18 ounces semisweet chocolate, chopped into 1/2 - ounce pieces

Steps:

  • Heat the heavy cream and the butter in a 3-quart saucepan over medium high heat. Bring to a boil. Place the semisweet chocolate in a 3-quart stainless steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth.

  • The fantasy begins by placing the chopped chocolates in a medium-size bowl. Heat the cream, sugar, and chopped mint in a 1 1/2-quart saucepan over medium-high heat, stirring to dissolve the sugar; bring to a boil. Immediately pour the boiling cream through a medium-gauge strainer into the bowl of chopped chocolate. Discard the mint. Use a whisk to gently stir until the cream and chocolate come together in a smooth and glistening pool. Pour the mixture onto a baking sheet with sides and use a rubber spatula to spread the chocolate to the edges. Refrigerate for 40 minutes remove the chocolate mint mixture from the refrigerator and transfer it to a pastry bag fitted with a medium star tip. Line a clean baking sheet with parchment paper. Arrange the mint leaves on the baking sheet. Form the kisses by piping about 1 tablespoon of chocolate mint mixture onto each leaf, creating a spiral conical shape, about 1- inch high for each kiss Refrigerate the kisses for 30 minutes until firm. Store the kisses, tightly covered, in the refrigerator for up to a hour remove the chocolate mint mixture from the refrigerator and transfer it to a pastry bag fitted with a medium star tip. Line a clean baking sheet with parchment paper. Arrange the mint leaves on the baking sheet. 1 tablespoon dark rum

Steps:

  • Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.

1/2 recipe Devil's Food Cake batter (page 98)
1/2 recipe Basic Dark Chocolate Ganache (page 151), substituting 2 tablespoons of hazelnut liqueur, such as Frangelico, for the vanilla extract
1 1/2 cups toasted chopped hazelnuts

Steps:

  • Preheat the oven to 350˚F. Grease two 6-inch pans with butter or nonstick cooking spray.
  • Pour the Devil's Food Cake batter into the prepared pans and bake, as directed, adjusting the cooking time to 25 to 30 minutes for the smaller size.
  • While the cakes are cooling, bring the ganache to a workable consistency (about the consistency of peanut butter) by heating it over a double boiler and then allowing it to cool slightly, at room temperature.
  • Place the bottom cake layer over a piece of parchment or waxed paper to catch the ganache if it drips when you spread it. (You can reheat the ganache that has dripped and reuse it as desired, as long as it is free of cake crumbs.)
  • Spread the ganache about 1/2 inch thick onto the bottom layer and then gently press the second cake layer on top. Spread a thin layer of ganache around the sides and top of the cake as a crumb coat and let it set at room temperature. (See Icing a Cake, page 14.)
  • Once the crumb coat has set, reheat the ganache, if necessary, just until it is spreadable once again, then finish icing the cake with the ganache.
  • While the ganache is still soft enough for the hazelnuts to stick to it, gently press the hazelnuts, one small handful at a time, into the sides of the cake until it is covered. Let the cake set at room temperature for 20 to 40 minutes before serving.
  • The cake can be kept covered at room temperature for up to 2 days or in the refrigerator for up to 4 days. Bring the cake to room temperature for about 1 hour before serving.
  • Polish your look
  • By simply changing the flavor of the ganache, this cake can be perfect for all sorts of occasions. Here are some suggestions:
  • For an Asian-inspired dinner party, make the ganache with sake instead of hazelnut liqueur and sprinkle the top lightly with mixed black and toasted sesame seeds.
  • For anniversaries or other celebratory events, make the ganache with champagne instead of hazelnut liqueur and decorate around the perimeter of the top with rock sugar crystals.
  • For holiday cheer, make the ganache with peppermint extract instead of hazelnut liqueur and sprinkle with crushed candy canes.
  • For a not-all-chocolate version, make the ganache with Campari or Grand Marnier instead of hazelnut liqueur and use it only to fill between the two cake layers. Ice the outside with orange Citrus Cream Cheese Icing (page 146) and garnish with candied orange peel.

1/2 teaspoon salt
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 cup cocoa powder
3/4 cup butter
1 3/4 cups white sugar
3 eggs
3/4 cup plain yogurt
3/4 cup boiling water
1 -1 1/4 cup cream
2 tablespoons white sugar
8 ounces baking chocolate

Steps:

  • Sift the flour with the salt, baking soda, baking powder and cocoa.
  • In a large bowl, cream the sugar into the butter.
  • Add the eggs to the sugar / butter.
  • Alternately add the flour mixture, yoghurt and boiling water to the sugar / butter.
  • Add the mixture to two 9" circular pans and bake in the oven at 350F for 30-40 minutes or until a toothpick inserted in the cake comes out dry.
  • Cool the cakes while you make the ganache (overnight works best).
  • For the ganache, mix the sugar into the cream and heat in a saucepan at medium.
  • Bring it to a light boil, and then pour over the baking chocolate squares in a medium bowl.
  • Mix until the chocolate is all melted, and the mixture is not lumpy.
  • Then place in the fridge for 30-60 minutes, until it has thickened.
  • Pour a little ganache over one of the baked cakes, and then place the second cake on top of the first one.
  • Pour the rest of the ganache over the two cakes, and then leave to cool.

Found these recipes in an AARP magazine, thought I might share them with everyone here. These scrumptious chocolate desserts are cooked in empty soup cans - just be sure to wash them thoroughly before using. You will need 3 cans.

2 ounces semisweet chocolate, use premium-quality, finely chopped
1/2 cup walnut pieces
2 tablespoons all-purpose flour
3 tablespoons unsalted butter, plus more for greasing the cans
1/4 cup sugar
2 large eggs, seperated
1/2 teaspoon vanilla extract
1 pinch salt
1 pinch cream of tartar
1/4 cup heavy cream, plus
2 tablespoons heavy cream
5 ounces imported bittersweet chocolate, finely chopped (such as Lindt)

Steps:

  • Tortes:.
  • Place a rack in the center of the over and preheat to 375 degrees. Lightly grease the insides of 3 soup cans. Place the cans on a piece of parchment paper and trace the circumference of each. Cut out 3 rounds of parchment and line the bottom of each can with a round. Place the prepared cans on a baking sheet and set aside.
  • Place the chocolate in a small bowl and microwave on medium until the chocolate begins to melt, about 1 minute. Then stir until smooth. Let cool.
  • Place the walnuts and flour in a food processor and process until the walnuts are finely ground but not oily, about 10 to 15 seconds.
  • Place the butter and sugar in a medium mixing bowl and beat until cramy. Add the egg yolks one at a time, beating well after each addition. Beat in the vanilla with the last yolk. Reduce the mixer speed to low and beat in the melted chocolate until blended, about 10 to 15 seconds. Using a wooden spatula, gently stir in the ground walnut mixture.
  • Wash the mixer beaters and dry them thoroughly. Place the egg whites, salt and cream of tartar in a small bowl and beat on high until the whites hold stiff peaks, about 60 to 90 seconds. Fold the egg-white mixture thoroughly but gently into the chocolate mixture.
  • Spoon the batter into the prepared cans, dividing it evenly among them. Bake the cakes until a toothpick inserted into the center of one comes out clean, about 30 minutes. Remove the cans from the oven and place them on a wire rack to cool.
  • When the cakes have cooled, invert the cans over the wire rack to release them. Peel off the parchment paper and place the cakes upright on the racks.
  • Ganache:.
  • Pour the cream into a small saucepan and bring to a boil over medium-high heat. Immediately remove the pan from the heat and add the chocolate.
  • Let the mixture stand until the chocolate softens, about 1 minute, then stir with a whisk until the chocolate is melted.
  • Allow the ganache to cool slightly, then pour about 3 tablespoons of lukewarm ganache over each cake, using a spatual to smooth the icing all over.
  • Let the Cakes stand until the ganache is firm, about 1 hour. The Tortes will keep, covered, in the refrigerator for 2 to 3 days.

200g dark chocolate, roughly chopped
300ml double cream
2 tbsp golden caster sugar

Steps:

  • Put the chocolate in a large mixing bowl. Pour the cream into a saucepan with the sugar and bring to a simmer, stirring continuously until the sugar is melted. Bring to the boil, then quickly remove from the heat, pour over the chocolate and whisk until smooth and glossy. Use straight away or leave to cool down a little until thick enough to spread on a cake. Alternatively, leave to cool completely, then beat with an electric whisk until light and fluffy and spread on a cake.
