Number Of Ingredients 11

6 cups chopped peaches (about 3 pounds)
3 large fresh tomatoes
1 1/2 cups chopped red onions
4 medium jalapeno peppers, seeded and finely chopped
1 large sweet red pepper, seeded and finely chopped
1/2 cup finely chopped cilantro
1/2 cup white vinegar
2 tablespoons liquid honey
3 garlic cloves, finely chopped
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper

Steps:

  • Sterilize 8, 1/2 pint jars, then place upside down in a 325 F oven for about 15 minutes.
  • Blanch peaches, cool in cold water, peel, pit and chop to measure 6 cups.
  • Blanch tomatoes and cool with cold water, peel, remove seeds and cut into chunks.
  • In a large stainless or enamel cooking pot, combine peaches, tomatoes, onion, Jalapeno peppers, sweet red pepper, cilantro, vinegar, honey, garlic, cumin and cayenne pepper.
  • Bring to a boil, and cook for about 5 minutes, stirring frequently. If the mixture is too sloppy or soupy, boil for a few minutes longer so that some of the liquid evaporates and the mixture thickens.
  • Adjust seasonings to taste.
  • Add more cayenne pepper if you desire a spicier taste.
  • Ladle salsa into hot jars to within 1/4 inch of top for headspace.
  • Remove air bubbles by sliding a rubber spatula between the glass and salsa.
  • Re-adjust the headspace to 1/4 inch.
  • Wipe jar rim to remove any stickiness.
  • Center lid on top of jar; apply screw band just until finger tight.
  • Place jars in a hot bath in a canner and process for 10 minutes.
  • Remove jars and place on a towel, then cover with another towel to cool slowly.
  • Jars are sealed when the lids pop and are curved down, (concave).
  • Label jars and store in a cool, dark place.
  • NOTE: You can substitute and use 6 cups of fresh, chopped pineapple for a different flavor.

This recipe is a little different, in a good way! I was experimenting in my kitchen and thought it was good enough to share! It's super easy to make and is just as easy to modify. I purposely omitted the broiler temperature, as broiling is done to taste.

2 tomatoes, halved
1 small peach, halved and pitted
½ white onion, halved
½ red bell pepper, halved
½ yellow bell pepper, halved
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon white sugar, or to taste
½ teaspoon salt
½ teaspoon chopped fresh parsley, or to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange tomatoes, peach, onion, red bell pepper, yellow bell pepper, and garlic on a baking sheet.
  • Broil in the preheated oven until vegetables and peach are browned and tender and tomato skins can be peeled off, 10 to 15 minutes.
  • Dice the roasted vegetable and peach and transfer to a bowl. Add lemon juice, sugar, salt, and parsley; toss to coat. Refrigerate at least 1 hour for flavors to blend.

This tomato salsa is mild - double the jalepeno peppers for hot salsa. It's important to use commercial lemon and lime juice to assure the finished salsa is acidic enough to can safely. Fresh squeezed juice can vary in acidity.

10 cups tomatoes, peels and chopped
2 1/2 cups onions, chopped
3 cups bell peppers, chopped (red are prettiest()
3 cups cucumbers, peeled and chopped
3/4 cup lemon juice
3 tablespoons lime juice
3 poblano peppers, roasted, peeled, and chopped
5 jalapeno peppers, seeded and chopped
4 teaspoons garlic, crushed
2 tablespoons salt
1 habanero pepper, seeded and minced (optional)

Steps:

  • Combine all ingredients, and simmer until reaches desired consistency (about 30 minutes, depending on how juicy the tomatoes are).
  • Ladle into hot pint jars. Cap with two piece caps, and process in boiling water bath for 15 minutes.
  • Cool and store in cool, dark place.
