MY BEST CHICKEN AND RICE IN WINE



My Best Chicken And Rice In Wine image

Easy to make. A good mixture of flavors. One of our favorites. This is from Pierre Franey, my favorite chef. If you like you can add a bay leaf with the mushrooms.

4 boneless skinless chicken breast halves
4 teaspoons butter
1/2 cup minced onion
2 teaspoons minced garlic
1 cup fresh mushrooms, sliced
1 cup chicken broth
1/2 cup dry white wine
3/4 cup rice

Steps:

  • Brown chicken in butter in a dutch oven.
  • Scatter onion and garlic over chicken.
  • Add mushrooms,and cook 5 minutes.
  • Add chicken broth.
  • Add wine, cook another 5 minutes.
  • Add rice, cover and cook 20 minutes.

From a Women's Weekly Dinner Party Cookbook. A nice change from plain rice! If you have any leftovers, add some cooked peas, canned tuna & some cream for an easy tuna rice dish, yum!

90 g butter
1 onion, chopped finely
1 cup long grain rice, washed
2 1/2 cups chicken stock
1/2 cup dry white wine
salt and pepper

Steps:

  • Heat butter in a pan, add onion and cook gently until onion is tender and lightly golden.
  • Add rice and stir for 3 minutes.
  • Add 1 cup of hot chicken stock to pan and stir until almost completely dissolved.
  • Add remaining stock & wine, bring to the boil, reduce heat & simmer gently for approximately 10 mins until rice is tender.
  • Season with salt & pepper & serve.

Middle Eastern cuisine was entirely new to me till the ZWT last yr, but I love rice pudding & consider it the ultimate comfort food. I recently ran across this recipe by Irfan Orga from "Cooking the Middle East Way". I admit it is rich & a bit labor-intensive, but I found the prep & likely outcome intriguing. I hope you will as well. Enjoy! (Time does not include time for mixtures to cool, rest or chill under refrigeration at various stages of the prep)

1/2 cup white rice (uncooked, but rinsed)
1 1/4 cups milk
1 1/4 cups light cream
2 tablespoons butter
3/4 cup raisins
3 tablespoons fine sugar
1 pinch salt
2 eggs (lightly beaten)
3/4 cup almonds (blanched & ground)
3/4 cup granulated sugar
2/3 cup dry white wine
1 cup heavy cream

Steps:

  • Preheat oven to 350°F (180°C).
  • In a lrg saucepan, boil rice in plenty of water till very soft. Drain well of liquid thru a fine sieve & return rice to the pan.
  • Add milk, light cream, butter, raisins, fine sugar & a pinch of salt.
  • Cook over med-heat till mixture is quite thick, stirring freq to prevent burning. Remove pan from heat & allow mixture to cool.
  • Add beaten eggs + ground almonds & stir thoroughly.
  • Pour pudding mixture into a well-buttered shallow baking dish & cook for 30 min or till the top of the pudding is a golden brown color.
  • Remove pudding from oven & allow to rest for 10 minutes. With a very sharp knife, cut pudding into triangular shapes in the baking dish & allow it to cool completely.
  • Meanwhile, put the granulated sugar & wine in a heavy saucepan & boil uncovered, stirring till the sugar dissolves & a thick syrup is obtained (about 10 min).
  • Pour the syrup over the cut rice shapes in the dish & leave it to be absorbed. Chill in refrigerator till completely cold & serve w/whipped cream.

1 lemon, rind of
8 cloves garlic, Peeled
1/2 cup parsley
6 tablespoons unsalted butter
1 cup rice (Not Instant)
1 1/4 cups chicken stock
3/4 cup dry vermouth
salt & pepper

Steps:

  • Chop together the lemon rind, garlic and parsley.
  • Heat the butter in heavy 2-qt pot.
  • Cook the garlic mixture very gently for 10 minutes.
  • Stir in the rice.
  • Stir over medium heat for 2 minutes.
  • Combine the stock and wine in a saucepan.
  • Heat until it begins to bubble at the sides.
  • Stir into rice; add salt and freshly ground pepper.
  • Cover tightly and simmer over very low heat for 20 minutes or until liquid is absorbed and rice is tender.
  • Fluff with a fork.
  • Cover the pot with a kitchen towel and lid until it is time to serve.
  • Serve hot or at room temeperature.

I made up this recipe one night with ingredients we had in the kitchen/fridge...and we just loved it...very flavorful sauce and perfect with rice. I hope you enjoy it as much as we did!

4 boneless skinless chicken breasts, cut into bite sized pieces
1/4 cup extra virgin olive oil
1/2 cup white wine (I used a Reisling)
2 tablespoons horseradish sauce
3 tablespoons Dijon mustard
2 tablespoons capers
1 medium sweet onion, sliced
1/4 cup crumbled feta cheese
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups white rice (amount before cooked)

Steps:

  • Start cooking rice according to package directions and allow to cook while preparing chicken dish.
  • Combine olive oil, white wine, horseradish sauce, and dijon on stove over medium heat.
  • Add onion slices and capers. Cover and cook for 5 minutes or until onion is starting to get tender.
  • Add chicken to wine/onion sauce and cook covered over medium heat for 5-7 minutes.
  • Add salt/pepper to taste and feta cheese to chicken mixture and stir over low heat until cheese is melted and chicken is cooked through.
  • Serve over cooked rice.
