RICE WITH FRESH HERBS
Ten Dollar Dinners viewers know how much I love my $5 rice cooker and the perfectly steamed rice it makes. Boiling rice is another easy way of making rice that yields a firmer and less starchy texture. You can even boil the rice ahead of time, refrigerate it for a few hours, and then finish it with the butter before serving warm or at room temperature. For the prettiest presentation, wait to stir in the herbs until just before serving.

Steps:
- Bring a large pot of water to a boil over high heat. Add the rice and 1 tablespoon of the salt and cook, stirring occasionally, until the rice is tender, 12 to 15 minutes. Drain through a fine-mesh sieve and rinse under cold water to stop the cooking. Shake the sieve to drain as much water as possible.
- Melt the butter in a large nonstick skillet over medium heat. Add the rice and the remaining 1/2 teaspoon salt and stir with a heatproof rubber spatula to coat all the rice with the butter. Once the rice is warmed through, about 3 minutes, transfer the rice to a serving bowl and add the herbs plus additional salt, if needed. Stir with a fork to incorporate and fluff the rice and serve warm or at room temperature.
LEMON HERB RICE RECIPE

- In a medium saucepan over medium heat, add the uncooked rice, chicken broth, butter, minced garlic, parsley, and salt. Bring to a boil, then cover and reduce the heat to low.
- Let simmer, without stirring or removing the lid, for about 18-20 minutes, or until the rice is tender and all water has absorbed. It is important to keep the lid on until you need to check to see if the rice is done.
- Once the rice is tender and all of the liquid has absorbed, remove from the heat and let the rice sit, covered, for about 5 minutes. Add the lemon juice and fluff the rice using a fork, then serve immediately. Enjoy!

- Rinse rice and let sit in water for at least 20 minutes. Drain it. Put rice and all other ingredients in your rice cooker. Set it for the length time for the amount and type of rice you are cooking. My Aroma rice cooker has a brown rice setting that I use when cooking brown rice. Brown rice will take a lot longer to cook; but it's way better for you and tastes great with this recipe. The total time shown to make this is for brown rice. It will take a lot less time if you use white rice (basmati is a good choice).

Steps:
- Place rinsed rice in the rice cooker bowl of your rice cooker.
- Add the chicken stock and salt; stir to combine, then place the garlic in the center on top of the rice.
- Close the cover and set for the regular cycle.
- When the machine switches to the Keep Warm cycle, add the lemon zest, butter, and parsley; stir to combine.
- Close the cover and let the rice steam for 10 minutes.
- Fluff the rice with a wooden or plastic rice paddle or wooden spoon.
- This rice will hold on Keep Warm for 1-2 hours.
- Before serving, remove garlic and discard.
- Serve hot.
