RISE 'N' SHINE BREAKFAST BAKE
Whether you've got company staying over, or you just had a long night, we know you want an easy breakfast recipe the next morning. Well, our Rise 'n' Shine Breakfast Bake is perfect to get the day started right! This has all the goodies like eggs, ham, cheese, and some sour cream to bring it all together! And, since this recipe uses refrigerated and freezer aisle shortcuts, it couldn't be easier--or tastier!

Steps:
- Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large bowl, whisk eggs, sour cream, onion powder, salt, and pepper. Add potatoes, ham, broccoli, and cheese; mix until thoroughly combined. Pour into baking dish.
- Bake 40 to 45 minutes or until the center is set. Cut into squares and serve piping hot.
RISE AND SHINE HEALTHY BREAKFAST COOKIES
These are relatively healthy for a cookie...not too sweet and with some extra fiber they make a nice breakfast treat. They are best eaten fresh and hot out of the oven but still taste good the next day. Craisins or raisins can be added for variety.

Steps:
- Preheat oven to 350 degrees. Stir together flour, baking soda, salt, cinnamon and nutmeg. Set aside.
- In a large bowl combine brown sugar, egg and vegetable oil. Stir until well combined. Stir in flour mixture, oats and wheat germ (or flax seed).
- Drop by tablespoonfuls on baking sheet. Flatten slightly with glass (not too much if you like the centers a little soft). Bake for 8-10 minutes or until lightly browned.
WEEKEND SEASONED RISE AND SHINE SAUSAGE CASSEROLE (BREAKFAST BAK
This is recipe originally from Jimmy Dean. It is similar to the Rise and Shine casserole listed on this site but is seasoned and includes the bread too. Perfect for a weekend breakfast or brunch or for a holiday or birthday morning. It is somewhat labor intensive in that you have to remember to refridgerate it but not too long and take it out before baking for an hour but not longer than 2 and you have to let it sit when you really just want to eat it right away. But it takes a lot of the prep out of chopping etc. So check it out.Thus preparation time includes refrigeration time, prep and letting it sit after baking. Serve this to family and friends. Enjoy. Steps:
- Preheat oven to 350°. Using about 1 tablespoon butter or margarine, grease the bottom and sides of a 3-quart casserole dish. Layer bottom only of casserole dish with white bread; bread should touch but not overlap. Pour package of Jimmy Dean Skillets on top of bread, evenly distribute from side to side. Cover with 1 1/2 cup cheese.
- Mix eggs, cream, paprika, black pepper, red pepper, dry mustard and Worcestershire Sauce together. Pour on top of Skillet mixture. Top with remaining cheese.
- Cover and refrigerate 8 hours (overnight is okay). Take out of the refrigerator at least 1 hour prior to cooking. (no more than 2). Bake 1 hour at 350°. Let casserole should stand 15 - 20 minutes before serving.

Steps:
- Cover entire 8X8 (2 quart) baking dish with "Reynolds Wrap" Foil. Lightly grease the foil covered pan with vegetable oil or cooking spray. Place canned biscuits in pan and bake biscuits according to directions on label. Remove biscuits from oven when biscuits are slightly golden brown on top and let cool. Once cooled, crumble biscuits into bite-sized pieces. Spread biscuit pieces in foil covered pan and set aside. Sprinkle monterey jack cheese atop of biscuits and evenly add tomatoes atop of cheese. In a medium bowl crack 4 eggs and add milk and salt, mix ingredients together. Pour egg mixture atop of biscuit pieces, cheese, and tomatoes. Bake at 350 degrees for about 35 minutes or until when fork inserted in middle of bake comes out dry and not wet. While Rise and Shine Breakfast Bake is cooking, fry 7 slices of bacon in a skillet and cook about 10 minutes or until bacon is nice and crispy on both sides. Crumble bacon into medium size pieces. Remove Rise and Shine Breakfast Bake from oven (insert fork in center to see if done) and let cool for 5 minutes. Sprinkle crumbled bacon pieces atop of Rise and Shine Breakfast Bake and serve warm. Enjoy! :).
