SEASONING FOR BEEF POT ROAST IN A BAG
I love the seasonings that come in a pot roast bag but I was out of them so I came up with this and think it's a ringer for a very moist and tasty pot roast.

Steps:
- Sprinkle salt, pepper and garlic salt to taste on both sides of roast. Place roast in bag. In a small bowl combine first nine ingredients. Mix well.
- Combine cornstarch and water and stir until smooth. Pour over roast and top with sliced onions. Tie bag and turn roast upside down and shake so seasoning covers all while holding sliced onion on top. Return to pan, being sure to move onion back to top of roast.
- Poke about 5 small holes in top of bag and bake at 350 for 2 hours or until top is a bit brown and roast is tender.

Steps:
- Place dry soup min in bag and shake.
- Put beef in bag and roll around to coat.
- Seal bag (do not pierce)and place in moderate oven.
- Cooking time will depend on how you like your beef cooked.
- I like mine well done -- dont worry it will be moist and flavoursome.
- Let sit for 5 minutes.
- Remove meat from bag, reserve juices to make the worlds best gravy!
- note: This recipe is best for a bolar roast. Topside etc. is a bit too lean and wont turn out as tender.

CAJUN ROAST IN A BAG: JUSTIN WILSON STYLE
This is a great way to make a pot roast without the trouble or mess in a roasting pan, dutch oven or crock pot. I use pretty much the same technique to make my Thanksgiving turkey every year (except swapping the roast for a bird, a couple of ingredients and changing the cooking time). You can use a large oven bag for this dish, and can easily vary the weight of roast and amounts of veggies depending on how many people you need to feed. (I've sometimes used a beef rump roast to make this). If using a larger amount of meat and veggies, you may need to use the turkey size oven bag and possibly adjust the time. This ingredient list is simply made for hubby and I. I hope you enjoy it.

Steps:
- Remove roast from fridge and rest on counter for 10 minutes. Pre-heat oven to 350*F.
- Place flour into oven bag and shake vigorously to dust the inside (leave flour inside bag).
- Put small slices about a 1/2 inch deep into the top of the roast. Place a garlic slice down into each hole. Sprinkle all sides of roast with salt and cayenne pepper. Mix together wine and worcestershire.
- Set bag on its side inside of a 13x9 baking dish and open the end wide. Place roast inside of bag. Place veggies over and around roast. Add wine/worcestershire mix over and around roast. Use zip tie that comes with the oven bag to seal it closed. Cut several slits (about 6) in the "top" of the bag for steam to escape.
- Bake for 3 hours. Remove pan from oven. Carefully open tied end of bag and remove roast and veggies to a platter and tent with foil for approx 10 minutes. Reserve juices in the bag if you wish to make gravy*.
- *If making gravy, carefully strain while pouring bagged juices into a saucepan and add desired amount of beef broth to make the gravy and heat over high flame. Thoroughly combine a small amount of cornstarch with some cold water. Once broth and juice are boiling, slowly add cornstarch and water mixture (stirring constantly), using only enough cornstarch and water mixture to reach desired consistantcy. Boil (while stirring) for 2 minutes.
- Serve and enjoy!

PERFECT POT ROAST IN A BAG

Steps:
- Turn oven to 325 degrees.
- Shake salt and pepper into the flour. Put flour on paper plate and then place meat on the plate - turning to cover all sides with the flour. In a pan hot with about 2Tbl olive oil, brown meat well on all sides. This should take about 10 minutes.
- Prepare roasting bag by shaking 1 TBL flour in bag, set bag in 2 in deep oven safe pan.
- Place a few onion slices in bottom of bag, followed by the browned roast. Place remaining onion slices on top of roast. Pour the beef stock over the Roast and seal the bag. Cook on middle rack of oven for 2 hours.
- After 2 hours, Remove all but 1/2 C of roast juices from pan (I used to make gravy) Place sliced carrots around roast, place potatoes on top of carrots, reseal bag and cook an additional 2 hours.

OVEN BAG RUMP ROAST
This is one of my adopted recipes. This is suitable for any size roast just adjust the veggies for amount you want to serve. I didn't have new potatoes, I just halved regular Yukon God potatoes. I used an Oven Bag for this and roasted to 140°F and it came out nice and tender.

- Preheat the oven to 350 degrees Fahrenheit. Place the open oven bag or roasting bag in the baking pan, and set aside.
- Season the roast with your favorite herbs and spices. Rosemary or thyme pair especially well with beef, as do garlic, onion powder, as well as salt and pepper.
- Place the seasoned roast in the open oven bag. Add the vegetables and water. The amount of liquid you need varies by the size of the roast. The goal is not to cover the roast, but to add only enough liquid to provide some moisture during cooking.
- Close the bag, using the nylon tie provided in the package of roasting bags. Cut three or four small slits near the tied part of the bag. This allows steam to escape during the cooking process.
- Insert the meat thermometer through the closed bag, into the thickest part of the roast. Be sure the thermometer is not touching the sides or bottom of the pan, as that will affect the temperature readings.
- Place the pan in the lower part of your oven, for approximately 1 ½ to 2 hours. Exact cooking times vary by the size of the roast and desired doneness.
- Remove the pan when your roast has reached the desired temperature, and allow the roast to rest in the pan for five to 10 minutes. Carefully untie the oven bag, remove the roast and vegetables, and serve on a platter with your family’s favorite side dishes.

- Preheat the oven to 160 degrees Fahrenheit. Coat the inside of the cooking back with the flour. Pour the flour into the bag. Pinch the open end of the bag firmly shut with your fingers and shake the bag so that the insides of the bag are fully coated with flour.
- Add all of your seasonings to the bag. In this case, add your salt, pepper, tomato sauce, water and instant bouillon to the bag. Shake the bag again to mix the contents.
- Gently place the beef inside the cooking bag. Close the bag with the nylon tie provided with the bag. Gently squeeze and roll the bag so that the contents fully coat the beef.
- Place the bag in the dish. Use a sharp knife to make 5 or 6 small slits one-half inch wide at the top of the bag. Bake the beef for 1 1/2 to 2 1/2 hours, depending on how you well you like your beef cooked.
- Remove the beef from the oven and let it rest for about 30 minutes. Carefully open the bag and place the beef into the dish. Pour the juice over the roast beef and carve.
