A friend gave me this recipe a long time ago. It's rich and creamy yet refreshing. I make this often in early summer when rhubarb is readily available. -Norma DesRoches, Warwick, Rhode Island

1/2 cup chopped fresh or frozen rhubarb
2 tablespoons plus 1-1/2 teaspoons sugar, divided
1-1/2 teaspoons water
1/2 cup sliced fresh strawberries
1/3 cup heavy whipping cream, whipped
Additional sliced fresh strawberries, optional

Steps:

  • In a small saucepan, combine the rhubarb, 2 tablespoons sugar and water. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until tender, about 10 minutes. Transfer to a small bowl; cool to room temperature., Place strawberries and remaining sugar in a food processor; cover and process until pureed. Stir into rhubarb mixture. Fold in whipped cream. Spoon into 2 parfait glasses or dessert dishes. Cover and refrigerate until chilled. Garnish with additional berries if desired.

One of the most delicious and easiest pie recipes I know. I got this wonderful recipe from my mother Pauline, who I believe got it from my Aunt Angela. I love all their pies, but this might be my favorite.

1 (9 inch) unbaked pie crust (see footnote for recipe link)
3 cups rhubarb, sliced 1/4-inch thick
1 cup fresh strawberries, quartered
3 large eggs
1 ½ cups white sugar
3 tablespoons milk
3 tablespoons all-purpose flour
¼ teaspoon freshly grated nutmeg
1 tablespoon butter, diced
2 tablespoons strawberry jam
¼ teaspoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place rolled-out pie crust in a 9-inch pie plate and set on a baking sheet lined with parchment paper or a silicone baking mat.
  • Combine rhubarb and strawberries in a bowl; transfer to the pie crust, distributing evenly.
  • Whisk eggs, sugar, milk, flour, and nutmeg together in a medium bowl. Slowly pour filling over rhubarb mixture until it just reaches the top edge of the crust. Scatter diced butter evenly over the top of the filling. Lightly tap and shake the baking sheet to remove any air bubbles.
  • Transfer pie to the preheated oven and bake, turning halfway through, until rhubarb is tender and custard is set, about 1 hour.
  • Mix strawberry jam and water in a small bowl; heat in the microwave until warm, about 15 seconds. Glaze the top of the pie with the jam mixture and let cool. Refrigerate until ready to serve.

This recipe is from my daughter, Jodi. It's a favorite at all of our early summer family gatherings.

Number Of Ingredients 12

1 1/2 cups flour
1/2 cup sugar
3/4 cup butter
2 cups chopped rhubarb
1/2 cup sugar
2 tablespoons flour
2 (8 ounce) packages cream cheese
1/2 cup sugar
2 eggs
2/3 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla

Steps:

  • Combine crust ingredients. Spread in 9X13" pan and bake at 375 for 10 minutes.
  • Toss together ingredients for rhubarb layer and pour over crust. Bake for 15 minutes.
  • Mix together cream cheese and sugar. Beat eggs in one at a time, pour mixture over rhubarb and bake 25 minutes at 375.
  • Mix glaze ingredients and spread over bars as soon as they come out of the oven.

The name says it all - very rich, very creamy and very naughty. If you love rhubarb, and you love cream, you'll love this....besides which, it's dead easy. Serve well chilled after a light meal. Adapted from a recipe by Pamela Westland.

1 lb rhubarb
4 ounces superfine sugar
10 ounces double cream
1 ounce powdered sugar (icing sugar)
2 ounces butter
2 ounces soft brown sugar
6 ounces fresh white breadcrumbs
1 ounce walnuts, chopped
1 tablespoon ginger in syrup, drained and chopped (optional)
fresh strawberries, to decorate (optional)
glace cherries, to decorate (optional)

Steps:

  • Remove any leaves from the rhubarb stalks and rinse under cold water. Slice the stalks into 1 inch pieces.
  • Cook the rhubarb and superfine sugar together with a small amount of water, until pulpy, around 10 minutes.
  • Cool, then drain off any surplus juice through a colander. Mash the remaining pulp, and set aside.
  • In a mixing bowl, beat the cream stiffly with the powdered sugar, then set aside.
  • Place the butter, brown sugar and crumbs in a small pan and cook, stirring frequently, until the crumbs are crisp and golden. Add the walnuts and chopped ginger (if using) to the crumbs, when cold, and mix through.
  • Gently stir the rhubarb pulp and whipped cream together, and place a little in the bottom of four dessert glasses. Add alternate layers of crumbs and rhubarb cream, finishing with cream.
  • Decorate with strawberries or glace cherries if desired, and chill before serving.

Got this on line from Tast of Home and it looks so rich and creamy yet refreshing. I think this would be great to make in early summer when rhubarb is readily available. There are several other recipes called this here also from Taste of Home but this is a little differant. I think I'll add a few drops of red food coloring to make it a little brighter and then use additinal slices of fresh strawberries to garnish the tops. I may even prefer to puree the rhubarb to get a really creamy texture. Prep time does not include chilling time
