BROWNIE KISS CUPCAKES
It's fun to prepare individual brownie "cupcakes" with a chocolaty "surprise" inside. My goddaughter, Cara, asks me to make them for her birthday to share at school. This year, she requested 32. - Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to the creamed mixture and mix well. , Fill paper- or foil-lined muffin cups two-thirds full. Place a chocolate kiss, tip end down, in the center of each. , Bake until top of brownie springs back when lightly touched, 20-25 minutes.

- In a large bowl, cream butter, sugar and vanilla until light and fluffy, 5-7 minutes. Gradually add flour and mix well. Fold in walnuts. Refrigerate dough until firm, 2-3 hours. , Preheat oven to 375°. Shape into 1-in. balls. Flatten balls and place a chocolate kiss in the center of each; pinch dough together around kiss. Place 2 in. apart on ungreased baking sheets. , Bake until set but not browned, 12 minutes. Cool 1 minute; remove from pans to wire racks. , Sift together 2/3 cup confectioners' sugar and cocoa. While cookies are still warm, roll half in cocoa mixture and half in remaining confectioners' sugar. Cool completely. Store in an airtight container.

- Heat oven to 350°F. Line 30 muffin cups (2-1/2 inches in diameter) with paper or foil bake cups. Remove wrappers from 15 KISSES and 15 HUGS.
- Beat butter, shortening and sugar in large bowl until fluffy. Add eggs and vanilla; beat well. Stir together flour, cocoa, baking soda and salt; add alternately with water to butter mixture, beating until well blended. Fill muffin cups 1/2 full with batter. Place 1 KISS or 1 HUG on surface of each cup; do not press candy into batter.
- Bake 20 to 23 minutes or until tops spring back when touched lightly. Cool completely in pan on wire rack.
- Remove wrappers from remaining candies; set aside. Stir several drops red food coloring into frosting for desired shade of pink frosting. Frost cupcakes. Top each cupcake with 1 KISS and 1 HUG.
