Here's a salad that goes well with many menus. It has a hint of Asian flavor, with spinach and green onions for color and bacon for a bit of crunch.

- In a large bowl, combine the salad dressing, soy sauce and sugar. Stir in the rice, celery and onions. Cover and refrigerate for at least 1 hour. , Just before serving, stir in spinach and bacon.

SPINACH-ALMOND RICE

- Bring 3 cups salted water to a simmer; add 1 1/2 cups basmati rice, cover and cook over low heat until tender, about 20 minutes. Fluff with a fork, then let cool. Toss with 4 cups baby spinach, 1/2 cup each chopped marinated artichoke hearts and toasted slivered almonds, 1 cup chopped fresh dill, 1 tablespoon grated lemon zest, the juice of 2 lemons and 1/3 cup olive oil. Season with salt and pepper.
SPINACH RICE SALAD
I got this recipe from my sister-in-law, who is a very good cook. It's delicious and easy. The cook time is boiling the rice. I use my microwave for the bacon.

RICE AND SPINACH SALAD
My friend Nancy served this salad at a backyard barbeque years ago, and I had to have the recipe. I've been making it ever since and it's always a hit. I often make it a day ahead and then bring it to room temperature and add the nuts just before serving.

Steps:
- Cook rice in salted water according to package directions, then let cool.
- Thaw spinach and squeeze out the water.
- Toast almonds in a 250-300 degree oven till light brown.
- Combine dressing ingredients in a jar or cruet and shake well to combine.
- Toss together cooled rice, spinach and onions.
- Add dressing and mix well.
- Refrigerate several hours or overnight to combine flavors.
- Add toasted nuts just before serving.
- Can be served cold, but it's better at room temperature.

From Uncle Ben's, clipped from the AJC a few years ago. Great for pot lucks, barbeques. I like to use Paul Newman's Italian dressing for this recipe.

- Cook rice according to package directions. Cool slightly, about 10 minutes. Combine the Italian dressing, soy sauce and sugar and stir into rice. Cover and chill at least one hour or as long as overnight. Just before serving, fold in the spinach, celery, green onions and bacon.

SPINACH SALAD DRESSING
My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

- Combine all ingredients in a jar, except olive oil, and shake thoroughly to mix.
- Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
- Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
- Note: Use the Sriracha hot sauce if you can find it.
- It adds a lot of flavor, not just heat!
