18 slices sandwich bread
12 slices bacon, cut in half
1/2 cup mayonnaise
1 tablespoon prepared basil pesto
1 tablespoon prepared sun-dried tomato pesto (or just a couple of pureed sun-dried tomatoes)
1 pound shaved roast beef
6 slices Cheddar (sandwich slices)
Green leaf lettuce
3 large red tomatoes, sliced thick
Avocado slices
1 pound shaved ham
1 red onion, sliced very thin
Chips, for serving

Steps:

  • Toast the bread in the toaster until light golden brown. Set aside.
  • Fry the bacon until just barely crisp, and then drain on a paper towel. Set aside.
  • Mix together 2 tablespoons of the mayonnaise with the basil pesto. In a separate bowl, mix an additional 2 tablespoons mayonnaise with the sun-dried tomato pesto.
  • To make one sandwich: Spread 2 pieces of toast with basil pesto mayo. On one piece of bread, lay some roast beef on top of the pesto mayo, then top with a slice of cheese and some lettuce. On the other piece of bread, lay the slices of tomato on top of the pesto mayo. Top with some avocado and bacon. Lift the second slice of bread and place it, ingredient-side down, on top of the first piece of bread.
  • For the second layer: On the top of the top piece of bread, spread the sun-dried tomato mayo. Spread one side of the third piece of bread with sun-dried tomato mayo. Place ham, cheese, red onion and lettuce on top. Top with bacon slices.
  • Place this piece of bread, ingredient-side down, on top of the first piece of bread. Use a sharp knife to cut the sandwich in half (on the diagonal) then again in fourths. (Use large toothpicks to secure if needed.)
  • Serve with chips!

1/4 cup whole grain mustard
6 slices whole-wheat bread, toasted
4 lettuce leaves (romaine or green leaf)
8 thin slices tomato
16 thin-sliced deli roast beef (approx. 1/2 lb)
4 slices horseradish-cheddar cheese
12 slices bacon, cooked
Sandwich toothpicks

Steps:

  • Combine the mayonnaise and mustard in a small bowl. Spread about 1-1/2 Tbsp of the mixture over one side of each slice of bread. Place one lettuce leaf, 2 tomato slices, 4 slices roast beef, 1 cheddar slice, and 3 slices of bacon on top of two slices of the prepared bread. Place two more prepared slices of bread, mayonnaise-side down, on top of each sandwich. Top both of the sandwiches with another 1 lettuce leaf, 2 tomato slices, 4 slices roast beef, 1 slice cheddar, and 3 slices of bacon. Top each sandwich again with the remaining bread slices, mayonnaise-side down. Pierce the sandwiches with toothpicks along each side of the bread, creating a cross shape. Slice the sandwich diagonally from corner to corner, creating 4 triangles.

Steps:

  • Preheat oven to 425 degrees. Heat a large ovenproof skillet over medium-high heat until warm. Add oil and butter; heat until oil is hot and butter has melted.
  • Season beef with salt and pepper; place in skillet. Cook until beef is well browned on all sides, about 5 minutes.
  • Transfer skillet to oven. Bake until an instant-read thermometer registers 130 degrees for medium-rare, 18 to 22 minutes. Transfer beef to a cutting board; let rest at least 20 minutes before slicing.
  • Slice beef very thinly crosswise. Peel and pit avocados; cut into 1/2-inch-thick slices. Arrange tomatoes, lettuce, radicchio, avocados, and beef over half the bread. Spread horseradish cream onto each remaining bread slice, and place on top of sandwich, spread side down.

One 4-pound eye of round roast or round roast
Kosher salt and freshly cracked black pepper
3 tablespoons Dijon mustard
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons dried sage
2 teaspoons dried thyme
4 small sprigs fresh rosemary
2 cups beef broth
1/2 cup sour cream
1/4 cup mayonnaise
3 tablespoons prepared horseradish
2 teaspoons apple cider vinegar
6 soft or kaiser rolls
1/4 cup (4 tablespoons) unsalted butter, melted
1 teaspoon caraway seeds
2 teaspoons pretzel salt (or kosher salt)
Finely shaved onion, for serving (optional)

Steps:

  • Bring the roast to room temperature about 1 hour before cooking.
  • Preheat the oven to 450 degrees F.
  • Sprinkle the roast on all sides with kosher salt and pepper. Brush the roast with the mustard. Combine the oregano, parsley, sage and thyme in a bowl and sprinkle it on the roast, followed by a liberal amount of kosher salt and pepper. Place the rosemary on a the roasting rack and place the roast on top of the rosemary. Add the broth to the roasting pan. Roast the meat for 20 minutes, then reduce the heat to 300 degrees F and continue to roast until the internal temperature reaches 110 to 115 degrees F for rare, about 1 hour.
  • Meanwhile, combine the sour cream, mayonnaise, horseradish and vinegar. Season with kosher salt and pepper. Refrigerate until ready to use.
  • Allow the meat to rest, uncovered, for 1 hour. Pour the liquid from the bottom of the roasting pan into a small pot and let simmer for 20 minutes to reduce. Keep warm.
  • When ready to slice, preheat the oven to 350 degrees F. Brush the tops of the rolls with the melted butter and sprinkle with the caraway seeds and some pretzel salt. Toast the rolls slightly for about 5 minutes.
  • Spread the horseradish cream on the interiors of the rolls. Top with the onions, if using. Slice the meat paper-thin, about 4 ounces per sandwich. Dip the sliced meat into the warm jus, then add to the roll bottoms. Top with the roll tops. Serve with the remaining jus for dipping if desired.

1 medium red onion, halved and thinly sliced
1 tablespoon, plus 2 teaspoons kosher salt, plus more to taste
6 tablespoons red wine vinegar
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup plus 2 tablespoons jarred grated horseradish (with liquid)
1/2 teaspoon grated lemon zest
Freshly ground black pepper
Hot sauce
6 Kaiser rolls
12 slices vine-ripened tomatoes
24 ounces freshly sliced rare roast beef
3 loosely packed cups watercress or arugula, or a combination of both

Steps:

  • In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
  • In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
  • Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. Top the meat with some of the onions and watercress and cover with the tops of the roll. Serve immediately.

HOT ROAST BEEF SANDWICHES

1/4 cup spicy mustard
3 to 4 tablespoons poppy seeds
3 tablespoons grated onion
1 tablespoon horseradish mayonnaise
Dash of Worcestershire
12 soft hamburger buns, sliced in half
1 pound thinly shaved roast beef
8 ounces sliced provolone
8 ounces American cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the mayo, mustard, poppy seeds, grated onion, horseradish mayo and Worcestershire. Taste the dressing and adjust the ingredients however you wish.
  • To assemble, spread the dressing on the top and bottom buns. On the bottom bun, lay on some provolone, roast beef and American cheese, and place the top bun on top. Repeat with the next sandwich.
  • Wrap each sandwich in a foil square, and either bake right away or keep in the fridge. To bake right away, put them on a baking sheet in the oven until the buns are slightly crusty and the cheese is melted, 15 to 20 minutes. Great for a crowd!

Roy Rogers used to be a large chain of fast food restaurants owned by the Marriot Corp. established in Falls Church, VA in 1968. It is now a very small chain in the Midatlantic and Northeast. They obtained a loyal following for their excellent roast beef sandwiches, burgers, and fried chicken. They were bought out by Hardees in the early 1990s which was an utter disaster for Hardees as no Roy Rogers regulars liked Hardees food. I grew up liking Roy's Roast Beef sandwiches but it's impossible to find a copycat recipe online. From admissions of Roy's, a former employee and America's Test Kitchen, here is tried authentic recipe for their roast beef sandwiches. They use USDA choice Steamship Round (the entire Round of Beef). This recipe results in a deliciously tender and juicy roast beef sandwich exactly how Roy's makes it. To improve flavor beyond Roy's try searing the beef in a saute pan prior to slow roasting. Roy's acknowledges this will enhance flavor but is cost prohibitive for them. A single 4 lb. roast will yield 20 sandwiches.

3 1/4 ounces beef eye round (USDA Choice)
2 ounces kaiser rolls (Maier's Italian)
2 tablespoons beef broth (or canned Consomme)
1 tablespoon barbecue sauce (Open Pit Regular)
1 tablespoon horseradish sauce (Creamy)

Steps:

  • Preheat oven to 225°F Insert an oven safe remote thermometer into the center of the roast and program the thermometer to alert at 115°F Place the roast on a rack over a foil lined baking pan. Slow roast in the oven uncovered until the thermometer alerts. Turn the temperature of the oven down to 175F and continue roasting. The idea is that this tough cut of meat will become most tender if slow roasted with an internal temp under 122F as long as possible.
  • Change the alert temperature of the thermometer without opening the oven to 130°F When the alert is reached remove the roast from the oven and let rest inside an unsealed gallon sized ziploc baggie. This will capture the juices while resting. The roast will be pink throughout. This is how it should look at this point.
  • When the roast is room temperature, seal the baggie and place in the refrigerator over night. The cold temperature will help enable thin slicing.
  • Reserving the juices in the ziploc baggie, slice 3.2 oz of beef for each sandwich to be made. (I purchased a Harbor Freight deli slicer for $65 on Ebay). Heat the beef broth or consomme in a saucepan until simmering and add in the reserved juices. When the sauce is simmering place the cut beef on a skimmer and dunk into the hot broth for 30 to 45 seconds. This will finish cook the beef, add the flavor of Roy's sandwiches without toughening the meat. Anything over a minute will toughen the meat. A Roy's employee acknowledged this is how they finished the beef.
  • Place the meat directly from the broth on an untoasted bun bottom. Spoon a tablespoon of broth onto the top bun. Add barbecue sauce and horsey sauce.

I was getting bored of 'regular' roast beef sandwiches. I took things from a bunch of recipes and mixed it up a little. Easy to double-up this or size-down.I also use a pkg of Au Jus from Clubhouse for dipping.

5 cups leftover roast beef, thinly shredded
1 onion, sliced
1 1/2 cups mozzarella cheese, shredded
3/4 cup parmesan cheese, grated
3 tablespoons butter or 3 tablespoons margarine
12 hoagie rolls or 12 buns, of your choice

Steps:

  • Melt 1 tbsp butter in frying pan.
  • Separate onion slices into rings and fry till tender and caramelized, set aside to cool slightly.
  • Toast buns till desired crispness, butter when done.
  • Layer on roast beef, onions and top with a mixture of each cheese.
  • *At this point they can be wrapped in tinfoil and placed in a 350 degree oven for about 5 minutes to let the cheese melt.
  • Enjoy! And it's really good with Au Jus!

ROAST BEEF SANDWICH SPREAD

This is great way to beat the heat and use up leftovers! My family (both sides) have made this staple for generations. I can still see my Grandma using the crank meat grinder to make hers. Mom always made hers with the grinding attachment on her mixer and I've done the same (have also made it with the food processor). While we used to make this when we had left over roast beef, I have used lesser cuts of roasts to make this spread which is a great inexpensive way to extend the food budget. We like to serve this on fresh soft bread with lettuce and tomato slices. *Note* Deli Roast Beef is NOT recommended for this recipe.

1/4 cup onion, coarsely chopped
1/4 cup celery, coarsely chopped
1/2 cup sweet pickle
2 -3 hard-boiled eggs
1/2-1 cup mayonnaise
pickle juice, to taste
1/2 teaspoon onion powder
1/8 teaspoon pepper
1/4 teaspoon salt (to taste)

Steps:

  • Put beef and onion, celery, pickles and eggs through a meat grinder with the coarse plate, or mince the ingredients or process in a food processor until evenly chopped.
  • Add remaining ingredients, with enough mayonnaise and pickle juice to taste and moisten as desired. Chill until ready to serve.
  • Serve as a spread for crackers or melba rounds for sandwiches.
  • You can toast the bread, if desired, and then spread with a little butter or mayonnaise. Add lettuce leaves; spread a layer of the beef spread over the lettuce, then top with sliced red onion.
  • Makes enough for 6 to 8 sandwiches.
  • Will keep in the refrigerator 5 days in tightly sealed bowl w/lid.
