You've heard it many times, but it bears repeating. Nothing tastes more like home than a good Roast Stuffed Chicken. This Roast Stuffed Chicken recipe is one of our favorites. It requires only five ingredients and still comes out moist, delicious and perfectly seasoned. Try it as soon as you can!

1-1/2 cups hot water
3 Tbsp. margarine or butter, cut up
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 whole chicken or capon (5 lb.)
1/4 tsp. dried thyme leaves or dried tarragon leaves

Steps:

  • Heat oven to 325°F.
  • Mix hot water and margarine in large bowl until margarine is melted. Add stuffing mix; stir just until moistened. Set aside. (Do not stuff chicken until ready to bake.)
  • Stuff chicken lightly with prepared stuffing; close openings with skewers and string. Place, breast-side up, on rack in baking pan; sprinkle with thyme.
  • Bake 1 hour 40 min. or until chicken is done (165°F) and stuffing is heated through (165ºF), basting occasionally with pan juices.

A good bread stuffing will never go out of style and it's the perfect way to use up stale, unwanted bread. It steams the chicken from the inside while also taking up a lot of roasting juices that might otherwise be lost. The result is a bird that's both moist and delicious.

1/2 loaf stale white bread (about 8 slices), crusts removed
100g unsalted butter, plus extra for the chicken
1 brown onion, finely chopped
1/2 tsp salt, plus extra for seasoning
1/2 cup roughly chopped fresh herbs (sage, parsley and thyme work well)
1/4 cup milk
1 whole free-range chicken (about 1.6kg)
Pan trivet
1 lemon, cut into eighths
2 carrots, halved lengthways
1 brown onion, peeled and roughly chopped

Steps:

  • 1. Cut or tear the bread into one-centimetre cubes or chunks. Fry the finely chopped onions in half the butter until softened. Melt the remaining butter in the frying pan. Mix melted butter and onion through the bread, add salt and herbs. Moisten the stuffing with the milk until it comes together into a mass. 2. Heat oven to 190C. Stuff the chicken with the stuffing and tie the legs and parson's nose together with kitchen string. Place the pan trivet, lemon and vegetables in the base of a roasting tray and lay the chicken on top, breast side up. Pour half a cup of water into the base of the tray. 3. Spread the skin of the chicken with a little extra butter and season well with salt. Roast the chicken for 75 minutes or until the skin is golden-brown, and then rest for another 15 minutes in a warm, draught-free place. Serve the chicken with the stuffing and a crisp green salad.

6 tablespoons unsalted butter, plus more for the baking dish
10 cups cubed sourdough bread
1 cup hazelnuts
Kosher salt and freshly ground black pepper
2 celery stalks, chopped
2 garlic cloves, minced
1 large onion, chopped
2 teaspoons chopped fresh rosemary, plus a sprig for garnish
2/3 cup dried currants
2 cups chicken broth
1 large egg, beaten

Steps:

  • Preheat the oven to 325 degrees F. Butter a 2- to 3-quart glass or ceramic baking dish.
  • Arrange the sourdough cubes in a large rimmed baking pan in a single layer. Bake until slightly dried out, about 30 minutes. Transfer to a large bowl.
  • Increase the oven temperature to 400 degrees F.
  • Melt 1 tablespoon butter in a medium skillet over medium-high heat. Add the hazelnuts and a large pinch of salt and cook, stirring often, until nutty smelling and toasted, about 4 minutes. Spoon the nuts onto a clean dish towel and gently but firmly rub the hazelnuts to remove some of the brown skins (it's okay if some of the skins remain). Roughly chop the nuts.
  • Add the remaining 5 tablespoons butter to the skillet and melt over medium heat. Add the celery, garlic, onion, rosemary and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 10 minutes. Add the currants and cook, stirring, just until plump, about 1 minute. Remove from the heat and cool slightly.
  • Add the hazelnuts and vegetables to the bowl with the bread and mix to combine. Whisk the chicken broth together with the egg, 1/2 teaspoon salt and a few grinds of pepper in a bowl. Add it to the stuffing mixture and stir until well mixed.
  • Spoon the stuffing into the prepared baking dish and bake until hot and golden brown on top, 35 to 45 minutes. Garnish with the rosemary sprig and serve.

Steps:

  • Fry onions in the butter. Stir in nuts; fry until golden. Remove from the heat, add apricots, breadcrumbs, parsley and lemon zest. Mix in the egg and season. Use half to stuff the neck end of the turkey; shape the rest into balls.

Turkey:
1 14- to 16-pound fresh turkey
1 cup coarse salt
2 Granny Smith apples, quartered
1 teaspoon nutmeg
1 teaspoon allspice
1 orange, quartered
1 Basting Sauce (to use at start of roasting):
1 cup unsalted butter
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/2 teaspoon coarse black pepper
3 tablespoons fresh thyme or 1 tablespoon dry
1/2 teaspoon salt
2 Basting Sauce (to use at end of roasting):
1/4 pound unsalted butter
1/4 cup maple syrup
Sausage and Hazelnut Stuffing:
1 cup hazelnuts, roasted and skinned
1 pound fresh pork sausage
1/2 pound chicken breast, skinned, boned, and diced
1/2 cup unsalted butter
1 pound chopped onion
2 cups chopped celery
2 tablespoons sage
1/2 pound Virginia ham, diced
8 cups stale bread, cut in 1/2-inch cubes
1 cup chopped Italian parsley
3 large eggs, beaten
2 teaspoons coarse salt
2 teaspoons coarse black pepper
2 ounces Amaretto
1 cup turkey stock

Steps:

  • Prepare Turkey:
  • Rub salt all over turkey, inside and out. Cover turkey with cold water and let sit for one hour in the sink (this will get rid of blood and gamey taste).
  • Preheat oven to 350°F.
  • Mix spices with apples.
  • Put 1/2 of apple mixture inside turkey under white meat (front). Using the other half of apple mixture and quartered orange, stuff under the dark meat (back) inside turkey.
  • Prepare basting sauce #1 by heating butter and adding juices and spices.
  • Put turkey in roasting pan and add basting sauce.
  • Roast, covered with foil, for 2 hours.
  • Prepare Stuffing:
  • Put hazelnuts in food processor and chop to medium coarseness.
  • In a large skillet, brown pork sausage and drain. Add 3 teaspoons of butter to pan and fry chicken until done. Sauté onions, celery, and sage until translucent. Add ham and rest of vegetables in large bowl, adding the pork, chicken and bread, mixing well. Add eggs and Amaretto. Finally, add turkey stock to moisten.
  • Put in baking pan and bake 1 hour at 350 °F.
  • Finish Roasting Turkey:
  • Remove foil and roast until internal temperature is 175°F, basting every 15 minutes.
  • Prepare #2 basting sauce by heating butter and maple syrup.
  • Remove bird from oven when it reaches 175°F. Let rest - turkey will continue to cook, reaching 180°F in the next 15 minutes.
  • Baste with #2 sauce until all sauce is gone.
  • Remove fruit from inside.

ROAST CHICKEN WITH WALNUT-HERB STUFFING

1 6 -pound roasting chicken
Kosher salt and freshly ground pepper
1 stick unsalted butter
4 cloves garlic, smashed and roughly chopped
1/4 cup roughly chopped walnuts
1/4 cup fresh parsley, roughly chopped
2 teaspoons fresh thyme
1 baguette, cut into 1 1/4-inch cubes (about 5 cups)
4 cups low-sodium chicken broth

Steps:

  • Rinse the chicken and pat dry. Put on a large plate and refrigerate, uncovered, at least 4 hours or overnight to dry out the skin.
  • Pat the chicken dry and season the cavity with salt and pepper. Put the chicken on a rack in a roasting pan, tucking the wings underneath. Preheat the oven to 450 degrees F.
  • Cook the butter, garlic and walnuts in a small skillet over low heat until the butter is melted and the nuts are lightly toasted, 5 to 7 minutes. Brush the chicken with 2 tablespoons of the garlic butter; transfer the remaining butter mixture (including the garlic and nuts) to a large bowl. Add the parsley, thyme and bread and toss to coat. Fill the cavity of the chicken with about two-thirds of the stuffing. Tuck the remaining stuffing on the baking sheet underneath the chicken. Sprinkle the chicken with 2 teaspoons salt and 1/4 teaspoon pepper.
  • Transfer the roasting pan to the oven and roast until the stuffing is toasted, about 20 minutes. Add 2 cups chicken broth to the pan and roast 40 more minutes. Use a spoon to scoop the stuffing out of the chicken and transfer to the bottom of the roasting pan with the rest of the stuffing. Reduce the heat to 425 degrees F and continue roasting until an instant-read thermometer registers 165 degrees F, 30 to 40 minutes.
  • Transfer the chicken to a platter and let rest 15 minutes. Transfer the stuffing to a bowl. Put the roasting pan on the stovetop over medium-high heat. Add the remaining 2 cups broth to the pan and cook, scraping up any browned bits with a wooden spoon, until almost syrupy, 5 to 8 minutes. Return the stuffing to the pan to soak up the juices. Serve with the chicken.

Stir into bread, then stir in enough broth to make mixture evenly moist but not wet. Season with salt and pepper.

Roast chicken until an instant-read thermometer inserted into thickest part of the thigh registers 165 degrees, about 1 hour (tent exposed stuffing with foil, if overbrowning). 1 cup brown sugar, for brine
4 bay leaves, for brine
1 tsp mustard seeds, for brine
1 tsp peppercorns, for brine

6 sprigs parsley, to stuff chicken
3 cloves garlic, to stuff chicken
1/2 stick butter, to brush over chicken
1/4 cup olive oil, to brush over chicken
1 tsp each of paprika, oregano, garlic powder, salt (coarse), to brush over chicken

Steps:

  • First brine the whole chicken. Combine 2 cups water with the salt and sugar and bring to simmer, stir until they dissolve. In cheese cloth tie the bay leaves, cloves, mustard seeds and peppercorns. Submerge in the brine liquid. Add 2 cups of cold water and 4 cups of ice to cool down the solution. When cold add the chicken. Cover with plastic and brine refrigerated for 12-24 hours, depending on the size of the bird.
  • Preheat oven to 375-400 F.
  • Remove the chicken from the brine. Pat dry with paper towel. Stuff the cavity with the thyme, parsley, garlic and lemons.
  • Melt the butter, mix in the olive oil and the spices. Place the chicken breast side up onto the rack of a roasting pan. Brush it with the spiced butter/olive oil.
  • Place in the oven and brush with spiced butter/olive oil again in about 20 minutes. (If the chicken is browning too quickly, tent it with aluminum oil.)
  • In 40 minutes check the temperature with a meat thermometer. Brush with more spiced butter/olive oil.
  • Continue cooking until the internal temperature reaches 165 F. If you want crisper skin, turn the heat up or broil for the final few minutes (keep an eye on it).
  • Place the cooked chicken onto a cutting board with a lip of a cutting board inside a baking sheet (to contain the juices). Allow to rest 5-10 minutes. Cut across lengthwise with a heavy knife, pressing down firmly.
  • Remove the herbs and lemon and serve.

I have made this recipe a number of times over the years and have always had outstanding results and raves. I found the recipe in 365 Ways to Cook Chicken. Sometimes I add cooking wine to the water that the rice cooks in.... otherwise I really don't need to change a thing. --Note-- This Chicken makes an Outstanding Chicken Salad for sandwiches the next day. Simply mix the left over chicken and stuffing with mayonnaise. It is hard to get the chicken salad onto the bread without eating it all before hand!
