITH RED CABBAGE & MADEIRA GRAVY
A decadent duck dish slow-cooked French-style in goose fat to make it mouth-wateringly tender

Steps:
- At least 24 hours before serving, mix the salt, pepper and herbs, except the thyme sprigs, in a large bowl. Add the duck legs and rub in the herby salt until well coated. Cover and leave overnight or up to 24 hours in the fridge.
- Next day, wipe the salty mixture from the duck legs and place them in a single, tight-fitting layer in the base of a pan. Add the bay leaves from the bowl and pour over the goose fat. If it doesn't cover the duck, top up with the groundnut oil. Cook over the lowest possible heat for 2½ hours, so the fat barely bubbles. The duck skin should be creamy rather than golden once cooked. Transfer the legs to a bowl and strain in the fat, pushing the duck under until fully submerged. (The duck can now be chilled and refrigerated for up to 1 month.)
- While the duck is cooking (or up to 2 days ahead of the meal), make the madeira gravy and cabbage. For the gravy, melt the butter in a small pan, add the shallots and cook for 6-8 minutes, stirring until golden. Stir in the flour and cook, stirring all the time, until the flour browns - take care not to let it burn. Whisk in the stock and continue whisking over the heat until slightly thickened. Add the madeira and cook for 2 minutes more. Strain through a sieve into a bowl. (The gravy can now be cooled and chilled for up to 2 days.)
- For the cabbage, scoop 2 tbsp of the goose fat from the duck as it cooks (if making at another time use olive oil) and put into a medium pan. Add the shallots and cook, stirring, until softened. Tip in the juniper berries and cabbage and cook over a fairly high heat until the cabbage starts to soften. Stir in the vinegar, orange juice, raisins and redcurrant jelly. Cover and leave to cook for 15 minutes, stirring now and then until tender. (Cool and chill for up to 2 days if making ahead.)
- On the day, preheat the oven to fan 180C/ conventional 200C/gas 6. Remove the duck legs from the fat and wipe away any excess with kitchen paper. Put the duck on a wire rack in a roasting tin and top each leg with a sprig of thyme. Roast for 10 minutes, then add the creamy wild mushroom potatoes to the oven (see recipe, below) and cook with the duck for 30 minutes, or until the duck skin is golden. Meanwhile, reheat the cabbage and gravy in separate pans until piping hot.
- To serve, put a generous spoonful of cabbage on serving plates and sit the duck legs on top. Spoon round the gravy and serve with the potatoes. For a green vegetable, quickly stir fry some sugar snaps.

THE BEST ROAST DUCK RECIPE (WITH GRAVY) - EVERYDAY …

- The day before: Prepare the duck – remove the giblets and neck from the cavity, rinse the duck in cold water, trim excess fat from the tail. Thoroughly pat dry with paper towels, inside and outside. Rub with salt* and pepper, then with spices. You need to rub it inside, outside, then loosen the skin from the duck breast (without totally detaching it) and rub with the salt and herbs. Place the duck in a large dish in the fridge, uncovered, overnight, but better for one whole day.
- On the day of baking: Take the duck out of the fridge, leave on the counter for 30-60 minutes to warm up. In the meantime, set the oven to 450°F / 230°C / Gas Mark 8, no fan.
- Cut the lemon in half. Peel and core the apples, cut into quarters. Put inside the duck (as many as fits).
- Use toothpicks to close the cavity as much as possible, or sew it with a needle and kitchen twine, you can also tie the legs together with kitchen twine (this is optional). If your duck doesn’t have a neck, close this cavity too.

- Rinse the duck inside and outside nicely and pat dry. Cut off all visible fat. Rub the duck with lots of salt inside and out (I used roughly 2 tablespoons of coarse salt). Then put it in the roasting pan with the breast side down.
- The drippings that came out of the duck while roasting are the foundation to a perfect gravy. So now take a spoon, skim off most of the fat from the broth that you previously kept away. Sieve the broth into a pot (you can throw the vegetables away. I normally keep the carrots and eat as a snack). Then pour some in the roasting pan that you used to roast the duck, mix well, while scrapping up all the brownish staffs from the pan bottom with a spatula. Then add the brownish-staffs sauce mixture to the broth that you sieved in a pot and let simmer for 5 minutes.
