CREAM CHEESE LEMON BARS
Cream Cheese Lemon Bars are the dessert you never knew you needed, but bake them once, and you'll never go without them again. Sweet, cream cheesy, lemony, buttery, and so easy!

Steps:
- Preheat oven to 350 degrees and line a 9x13 inch pan with foil or parchment with plenty of overhang around the edges to lift the bars out of the pan before cutting.
- Prepare the crust by combining flour, sugar, salt, and butter cubes in a food processor or blender. Cover and pulse until fine crumbs form. (You can also do this with a pastry cutter, fork, or with your fingers in a large bowl.)
- Press crust into prepared pan and bake for 10 minutes while you prepare the filling.
- Prepare the filling by combining cream cheese and sugar in a large bowl. Cream together until smooth. Mix in flour, powdered sugar, lemon juice, eggs, and vanilla until completely incorporated.
- Pour filling over crust and return to oven for 30 minutes.
- Allow to cool for about 20 minutes, then cover and transfer chill in the fridge 4 hours or overnight. Lift the foil edges to remove the bars from the pan, slice into squares, sprinkle with additional powdered sugar, and serve.

FROZEN LEMON FLUFF DESSERT

- In a large bowl, whisk together jello, sugar, water, and lemon juice until sugar is dissolved. Cover with plastic wrap and refrigerate until almost set (about 1 hour).
- Press crushed lemon oreos into the bottom of a 9x13" pan, set aside.
- In a medium bowl, pour evaporated milk. Beat until stiff peaks start to form (about 3-5 minutes). Add whipped evaporated milk to the jello mixture, and fold in until completely combined. Pour mixture over oreo crust.
- Freeze for 2-3 hours, until set. Cut into squares and serve topped with lemon slices and lemon zest.
LEMON CREAM PUFFS
Lemon Cream Puffs are made with a classic, French pâte à choux pastry and filled with the most perfect, sweet lemon cream. These beautiful little puffs make a delicious dessert for spring and summer entertaining and celebrations.

- Preheat your oven to 425°F.
- In a medium sauce pan, bring the water and butter to a boil, ensuring that the butter is fully melted.
- Remove the pan from the heat and stir in the flour and salt with a wooden or silicone spoon until a ball of dough forms.
- Transfer the dough ball to the bowl of an electric mixer fitted with a whisk attachment.
- Add the eggs one at a time and beat on medium speed until each one is fully incorporated before adding the next.
- Spoon 1-2 tablespoons (1 for small or 2 for large puffs) of the batter onto an ungreased or Silpat-lined (recommended) baking sheet, about 2 inches apart.
- Bake for 20-25 minutes for smaller cream puffs, or until golden brown. Bake for 25-30 minutes for larger cream puffs.
- Remove the cream puffs from the oven, and with a toothpick or tip of a knife, poke a small hole into each one to allow the steam to escape and the centers to dry out as they cool.
- While the cream puffs are cooling, whip up the lemon cream.
- Place your mixing bowl and whisk attachment into the freezer for 15-20 minutes before you make the lemon cream.
- Remove the mixing bowl and whisk attachment from the freezer and add the heavy cream, sugar, lemon zest and lemon juice to the bowl.
- Beat on high for 5-6 minutes or until stiff peaks form.
- Once the cream puffs are fully cool, either pipe the lemon cream into the centers by poking a hole through the puff, or cut the tops off and fill with the cream. Once filled, replace the top.
- Add a light dusting of powdered sugar and/or a sprinkle of extra lemon zest, if desired.

LEMON PUFF FREEZE DESSERT
Perfect summertime dessert. Plan ahead this needs to be frozen for 8 or more hours, best if made a day ahead. Crushed graham cracker crumbs may be used in place of the vanilla wafers. If you love lemons, then you will love this frozen dessert! Prep time includes freezing time.

- Prepare a 9-inch springform pan.
- In a double boiler, mix/cook 2 eggs and three egg yolks, lemon juice and sugar until thick, stirring constantly; cool.
- Whip the cream, and fold into cooled lemon mixture.
- Mix together the vanilla wafers and melted margarine or butter (use just enough butter to hold the wafers together, you might use less or more than 1/3 cup).
- Line the bottom and sides of the springform pan with vanilla wafers.
- Pour the lemon mixture into the pan.
- In a bowl beat 3 egg whites until foamy, add in cream of tartar and icing sugar; beat until stiff peaks form.
- Spread on the top of the lemon mixture.
- Set oven to broil.
- Brown the meringue under the broiler until brown (watch closely not to burn, and make certain that the egg white topping does not touch the top of the meringue).
- Cover with foil and freeze for 8 or more hours.
- Remove from freezer (taking foil off immediately!) at least 1 hour before serving.
- **NOTE** if using a graham cracker crust mix 2 cups graham cracker crumbs with 1/3 cup plus 2 tablespoons melted butter or margarine and about 1/3 cup sugar.

Steps:
- Combine corn flake crumbs, 2 Tbsp sugar and melted butter in an 8 inch pie pan; mix well.
- Remove 1- 2 Tbsp of the mixture and reserve for topping.
- Press remaining mixture of crumbs to evenly form crust.
- Beat egg yolks until thick.
- Combine with condensed milk.
- Add lemon juice and lemon peel.
- Stir until thickened.
- Beat egg whites until stiff, not dry.
- Gradually add 3 Tbsp sugar to egg whites.
- Fold gently into lemon mixture.
- Pour into pie pan.
- Sprinkle with reserved crumbs.
- Freeze until firm.
- Remove from freezer 10- 15 minutes before serving.

- Combine melted butter and graham cracker crumbs until evenly soggy.
- Pat down into the bottom of a greased 9x13 pan.
- Bake at 350 degrees for 5 minutes.
- In a separate bowl, combine softened cream cheese, sugar, and cool whip.
- Blend with a hand mixer until light and fluffy.
- Pour and spread the fluffy mixture over the graham cracker crust.
- Refrigerate for 30 minutes
- In a different bowl, combine and mix together lemon pudding and milk until it is thick.
- Spread over the cream cheese topping.
- Top the dessert off with the remaining whip cream, lemon zest, and raspberries.

- Preheat oven to 400ºF. Roll out the puff pastry to fit your pie pan. Prick the bottom several times with a fork. Cover with a piece of parchment paper (or aluminum foil) and fill it up with pie weights (or you can use dry rice or other grain, or dried beans - you just won't be able to cook with them after). Bake the pie crust for about 20 minutes, until nicely golden brown.
- Meanwhile, whisk lemon juice, zest, sugar and salt together in a medium saucepan over medium heat. Cook until steaming hot and sugar is dissolved.
- Whisk eggs in a heatproof spouted measuring cup. Temper the eggs (prevent curdling) by very slowly drizzling about 1/2 cup of the hot lemon mixture into the eggs while whisking constantly. Again pouring very slowly, whisk the egg mixture into the saucepan with the rest of the lemon mixture. Cook the lemon curd, stirring constantly, until it thickens enough to coat the back of a spoon (if you're unsure, pull out your thermometer - it's done at 170ºF). It shouldn't come to a boil. Whisk in the butter, then scrape into baked crust (and if it's curdled at all, don't sweat it, just force it through a fine-meshed sieve first to remove any scrambled bits).

- Preheat oven to 375* F. Place rolled out pastry into pastry tin and press pastry against bottom and sides of a fluted tart pan (I used 13" x 4") until snug inside. Using a fork, punch holes into the pastry (base and sides). Brush pastry with egg wash. Line the bottom with parchment paper and fill with pie weights or dried beans.
- In a medium sauce pan, whisk the eggs, egg yolks, and sugar until just mixed. Stir in the Meyer lemon juice and zest, then all 6 tablespoons of butter. Place over low to medium heat (edging closer to low as if the eggs get too hot too quickly they will scramble) and cook, stirring constantly until mixture begins to thicken and can coat the back of a wooden spoon. About 10-15 minutes or when the mixture reaches a temperature of 170° F (if a candy thermometer is available). Allow to cool and set aside.
- Place egg whites and sugar in the bowl of a stand mixer (set with a whisk attachment). Using a double-boiler method, place bowl above a sauce filled with a couple of inches of water set above medium heat for a simmer (never allowing the bowl to touch the water). Heat the mixture until extremely warm to the touch, or has reached 160° F if using a candy thermometer. Remove the bowl from heat and carefully set into the stand mixer.
- Quickly whisk cooled curd to smooth it out and place curd inside cooled pastry. Top with meringue using a piping bag and a 1M star shaped tip (there maybe some leftover*). If you have a torch, carefully and lightly toast meringue if desired .
