A Gordon Ramsay classic made simple. This salad niçoise is a fresh-tasting summer meal

300g small new potato
100g fine green bean , trimmed
3 eggs , as fresh as you can get them
2 Baby Gem lettuces , outside leaves trimmed off
5 tbsp extra-virgin olive oil
200g cherry tomato , halved
2 tbsp balsamic vinegar
small handful basil leaves
325g piece fresh tuna loin
½ lemon , juiced
50g black olive , preferably niçoise, pitted
5 marinated anchovies fillets
1 garlic clove
½ lemon , juiced
4 tbsp olive oil
1 tbsp balsamic vinegar

Steps:

  • First, make the dressing. Tip the olives, anchovies and garlic into a large mortar and mash with a pestle until you have a very rough paste. Scrape into a bowl, if you like, stir in the lemon juice, olive oil and vinegar, then set aside.
  • Cook the potatoes in boiling water for 15 mins until tender, then drain and set aside. Cook the beans in boiling salted water for 4-5 mins until tender with a slight crunch. Drain, tip into iced water, then drain again and set aside. Boil a small pan of water and cook the eggs until cooked to your liking, about 6 mins for a soft yolk and 7½ mins for a harder yolk.
  • Halve the potatoes and heat 2 tbsp oil in a non-stick frying pan. Place the potatoes cut-side down in the pan and sizzle for about 4 mins until golden and crisp. Toss the potatoes in the pan to brown on all sides, then turn up the heat and add the tomatoes. Fry the tomatoes for about 1 min until just starting to blister, then season. Splash in 1 tbsp of the balsamic vinegar, then turn off the heat and scatter over the basil.
  • To cook the tuna, place a non-stick frying pan over a high heat, then turn the heat down to medium and add 1 tbsp oil. Season the tuna generously, then sear for 4 mins, leaving it undisturbed in the pan to brown. Turn over and continue to cook for 4 mins on the other side. This will give you very rare tuna. For rare, cook for 2 mins more on each side and for well done, add another 4 mins on each side. Set the tuna aside to rest for a few mins.
  • To serve, whisk the remaining oil and vinegar with the lemon juice in a small bowl and toss in the lettuce wedges. Place a spoonful of olive dressing into 2 serving bowls, arrange the potatoes and tomatoes over, then put a pile of beans on top. Slice the tuna in half at a slight angle and place each half on top of the beans. Wedge the lettuce around the outside, halve the eggs and position in between the lettuce. Dollop a small spoonful of olive dressing on each egg.

1 pound red-skinned potatoes, sliced 1/3 inch thick
Kosher salt
2 tablespoons dry white wine
10 ounces haricots verts or thin green beans, trimmed
4 large eggs
1/4 cup white wine vinegar
1/2 shallot, minced (about 2 tablespoons)
2 tablespoons dijon mustard
1 tablespoon chopped fresh thyme
Freshly ground pepper
3/4 cup extra-virgin olive oil
8 cherry tomatoes or small cocktail tomatoes, halved or quartered
1 head Boston lettuce, leaves separated
6 radishes, trimmed and quartered
2 5 1/2-ounce cans Italian or Spanish tuna packed in olive oil, drained
1/2 cup nicoise olives

Steps:

  • Put the potatoes in a medium saucepan; cover with cold water and season with salt. Bring to a simmer over medium-high heat and cook until fork-tender, about 5 minutes. Drain and transfer to a medium bowl; drizzle with the wine and let cool. Reserve the saucepan.
  • Meanwhile, bring a separate saucepan of salted water to a boil. Fill a bowl with salted ice water. Add the haricots verts to the boiling water; cook until crisp-tender and bright green, 2 to 4 minutes. Drain and immediately plunge into the ice water to cool; drain and pat dry.
  • Place the eggs in the reserved saucepan and cover with cold water by about 1 inch. Bring to a simmer over medium-high heat, then cover, remove from the heat and let stand, 10 to 12 minutes. Drain, then run under cold water to cool. Peel under cold running water.
  • Make the dressing: Whisk the vinegar, shallot, mustard, thyme, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the olive oil in a slow, steady stream until emulsified.
  • Toss the tomatoes ian a small bowl with salt and pepper to taste. Add about 1/4 cup dressing to the potatoes and toss. Quarter the hard-cooked eggs.
  • Divide the lettuce among 4 plates. Arrange the potatoes, haricots verts, radishes, hard-cooked eggs and tuna on top. Pour any juices from the tomatoes into the dressing, then add the tomatoes to the plates. Drizzle with the dressing and top with the olives.

¼ cup pitted nicoise olives
½ onion, thinly sliced
1 (5 ounce) can tuna
⅓ pound fresh green beans - rinsed, trimmed and blanched
½ pound mixed salad greens
1 cup lemon vinaigrette
3 hard-cooked eggs, quartered
3 roma (plum) tomatoes, thinly sliced
1 tablespoon capers
4 anchovy filets

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
  • In a large bowl, combine the potatoes, parsley, olives, onion, tuna and green beans. Refrigerate for 2 to 4 hours.
  • In large bowl, toss greens with vinaigrette and top with chilled potato mixture. Garnish with eggs, tomatoes, capers and anchovies.

1/2 cup long-grain rice
1/2 pound green beans
1 or 2 sprigs of fresh tarragon to yield 2 teaspoons chopped
About 10 calamata olives
1 ripe 8-ounce tomato
2 teaspoons capers
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Freshly ground black pepper to taste

Steps:

  • Combine the rice and 1 cup of water in heavy bottomed pan, and bring to a boil; reduce heat, and simmer, covered, cooking a total of 17 minutes, until the rice is tender.
  • Wash and trim the beans, and cook about 5 minutes in a steamer.
  • Meanwhile, wash and chop the tarragon, pit the olives, trim the tomato and dice. Add these ingredients with the capers, oil and vinegar to a serving bowl, and stir well.
  • When beans are cooked, drain and rinse under cold water, cut in halves or thirds and add to bowl.
  • When rice is cooked, stir in and season with pepper.

1/3 cup red onion, minced
1 1/2 teaspoons balsamic vinegar
1 (6 ounce) can tuna in olive oil, undrained
3 cups cooked barley or 3 cups cooked cracked farro
1 small red bell peppers or 1 small yellow bell pepper, seeded and diced
1/3 cup pitted oil-cured black olive, chopped
2 tablespoons capers, drained and rinsed and minced
1 -3 tablespoon fresh lemon juice
1 teaspoon lemon zest (optional)
1 -2 tablespoon olive oil (optional)
2 tablespoons fresh flat-leaf parsley or 2 tablespoons fresh tarragon, minced
2 teaspoons fresh lemon thyme, chopped (optional)
salt, to taste

6 cups romaine lettuce, loosely packed and shredded

1 lb fresh green beans, trimmed and steamed and cooled

Steps:

  • In a small bowl, combine the red onion and vinegar. Set aside to soak for at least 10 minutes.
  • Empty the tuna and oil into a large bowl. Flake tuna with a fork.
  • Add cooked brown rice, bell pepper, olives, and capers.
  • Stir in the onion and any unabsorbed vinegar.
  • Add lemon juice, lemon zest (if using), olive oil (if using), parsley, thyme (if using), and salt and pepper to taste.
  • To serve, place a bed or lettuce and radicchio (if using) on each plate and spoon the salad on top.
  • Arrange green beans and eggs alongside.

Among them are the briny black nicoise olives featured in this recipe. You can find them in specialty food markets or you can substitute Greek kalamata olives, if necessary. In any case, you won't be dissappointed. This is a delicious recipe.

2 tablespoons olive oil
6 (6 ounce) boneless skinless chicken breasts
1 large onion, chopped
1 tablespoon minced garlic
1 (15 ounce) can diced tomatoes, undrained
1 cup pitted and coarsely chopped nicoise olives or 1 cup kalamata olive
1/2 cup red wine
1/2 cup reduced-sodium chicken broth
1 tablespoon Pernod, optional
1 teaspoon herbes de provence

Steps:

  • Heat the olive oil in a large skillet over medium high heat.
  • When hot, add the breasts; saute until well browned on both sides, 3 to 4 minutes per side.
  • Remove and set aside.
  • Add the onion and saute until softened, 3 to 4 minutes; add the garlic and continue to cook until fragrant, 30 seconds to 1 minute.
  • Add the tomatoes with their juice and crush lightly with a fork.
  • Add the olives, red wine, broth, Pernod, if using, and herbes do Provence.
  • Cook until reduced and thickened slightly, 8 to 10 minutes.
  • Return the breasts to the skillet; reduce the heat to low.
  • Cook, covered, turning once, until the chicken is no longer pink in the thickest portion when cut with a knife, 3 to 4 minutes per side.
  • I like to serve this with rice and steamed runner beans.

4 round medium-sized tomatoes
5 eggs
1/2 cup of sliced black olives
1 can of fava beans
3 chopped spring onions
2 cans of tuna (or anchovies)
400g of mesclun salad "spring mix"
1 clove of chopped garlic
6-7 chopped basil leaves
4-5 tablespoons of olive oil
2 tablespoons of red vinegar
pinch of salt and pepper
1 thinly-sliced bell pepper
1 chopped cucumber (if not including fava beans)
1/4 cup of lemon juice (if not including red vinegar)
sweet corn
small red onions (if not added spring onions)
chopped radishes
1 cup boiled green beans
3 boiled medium-sized potatoes (chopped)
2-3 tablespoons of mayonnaise
1 teaspoon of mustard

Steps:

  • To make the vinaigrette, whisk together the olive oil, vinegar (or lemon juice), basil, and garlic in a bowl. Add salt and pepper, and any optional ingredients such as mustard or mayonnaise.
  • Boil the eggs for 8 minutes, then let cool in a bowl of cold water. Remove egg shells and chop into quarters.
  • Rinse the mesclun lettuce and arrange in a large serving bowl.
  • Chop the tomatoes into quarters and toss into the serving bowl, along with the eggs.
  • Shred the tuna (or anchovies) into small pieces and add in the bowl.
  • Drain and rinse the canned fava beans and put in a pot of boiling water. Bring to a simmer and cook for approx 5-8min until soft.
  • Add the rest of the ingredients into the serving bowl and toss the salad.
  • Let salad rest for 20 minutes before serving.

1 (6 ounce) can solid white albacore tuna, drained

When I'm ready to eat, I add 1/3 c rice (give the rice a quick zap in the microwave; cold rice is not good) and a squeeze of fresh lemon. The olive oil from the tuna will pair with the lemon juice to dress the salad. Yields: 5 servings.

  • The Pan Bagnat. The traditional tourist “vegetable sandwich” of tourists of the past has also become famous. Containing the same elements as the salade niçoise, the Pan Bagnat is placed in a round bun, abundantly oiled; it is eaten cold (without mayonnaise or chicken!)
  • The “Daube Nicoise”: a summer and winter dish. The Daube niçoise is a stew is a bit like the beef bourguignon that you eat in the winter, but be aware that there is no season to taste a daube.
  • The “Gnocchi à la niçoise” Potato Gnocchis are small dumplings of potato flour and egg, cooked in water, and tasted with a drizzle of olive oil or a sauce of your choice (with cream of cepes, pesto, etc.).
  • The Raviolis. In Nice, we do not mix it all! Ravioli from Nice are exclusively made with chard and beef stew. And it is the cooking of the stew that provides the sauce.
  • The Pissaladière. As much to say it immediately, it is a pure delight. Made from bread dough, this pie is not to be confused with pizza as it does not contain tomatoes.
  • Salty or sweet: the Chard Pie ” Tarte aux Blettes“ The chard pie is used as a starter and dessert. Only a few ingredients change in preparation. The salty recipe is stuffed with a mixture of rice, Swiss chard, and beaten eggs.
  • The “Fleur de courgettes” flowers donuts. So, beware, purists will tell you that we only cook male flowers here! If you do not know how to recognize a male bud of a female flower, you are given a hint: the female is at the end of zucchini.
  • The niçoise olives and olive oil. Nice is the land of the Cailletier, an olive world-famous for its exceptional taste. Of these olives already excellent to taste alone because tender and with very developed aromas, one draws oil, soft, unctuous, and very tasty as well as olive paste.

  • Citrus Rice Make Lemon Rice (No. 1), adding 1/2 teaspoon each grated orange zest and lime zest with the lemon zest. Gently stir in the chopped segments of 2 oranges.
  • Toasted Garlic Rice Saute 8 sliced garlic cloves in 3 tablespoons olive oil in a saucepan over medium heat until golden, 2 minutes; remove to a plate.
  • Toasted Garlic and Sage Rice Make Toasted Garlic Rice (No. 3), frying 8 small sage leaves with the garlic; use for garnish.
  • Tomato-Rosemary Rice Saute 2 minced garlic cloves in 3 tablespoons olive oil in a saucepan over medium heat until golden, about 3 minutes. Stir in 2 cups long-grain white rice, then add one 14-ounce can cherry tomatoes, 1 1/2 cups water and 1 1/4 teaspoons kosher salt; bring to a boil.
  • Tomato-Rosemary Rice with Pancetta Brown 4 ounces chopped pancetta in 2 tablespoons olive oil in a skillet, 5 minutes. Stir in 1 chopped small head escarole and cook until wilted.
  • Basic Risotto Heat 4 cups chicken broth and 3 cups water in a saucepan. Heat 1/4 cup olive oil in a large skillet over medium heat. Add 1 cup chopped leeks and 1/2 cup chopped shallots and cook until tender, 5 minutes.
  • Pumpkin-Sage Risotto Make Basic Risotto (No. 7), stirring in 1 tablespoon chopped sage and 1/4 teaspoon nutmeg before adding the rice. Stir in 1 cup canned pumpkin puree with the final addition of broth.
  • Red Wine Risotto Make Basic Risotto (No. 7), browning 8 ounces crumbled sausage (casings removed) in the olive oil before adding the leeks. Stir in 2 tablespoons tomato paste before adding the rice and replace the white wine with red wine.
  • Mushroom Risotto Make Basic Risotto (No. 7), warming the broth mixture with 1/4 cup chopped dried porcini mushrooms. Brown 1 1/2 pounds sliced mixed mushrooms and 2 teaspoons chopped thyme in the olive oil before adding the leeks.
