HOMEMADE RITZ CRACKERS RECIPE
Try this whole wheat Ritz cracker recipe for a less-processed & whole-grain option! The flaky, buttery crackers you love, but without any ultra-processed ingredients or additives. Learn how to make Ritz crackers from scratch using whole wheat flour and coconut oil.

Steps:
- In a food processor, pulse flour, baking powder, coconut sugar, and salt until combined.
- Add solid coconut oil and continue to pulse.
- Add avocado oil and water and pulse until the mixture forms a sticky ball.
- Remove dough from food processor and wrap in plastic wrap. Rest 15-30 minutes in the fridge. (This will help it roll out!)
- Preheat oven to 400°F (200°C).
- Cut chilled dough ball in half. Re-wrap one half and return it to the fridge while you roll out the other half.
- Lightly flour a sheet of parchment and roll out dough between sheets of parchment. Roll as thinly as possible-less than ⅛ of an inch is ideal.
- Cut rolled dough into desired shapes using a cookie cutter, or slice into squares with a knife. (I used a 1½ inch fluted round cookie/biscuit cutter.)
- Transfer to a baking sheet lined with parchment and lightly sprayed. Poke a few holes into each cracker with a toothpick or skewer. (This will prevent the dough from poofing in the oven!)
- Collect excess dough, re-roll, and continue to cut out shapes until complete. (If dough won't roll, let it rest 10 minutes in the fridge and come back.)
- Continue process with other half of dough, until all crackers are cut.
- Brush cut dough shapes with egg wash (or melted butter/coconut oil) and sprinkle with coarse sea salt.
- Bake 12 to 15 minutes, until golden brown.
- Allow to cool completely before enjoying!
- Store in an airtight container at room temperature for about 1 week.
- Yields around 90 to 100 homemade Ritz crackers.

- In a slow stream add butter, using a fork to toss well.
- Press into a 9-inch pie plate, moulding bottom and sides.
- Bake in a 350 degree, pre-heated oven for 10 minutes.

RITZ CRACKER CHERRY DESSERT (NO BAKE)
I love these types of desserts. They are easy, delicious, and great for summer. This one comes from my girlfriend Doreen, but I think she used cool whip last time instead of of the dream whip. Also, you can make this with blueberry or apple pie fillings or whatever you like.

- Place the crumbs in bottom of pie or serving dish (reserving a small bit for garnish).
- Cream together the sugar, cream cheese, milk and vanilla until light and set aside.
- Prepare the dream whip according to package directions and mix the dream whip with the sugar and cheese mixture. Place this on top of crumbs, Top this with the cherry pie filling and sprinkle with a little of the cracker crumbs.
- Chill then serve.

- Preheat oven to 350°.
- Rinse chicken and pat dry.
- Place Ritz crackers in the blender and blend until finer than breadcrumbs.
- Melt butter completely (I microwave it).
- Dip chicken in melted butter.

- Bake for 45 minutes.

- In the bowl of a food processor, pulse together the flour, baking powder, sugar, and salt. Add the 6 TBSP cold butter, a little at a time (pulsing in between each addition) until all of it is in. Add the olive oil and water and process/pulse until the mixture forms a sticky ball.
- Transfer the ball of dough to a well-floured work surface and, using a floured rolling pin, roll it out as thin as you can. Using a round cookie cutter or something similar (I used a ¼ cup measure) to stamp out individual crackers and lay them on a parchment or Silpat-lined baking sheet. You should get around 30 to 40 crackers. (NOTE: Don’t worry about it if your crackers vary a little in shape/thickness. You can use a pasta machine to roll out the dough, if you’re seeking total perfection).
- Bake for 22 to 28 minutes, or until the crackers are very golden brown on top, rotating/turning the pans halfway through the bake time. Brush with melted better right when they come out of the oven and sprinkle with a little more salt. They’ll harden and set as they cool. Cool completely before storing.
