Time 25m

Yield 12

Number Of Ingredients 9

2 cups Gold Medal™ all-purpose flour
1/4 cup chopped fresh parsley or 4 teaspoons parsley flakes
3 tablespoons grated Parmesan cheese
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
1 to 1 1/4 cups whipping cream
1 tablespoon butter or margarine, melted

Steps:

  • Heat oven to 425°F. In large bowl, mix flour, parsley, 2 tablespoons of the cheese, the sugar, baking powder, salt and basil. Add 3/4 cup of the whipping cream; stir with fork just until dry ingredients are moistened, adding additional whipping cream 1 tablespoon at a time, if necessary, to form a soft dough.
  • On lightly floured work surface, gently roll dough in flour to coat. Knead lightly about 10 times or until dough forms a smooth ball. Pat dough into 1/2-inch-thick square.
  • With knife, cut dough into 12 squares. Place about 1 inch apart on ungreased large cookie sheet. Brush with melted butter; sprinkle with remaining 1 tablespoon cheese.
  • Bake 8 to 10 minutes or until light golden brown. Serve warm.

ALMOST-FAMOUS CHEDDAR BISCUITS

Almost-Famous Cheddar Biscuits image

Provided by Food Network Kitchen

Categories     side-dish

Time 35m

Yield 12-14 biscuits

Number Of Ingredients 12

Cooking spray
1 3/4 cups all-purpose flour
1 tablespoon plus 2 teaspoons baking powder
2 1/2 teaspoons sugar
1/4 teaspoon salt
3 tablespoons vegetable shortening, at room temperature
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
3/4 cup whole milk
3 tablespoons unsalted butter
1 clove garlic, smashed
1 teaspoon chopped fresh parsley

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
  • Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
  • Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
  • Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

baking powder
lemon
parsley leaves
vegetable shortening
milk
heavy whipping cream
all-purpose flour
salt
baking powder
lemon
parsley leaves
vegetable shortening
milk
heavy whipping cream

Steps:

  • Preheat oven to 425℉ (220℃). Grease 1 or 2 baking sheets or pans and set aside. In a bowl stir together the flour, salt, baking powder, lemon zest and parsley. Add the shortening and, using a pastry blender, fingertips or 2 knives, mix together until the mixture resembles oatmeal. Add the milk and cream and, using a fork, mix together until the mixture forms a mass and holds together. Gather up the dough into a ball, place on a floured board and knead a few times. Flatten the dough with your hands (or roll it out with a rolling pin) until it is ⅜ to ½ inch thick. Using a round cutter or glass 2 to 2½ inches in diameter, cut out as many biscuits as possible. Place on the prepared pan(s) about ¼ inch apart. Gather up scraps of dough and press together to make more biscuits. Place in the oven and bake until golden and light, about 15 minutes. Serve hot. Makes 20 to 24 biscuits. NOTE: Biscuits baked on baking sheets have more richly browned sides. Leftover biscuits can be placed in a plastic bag and refrigerated for up to 2 days; reheat in a 250F. oven.
