- Preheat the oven to 350 degrees F.
- Drain the pineapple juice into a liquid measuring cup; you should have 1 1/2 cups. Whisk in the sugar and cornstarch until the sugar dissolves. Spread the pineapple chunks in the bottom of a 13-by-9-inch baking dish and pour over the pineapple juice mixture, stirring to coat the chunks evenly.
- In a large bowl, stir together the crushed crackers, cheese and butter, then sprinkle the topping evenly over the pineapple. Bake the casserole until the topping is golden brown, the cheese is melted and the pineapple is bubbling in the center of the dish, 35 to 40 minutes. - Preheat oven to 325ºF. In a large bowl, use an electric mixer to whisk the eggs until stiff peaks form. Fold in the sugar and baking powder and mix gently. Add the crushed Ritz crackers and the nuts and mix gently to combine.
- Grease a 9x13'' baking dish. Pour the Ritz cracker mixture into the baking dish and flatten with a spatula. Transfer to the oven for 25-30 minutes until golden brown.
- Remove the pan from the oven and cool completely.
- Combine the Cool Whip, cream cheese, and the strained crushed pineapple and mix to combine.
- Pour the topping on top of the cooled crust. If desired, add maraschino cherries and toasted coconut on top. Transfer to the fridge for at least one hour to set up. Enjoy!

This is a cake that I grew up eating and one of the first that my mom let me make on my on. Its so easy. All ovens are different so be sure to check on its doneness. Also to make sure its moist I spoon the juice from the drained can of pineapple over the cake to make sure it is moist.

- In a bowl combine melted butter, sugar, eggs then add Graham Crackers and baking powder, milk, nuts coconut and vanilla. (No mixer needed).
- Bake in a tube or bunt pan on 300 degrees for approximately 1 hour.
- Cake is done when a toothpick is inserted and comes out clean.
- Let cool completely before icing.
- ICING.
- In a pot, melt butter on low heat on stove. In the same pot add drained pineapple. Slowly add powdered sugar until you have added all of the sugar.
- Pour over completely cooled cake.
